3/4 cup KRAFT Balsamic Vinaigrette Dressing, divided
4 small boneless skinless chicken breasts (1 lb.)
1 pkg. (10 oz.) torn mixed salad greens
1 red pepper, cut into thin strips, then cut crosswise in half
1 cup fresh blueberries
1/3 cup thin small red onion slices, separated into rings
3 Tbsp. KRAFT Mayo with Olive Oil Reduced Fat Mayonnaise
1/2 cup pine nuts, toasted
1/4 cup sliced fresh basil

Steps:

  • Heat grill to medium-high heat.
  • Pour 1/4 cup dressing over chicken in shallow dish; turn to evenly coat both sides of each breast. Refrigerate 10 min. to marinate. Meanwhile, cover 4 large plates with salad greens; top with peppers, blueberries and onions. Gradually whisk remaining dressing into mayo in bowl until blended. Refrigerate salads and mayo mixture until ready to use.
  • Remove chicken from marinade; discard marinade. Grill chicken 6 to 8 min. on each side or until done (165ºF).
  • Cut chicken into thin slices. Drizzle mayo mixture over salads; top with chicken, nuts and basil.

4 whole Boneless, Skinless Chicken Breasts
Salt And Pepper, to taste
Olive Oil, For Drizzling
3 stalks Celery (inner Light Green Stalks), Finely Diced
2 ears Fresh Corn
1/4 whole Medium Red Onion, Finely Diced
1 1/2 c. Blueberries
3 tbsp. Fresh Dill, Minced
4 tbsp. Mayonnaise
4 tbsp. Sour Cream
1/4 c. Half-and-half
1 whole Lemon
1 tsp. Sugar (more To Taste)
Salt And Pepper (additional) To Taste
3/4 c. Crumbled Feta

Steps:

  • Place chicken breasts into large plastic storage bag. Pound with a mallet or rolling pin to flatten to 1/4 inch uniform thickness. Season chicken with salt and pepper. Heat grill and drizzle chicken with olive oil. Grill chicken on both sides until done, about 7 minutes per side. (Rotate halfway during grilling each side to ensure pretty grill marks.) Remove from pan. Allow to cool. With a very sharp knife, shave kernels off each corn cob. Combine with the onion and celery. Set aside.Mix together mayonnaise, sour cream, feta, and half-and-half. Stir in sugar, squeeze in lemon juice, and add salt and pepper. Stir, then taste. Add more salt if necessary; do not undersalt!Slice chicken on the bias to create flat, randomly shaped pieces. 1/2 cup rice wine vinegar
2 teaspoons minced fresh ginger
2 cloves garlic, minced
1/2 teaspoon salt

3 boneless skinless chicken breast halves
1 stalk celery, chopped
1/2 cup red onion, chopped
1/2 cup red bell pepper, chopped
1/2 cup yellow bell pepper, chopped
3/4 cup shredded carrot
4 cups mixed salad greens
1 1/2 cups fresh blueberries, washed and picked through

Steps:

  • In a medium bowl mix together the oil, vinegar, ginger, garlic, salt and pepper.
  • Divide and chill one half.
  • With the remaining mixture pour into a plastic bag and add the chicken breasts.
  • Seal and chill for 2 hours to overnight.
  • Preheat grill to 350 degrees.
  • Remove chicken from marinade-discard used marinade.
  • Grill chicken for 6-8 minutes on each side, checking to make sure chicken is done and no pink is remaining inside deepest part of meat.
  • Cut into thin slices.
  • Place greens on a large serving platter.
  • Mix together the celery, onion, peppers and carrots.
  • Toss together with the reserved vinegar mixture.
  • Place chicken slices on the greens, dress with the vinegar/vegetable mixture, and top with the blueberries.
  • Serve.

I have been craving this awesome salad that my friend and I had at a restaurant in Houston. I could not find the recipe so I tried my best to recreate it. Fresh and yummy, this combo is a nice change of pace!

24 ounces chicken breasts, cooked, preferably grilled
8 cups torn fresh spinach or 8 cups mixed salad greens
2 cups blueberries (fresh)
2 tablespoons red onions, thinly sliced
2 tablespoons sunflower seeds (combo of nuts is great too) or 2 tablespoons sliced almonds (combo of nuts is great too)
2 tablespoons raisins
2 tablespoons vegetable oil
2 tablespoons vinegar, sweet flavored -try any berry flavor or 2 tablespoons balsamic vinegar
4 1/2 teaspoons sugar
1/2 teaspoon dill weed
1 pinch salt, to taste
1 pinch garlic powder, to taste
1 pinch dry mustard, to taste
fresh cracked pepper, to taste

Steps:

  • In a jar or container with cover combine the dressing ingredients and shake well. Refrigerate to chill until ready to serve.
  • Wash fruit and veggies and dry completely. Dressing will not adhere if greens are wet.
  • Combine the spinach, blueberries, onion, sunflower kernels, nuts and raisins in a large bowl.
  • Slice chicken into strips and place on top of greens.
  • Pour chilled dressing over salad and gently toss.

These colors don't run, but they do stain, so I recommend eating this delicious, red, white and blueberry chicken outdoors at a barbeque. Smoky, spicy meats have been paired with sweet-and-sour, fruit-based sauces since we've had cooks, so that this combo works beautifully is no big surprise. And yes, other juicy fruit like peaches, or other berries will work nicely.

1 tablespoon vegetable oil
1 tablespoon kosher salt
1 tablespoon paprika
1 teaspoon ground dried chipotle pepper
½ teaspoon cayenne pepper
½ teaspoon freshly ground black pepper
2 cloves minced garlic
4 skinless, boneless chicken breast halves
⅓ cup white sugar
⅓ cup apple cider vinegar
2 cups fresh blueberries
salt and freshly ground black pepper to taste

Steps:

  • Whisk oil, salt, paprika, chipotle pepper, cayenne pepper, black pepper, and garlic in a bowl to make marinade. Place chicken breasts in marinade and turn to coat evenly. Cover bowl with plastic wrap and refrigerate for at least 2 hours.
  • Spread sugar in a saucepan set over medium heat. Do not stir, but watch closely as sugar begins to melt after about 1 minute. As sugar melts it will gradually turn a golden color. Continue watching but not stirring. When all sugar has melted and golden color just begins to darken a bit (after 1 minute or less), remove pan from heat. Pour in vinegar and stir until sugar dissolves.
  • Place pan over medium-high heat and add blueberries to the sugar-vinegar mixture. Bring to a simmer, reduce heat to medium-low, and simmer until blueberries soften and mixture begins to thicken, 4 or 5 minutes. It should be a syrup-like consistency. If sauce seems too thin, simmer a few more minutes. If it seems too thick, add a splash of water. Stir in salt and pepper. Remove from heat.
  • Set a strainer over a bowl. Strain berries, using a spatula to push through as much juice as possible. Discard skins.
  • Preheat an outdoor grill for medium-high heat and lightly oil the grate. Drain excess marinade from chicken.
  • Place chicken breasts on preheated grill. Cook until no longer pink in the center and the juices run clear, about 4 minutes per side. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C). Transfer chicken to a plate and allow to rest a few minutes.
  • Serve breasts on a swirl of blueberry sauce with more sauce drizzled on top.
