Steps:
- Make sure your grill is clean and well oiled to avoid the skewers from sticking to the grill, then preheat your grill to 350F.
- Trim any excess fat and long arteries from the top part of the chicken hearts, if present.
- Add the clean hearts to a bowl, and season them with the sal grosso style rock salt. Stir and assemble them on skewers.
- Then, place the skewers on the hot grill over direct heat and grill for about 5-10 mins, turning them halfway through to make sure they seal evenly on both sides.
- After sealing them, move the skewers away from the flames into indirect heat for them to finish cooking another 15-20 mins, depending on the size of your hearts.

Steps:
- Place the chicken in a shallow, non-metallic dish and cover with all the other ingredients and mix everything together. Cover and chill for at least 2 hrs, or overnight if possible. Bring to room temperature 1 hr before grilling.
- Thread half the thighs onto 2 large metal skewers, or wooden ones soaked in water for 10 mins. Repeat with the remaining thighs and another 2 skewers. Heat an outdoor barbecue until very hot, or use an oven grill. Place on the grill for 6 mins on one side, then turn over and cook for 4 mins. Cook for a few mins more on each side if they are large - keep the heat on medium so they don't burn. Remove and keep warm under foil.

CHURRASCO DE FRANGO (BRAZILIAN GRILLED CHICKEN)
The Brazilians know what they're doing when meat is involved. Fire-grilled chicken with plenty of olive oil and a squeeze of fresh lemon makes a fantastic cookout plate.

Steps:
- Slightly flatten the chicken halves and place them in a 3-quart rectangular baking dish. In a blender or food processor, blend or process the garlic and salt to make a paste. With blender or processor running, slowly add olive oil. Pour oil mixture over chicken halves, turning chicken to coat both sides. Loosen breast skin and rub oil mixture under skin. Cover and refrigerate 2 to 24 hours. For a charcoal grill, arrange medium-hot coals around a drip pan. Test for medium heat above the pan. Place chicken, bones side down, on grill rack over drip pan. Cover and grill for 50-60 minutes or until chicken is no longer pink (180 degrees F). (For a gas grill, preheat grill. Reduce heat to medium. Adjust for indirect cooking. Grill as above.) Serve chicken with lemon wedges.

BRAZILIAN BEER CHICKEN
Another recipe I found in Steven Raichlen's "The Barbecue Bible" and this is what he states about the recipe: "The United States isn't the only place where beer and barbecue are inextricably interwoven. In Rio de Janeiro, I came across this savory grilled chicken, which owes its exceptional succulence to a two-day bath in beer. Try, if possible, to find a Brazilian beer if you can: Antarctica (a pilsener-style brew) will produce a mild-flavored chicken; Xingu Black Beer (a dark bitter stout) will produce a bird with a rich, malty flavor. Serve with Crazy Rice or Brazilian Black Beans with Bacon. Note: Time doesn't include the 6 - 48 hours for marinating.

Steps:
- Combine the beer, oil, mustard, paprika, and pepper in a large nonreactive bowl and whisk thoroughly to blend. Stir in the onion, garlic, and bay leaves.
- Rinse the chicken pieces under cold running water, then drain and blot dry with paper towels. Add to the marinade in the bowl and turn to coat. Cover and let marinate, in the refrigerator, for 6 hours or up to 2 days (the longer the better), turning the pieces occasionally.
- Preheat the grill, using the two-tiered method.
- When ready to cook, remove the chicken pieces from the marinade, reserving the marinade, and blot dry. Season the pieces generously with salt. Oil the grill grate and arrange the chicken, skin side down, on the grate over the hotter section of the grill and cook until the skin is golden brown and the meat is cooked through without any trace of red at the bone, 8 to 12 minutes per side. If you get flare-ups, move the chicken to the safety zone until the flames die down. During the first 10 minutes only, brush several times with the reserved marinade.
- Transfer the chicken pieces to serving plates and serve immediately.

GRILLED CHIMICHURRI CHICKEN SKEWERS - BRAZILIAN KITCHEN ABROAD
From braziliankitchenabroad.com

- The first tip to make great chicken skewers is to cut the chicken into chunks of the same size. This will ensure all the chicken pieces cook evenly and at the same time, and you don't end up with uncooked pieces on one end of the skewer and overcooked pieces on the other end. u003cbr/u003eu003cimg scale=u00220u0022 alt=u0022u0022 src=u0022https://braziliankitchenabroad.com/wp-content/uploads/2019/06/chimi-chicken-skewers-1.jpgu0022/u003e
- After your chicken pieces are all cubed up, just add the marinade. u003cbr/u003eu003cimg scale=u00220u0022 alt=u0022u0022 src=u0022https://braziliankitchenabroad.com/wp-content/uploads/2019/06/chimi-chicken-skewers-2.jpgu0022/u003e
- The resting time will depend on the recipe. Some recipes call for marinading several hours, while others (like this one), call for a quick marinade. u003cbr/u003eu003cimg scale=u00220u0022 alt=u0022Grilled Chimichurri Chickenu0022 src=u0022https://braziliankitchenabroad.com/wp-content/uploads/2019/06/chimi-chicken-skewers-3.jpgu0022/u003e
- If your marinade doesn't already have salt, make sure to season before taking your skewers to the grill. Coarse salt is my favorite for seasoning immediately before grilling!u003cbr/u003eu003cimg scale=u00220u0022 alt=u0022u0022 src=u0022https://braziliankitchenabroad.com/wp-content/uploads/2019/06/chimi-chicken-skewers-4.jpgu0022/u003e

- In a food processor or high speed blender, add Chimichurri ingredients and process on Low until chunky sauce forms.
- In a large bowl, add chicken and pierce randomly with a small knife. Pour half of Chimichurri sauce on top and mix with your hands to coat the meat evenly. Cover and refrigerate for at least 30 minutes or preferably overnight. The longer the better, obviously. Discard marinade before cooking.
- Grill: Grill on indirect high heat with closed lid for 15-20 minutes per side. Or until juices run clear (check with a knife near bone. Bone in chicken takes longer to cook. Grills vary so check your chicken often. You know your grill best, so it's hard to advise on exact cooking time.
- Bake: Rub the bottom of large baking dish with oil and lay marinated chicken breasts or thighs in a single layer. Bake uncovered in 450 degrees F preheated oven for 25-35 minutes for chicken breasts and 40 minutes for thighs. Or until internal read thermometer registers 150 degrees F internal temperature. You do not need to wait for 165 degrees F as meat will get there during resting. This way you will avoid dry chicken

- In a large bowl, combine the lime juice, the minced garlic and the salt and pepper. Add the chicken wings and toss them with the marinade, making sure every piece of chicken is coated. Cover and bring the bowl to the fridge overnight.
- The next day, add the flour and the wings to a ziplock bag. Close the bag and shake it so every wing is coated in flour.
- Fill a saucepan with enough oil to deep fry the wings. Heat the oil over medium high heat and, when the oil is hot enough, lower the heat to medium low and start frying the wings in batches, 5 or 6 at a time.
- When the wings look cooked and beginning to gain some color, turn the heat up to high, so they get extra crispy, and fry them until golden brown.

- In a large bowl, prepare the marinade: Mix the olive oil, beer, seasonings and spices, and herbs. Place 2/3 of marinade into a 1 gallon heavy-duty freezer bag and the other 1/3 into an airtight container. Place the chicken drumsticks inside, shake the bag to cover the chicken with the marinade, remove as much air as possible from the bag, and zip. Refrigerate the bag(s) inside a clean bowl and let the drumsticks marinate for at least 2 to up to 8 hours, flipping the bags at least once.
- Remove drumsticks from bag(s) with tongs, pat them dry with paper towel, and place them on a baking sheet. Make sure to remove all the excess oregano from the surface of the drumsticks (this is to prevent the chicken from becoming bitter once grilled).
- If you do not have a long Brazilian barbecue skewer, you can place drumsticks directly onto the grill and carefully monitor cooking times, basting occasionally with the reserved marinade while the chicken is grilling. If you do have a Brazilian barbecue skewer, skewer the drumsticks one by one (crosswise), being careful not to cut yourself.
