CHEESE AND PROSCIUTTO STUFFED CHICKEN BREASTS
These Stuffed Chicken Breasts are an impressive dish for a Sunday night dinner or a Holiday. These breasts are stuffed with cheese, prosciutto, basil and sun dried tomatoes. Totally delicious chicken rolls with a surprise filling.

- Preheat oven: To 450 F degrees.
- Prepare the chicken: Flatten the chicken breasts using a meat mallet to pound them until they are about ¼ inch to ½ inch in thickness.
- Assemble the chicken breasts: Spread ½ the cream cheese on each chicken breast. Top with basil leaves, then 2 slices of prosciutto on each breast and a tbsp of chopped sun-dried tomatoes on each breast. Carefully roll up the breasts and secure with toothpicks. Season with salt and pepper.
- Cook the chicken: Heat the olive oil in an oven proof skillet and brown the chicken, placing first with seam side down until just slightly golden brown. You may need to remove toothpicks to brown on all sides. Place skillet in oven and bake chicken for an additional 20 minutes, until chicken is cooked through.
- Finish the dish: Remove chicken from skillet onto a cutting board, discard toothpicks and wait about 15 minutes before slicing each chicken breast. To double the recipe simply double all the ingredients.

- Preheat oven to 400°F
- Pat chicken breasts dry with a paper towel
- Using a sharp knife make an incision in the side of each chicken breast about 3 inches long and 2 inches deep, make sure you do not cut through the chicken breast, it needs to serve as pocket.
- Crack an egg into a shallow bowl and whisk it with a fork
- In another shallow bowl combine bread crumbs, garlic salt, oregano and black pepper
- Working 1 chicken breast at a time, dip first into the egg mixture to coat and then immediately in the breadcrumb mixture, set aside
- Repeat with each chicken breast
- Stuff each chicken breast first with 2oz of burrata and then 2 thin slices of prosciutto
- Heat 2 tbsp of oil in a large skillet over medium heat
- Add chicken breasts, work in 2 batches (2 breasts at a time)
- Brown chicken breasts for 3-4 minutes on both sides
- Transfer to foil lined baking sheet
- Add 2 more tbsp of olive oil to the skillet and repeat with the other 2 chicken breasts
- Transfer baking sheet to the oven
- Bake for 20-25 minutes*, or until chicken reaches an internal temperature of 165°F
- Remove from oven, let rest 5 minutes
- Serve chicken breasts over Instant Pot Garlic Parmesan Mashed Potatoes (recipe within post)

CHICKEN BREASTS STUFFED WITH GOAT CHEESE AND BASIL

- For chicken:
- Preheat oven to 350°F. Pound chicken between sheets of waxed paper to thickness of 1/4 inch using meat mallet. Pat chicken dry. Combine cheese, green onions and basil in small bowl. Season with salt and pepper. Spread cheese mixture lengthwise over half of each chicken piece. Tuck short ends in. Roll chicken up, starting at one long side, into tight cylinders. Tie ends with string to secure. Dip chicken in egg, allowing excess to drip into bowl. Roll in breadcrumbs, shaking off excess. (Can be prepared 4 hours ahead. Refrigerate.)
- Place chicken in 8-inch square baking dish. Pour 2 tablespoons melted butter over. Bake until cooked through, about 20 minutes.
- For sauce:
- Meanwhile, melt 1/4 cup butter in heavy large skillet over medium heat. Add mushrooms and sauté until tender, about 8 minutes. Add wine and boil 3 minutes. Add stock and boil until liquid is reduced by half, about 6 minutes. Remove from heat and swirl in 4 tablespoons cold butter 1 piece at a time. Season sauce with salt and freshly ground pepper. Remove string from chicken. Cut rolls crosswise into 1/2-inch-thick rounds. Fan on plates. Serve immediately, passing sauce separately.
PROSCIUTTO WRAPPED STUFFED CHICKEN BREAST

- Preheat oven to 350 degrees. Place chicken breasts in double gallon sized zippered bags. With a mallet on the smooth side, pound the chicken 1/4" thick. Place the pounded chicken breasts on a baking sheet. Sprinkle both sides with salt and pepper. Spread an even amount of Boursin cheese over all four chicken breasts. Evenly distribute mozzarella cheese on top of the Boursin. Carefully roll up chicken, seam side down. Wrap each chicken roll with a slice of prosciutto, tucking the ends under the chicken roll. Melt butter and olive oil together in baking dish or glass pie plate. Place chicken rolls in baking dish. Bake for about 30 minutes or until internal temperature is 165 degrees. With a pastry brush, baste the chicken rolls several times during the cooking process with the butter/olive oil mixture. (This will give the chicken rolls added flavor and a beautiful glossy finish.) Serve with pasta, rice, vegetables or a salad. Serves 4.

- Preheat outdoor grill.
- For sauce, in a small bowl combine lemon zest, lemon juice and one tablespoon melted butter. Set aside.
- For stuffing, in a small bowl, combine parmesan, basil, one tablespoon butter, and garlic. Set aside.
- Place each chicken piece between 2 pieces of plastic wrap.
- Use the flat side of a meat mallet (or the heel of your palm) to pound chicken into rectangles about 1/8-inch thick.
- Remove plastic wrap and spread stuffing on chicken.
- Fold in sides of each chicken breast and roll up, securing with a toothpick.
- Grill over medium heat for about 20 minutes or until juices run clear and chicken is no longer pink.
- Brush sauce over chicken during the last 10 minutes of grilling.

PESTO STUFFED PROSCUITTO WRAPPED CHICKEN

- Preheat oven to 350 degrees. Put your chicken breast on a cutting board and, with your hand flat on top of it, use a sharp knife to slice into one side of the breast, starting at the thicker end and ending at the thin point. Be careful not to cut all the way through to the other side. Open up your chicken breast for stuffing. Spoon desired amount of pesto into the center of the butterflied chicken breast and spread it so it is evenly coated. Then, fold your chicken back over. Wrap 2-3 slices of proscuitto around each chicken breast (depending on how large your chicken breasts are, I used 3 slices on each of my breasts). You don't need to secure your wrapped chicken with toothpicks, but if you think it needs it go for it. I just pressed mine tightly to the chicken and it cooked and stayed together just fine! Drizzle a little olive oil on the bottom of an oven safe dish. Carefully place the wrapped chicken breasts on the greased dish and tuck the wrapped proscuitto neatly underneath the chicken if it fell apart at all. Lightly drizzle a little more olive oil over the tops of wrapped chicken breasts. Season lightly with pepper (there is plenty of salty-ness from the proscuitto so no salt needed). Place chicken in preheated oven and bake until chicken is cooked through and proscuitto is crisp, about 30-35 minutes.
