ROSEMARY LEMON GRILLED CHICKEN
This simple, sensational marinade and sauce for grilled chicken features lemon, garlic, rosemary, and butter. Separate the marinade into thirds: 1/3 for marinating, 1/3 for basting, 1/3 for topping.

- In a food processor, thoroughly blend together the butter, rosemary, garlic, lemon zest, and lemon juice. Pour 1/3 of blended mixture into a small bowl for marinade. Cover remaining mixture, and set aside.
- Lightly season chicken breasts with salt and pepper. Rub chicken breasts with the marinade mixture. Place chicken breasts on a platter, cover, and refrigerate 3 hours.
- Preheat an outdoor grill for high heat and lightly oil grate. Pour half of the reserved rosemary and lemon mixture into a bowl for basting. Cover remaining mixture, and set aside for topping cooked chicken.
- Grill chicken breasts 4 minutes on each side, basting with rosemary and lemon basting mixture. Remove chicken breasts from grill, and top with small scoops of the remaining topping mixture.

- Melt 2 tablespoons butter in 10-inch nonstick skillet until sizzling; add mushrooms and zucchini. Cook over medium heat, stirring occasionally, 4-5 minutes or until vegetables are crisply tender. Remove from skillet; set aside.
- Combine all remaining omelet ingredients except 1 tablespoon butter and cheese in bowl. Melt remaining 1 tablespoon butter in same skillet until sizzling; pour egg mixture into skillet. Cook over medium heat, lifting slightly with spatula to allow uncooked portion to flow underneath, 3-4 minutes or until omelet is set. Place cooked vegetables and cheese onto half of omelet. Gently fold other half of omelet over filling. Cut omelet in half.
- Melt 1 tablespoon butter in 1-quart saucepan; add all remaining sauce ingredients. Cook over medium heat, stirring occasionally, 4-5 minutes or until heated through. Serve sauce over omelet.

- 1. Saute your peppers & broccoli in a pan for 5 - 7 minutes with butter. Then add your sliced chicken breast and some Italian seasonings. Remove from pan, and add your whisked eggs & cream into the greased pan and begin to cook your omelet. Season with salt & pepper. After several minutes of cooking add your mixture of chicken & veggies into the center of your omelet. Cover your pan with a lid and let it cook just a few minutes longer. Fold over your sides of omelet and grate your cheese on top. Cover for 1 more minute to melt cheese and then serve.
- 2. Melt a tbsp. or two in a pan and begin to sauté your peaches. Add 1 tbsp. of spiced rum to the peaches and 2 tbsp. of brown sugar and stir the mixture. Cook until the sauce thickens and serve on plate. Add a couple of cherries and a drizzle of balsamic glaze.

- In an oven-proof frying pan, lightly fry the mushrooms in butter , then remove from the heat and set aside
- Whisk the eggs with the seasoning and the milk, then heat some butter in the pan and add the egg mixture to it
- When the base of the omelette is turning golden,scatter the mushrooms and parsley over the omelette
- Place the omelette under the grill for 2 minutes until the egg has set, fold over and then serve for a delicious breakfast!
SIX-SPICE CHICKEN OMELETTE

- Combine chicken and other marinade ingredients in a non-reactive bowl; set aside for 15mins
- In the meantime, combine eggs, 2 TB water, black pepper together in a bowl; whisk slightly until well combined and foamy
- Heat 1 tsp of oil in a wok over med-high heat, pour 1/4 of egg mixture, tilting the wok to cover the base and side
- As the egg sets, gently lift the edge to uncooked egg runs underneath; cook for 1 minute or until set
- Slide omelette into a large plate, cover to keep warm; repeat with remaining egg to make 4 omelettes
- Heat another 2 tsp of oil in the same wok (remove any egg leftover with a clean kitchen paper towel) over med-high heat; add onions and stir fry for 2 minutes, until soft and slightly browned
- Add garlic, stir fry for another minute then add the marinated chicken, stir fry for another 2 minutes until just cooked through (unless you have a large wok, you may need to cook the chicken in 2 batches, to prevent overcrowding the wok)
- Add sliced mushrooms to the wok, stir fry the mixture for 1 min (until mushrooms are cooked)
- Now add the bean sprouts, give the mixture a good quick stir
- Quickly add the sauce (make sure it's high heat) - the sauce should boil off quickly, leaving a slightly wet mixture, like a glaze
- Divide the omelettes into 4 serving plates, top each halves with 1/4 of the filling; fold into half to enclose the filling
- Drizzle with a drops of dark soy sauce if desired and sprinkle with green onions; serve immediately

- In a large nonstick skillet, heat oil over medium-high heat. Add vegetables and seasonings; cook and stir until tender. - In a non-stick omelet pan over med low heat, heat oil & add mushrooms, peppers and chicken breast. Heat through until mushrooms start to brown slightly.
- Meanwhile cut each piece of cheese in half.
- Mix eggs and water. Add to pan.
- Continue to cook until the outer edge is set. Flip.
- Now add cheese halves alternately.
- Fold over in to the classic omelet half circle.
- Serve warm, Enjoy!
