Easy and delicious for a weeknight dinner. Melted Monterey Jack cheese and sweet summer peppers give this recipe an extra kick.

4 boneless skinless chicken breasts
1 cup Italian salad dressing (Kraft Zesty Italian)
1 red pepper, sliced
1 green pepper, sliced
1 vidalia onion, sliced
1 tablespoon olive oil
4 slices monterey jack cheese
salt and pepper

Steps:

  • Combine chicken breast and salad dressing in a large bowl. Cover and refrigerate for a minimum of 30 minutes, preferably up to an hour.
  • Preheat grill.
  • In a large skillet, heat olive oil over medium heat.
  • Add peppers and onion. Add salt and pepper to taste.
  • Sauté for 5-7 minutes until vegetables are tender.
  • Grill chicken for 6-8 minutes per side until cooked through.
  • Turn off the grill flame.
  • Top each breast with onions and peppers and one slice of cheese.
  • Cover for 2-3 minutes or until cheese is melted.

Chicken breasts marinated in a fajita style sauce, then grilled and topped with mashed avocado and pepper jack cheese.

16 ounces boneless skinless chicken breasts, trimmed of all visible fat
2 avocados, mashed
monterey jack pepper cheese
1/4 cup lime juice
1 tablespoon ground black pepper
1 teaspoon garlic powder
1 teaspoon chili powder
1 teaspoon onion powder
1 teaspoon cumin
1 teaspoon salt

Steps:

  • Combine the lime juice, pepper, garlic powder, chili powder, onion powder, cumin, and salt in a large bowl, mix well.
  • Add chicken breasts, marinate for one hour.
  • Heat grill to medium high.
  • Grill chicken until juices run clear.
  • Lower grill heat to low, then cover the top of each breast with mashed avocado, then pepper jack cheese slice.
  • Cook covered for 1-2 minutes, just as long as it takes cheese to melt.

I enjoyed this sandwich at The Smokestack in Thurber, TX. It is a chicken version of the popular patty melt. Sort of a chicken grilled cheese. Prep time includes grilling a chicken breast.

1 slice onion (thick)
2 slices rye bread
1 tablespoon butter
1 grilled chicken breast
2 slices swiss cheese

Steps:

  • Saute onion in half the butter till golden.
  • Set aside.
  • Heat non stick pan.
  • Spread butter on both slices of bread.
  • Place one slice of bread, buttered side down in pre-heated pan.
  • Put one slice of cheese, onions, chicken breast, one slice of cheese and then the remaining slice of bread with the buttered side up.
  • Continue to cook until bread on bottom is brown and toasty.
  • Turn the entire sandwich and toast the other side and wait for cheese to get melty.
  • SLice in half and enjoy.
