2 tablespoons olive oil
1/2 cup red bell pepper, diced
1/2 cup scallion, chopped
2 teaspoons garlic, mashed
6 star fruit (medium)
1 cup heavy cream
salt
black pepper
paprika
cilantro leaf, minced for garnish
4 cups rice, cooked
4 lbs chicken, cooked, deboned and cut into bite size pieces

Steps:

  • In a medium pan, heat olive oil. Saute red bell pepper, scallions, garlic and star fruit over medium low heat until tender about 8 minutes.
  • Stir in heavy cream and season with salt, pepper and paprika. Cook over medium low heat for 8 minutes.
  • In a large cooking pot, combine this mixture with the rice and chicken. Heat until serving temperature about 5 minutes.
  • Garnish with coriander.

4 star fruit
1 lb chicken breast, skinless, boneless, cut into 1/4 inch wide strips
1/4 cup sherry wine
2 tablespoons brown sugar
2 tablespoons finely chopped peeled gingerroot
1 tablespoon soy sauce
4 garlic cloves, crushed
3 tablespoons cornstarch
1 teaspoon vegetable oil
1 1/2 cups julienne cut red bell peppers
1 cup vertically sliced onion
2 teaspoons dark sesame oil
1/4 teaspoon salt
1/8 teaspoon pepper
4 cups hot cooked rice

Steps:

  • Cut 1 star fruit in half crosswise and squeeze 2 tablespoons juice, using a citrus reamer or juicer; set juice aside. Or just whiz it in a food processor or blender on steroids.
  • Dice star fruit halves; set aside.
  • Slice remaining 3 star fruit crosswise and set aside.
  • Combine 2 tablespoons star fruit juice, chicken, sherry, brown sugar, ginger root, soy sauce and garlic in a bowl and stir well. Cover and chill 30 minutes.
  • Drain chicken, reserving marinade. Sprinkle chicken with cornstarch; toss well to coat. Heat vegetable oil in a large nonstick skillet over medium high heat.
  • Add chicken and star fruit; stir fry 1 minute.
  • Add bell pepper and onion and stir fry 3 minutes or until chicken is done. Add reserved marinade, sesame oil, salt and pepper; stir fry 1 minute.
  • Serve over rice.

2 (3 1/2 lb) roasting chickens, quartered
1 cup vegetable oil
3/4 cup white wine vinegar
1/2 cup dry sherry
1 teaspoon minced garlic
1/2 teaspoon poultry seasoning
2 teaspoons caribbean seasoning (see my recipe for Caribbean Seasoning)
2 carambolas, sliced
1/4 cup lime juice
1/4 cup honey
2 tablespoons white wine vinegar
1 tablespoon soy sauce
1 tablespoon minced garlic
1 dash hot pepper sauce
3 -4 carambolas, sliced

Steps:

  • Place chicken quarters in shallow dish.
  • In a bowl, stir together oil, vinegar, sherry, garlic, and poultry seasoning, and 1 teaspoons of Caribbean seasoning.
  • Pour off 1 cup of this mixture, and set it aside.
  • Pour the rest of the mixture over the chicken.
  • Cover and refrigerate for 2-3 hours.
  • Prepare grill.
  • Put the carambolas into a blender or food processor.
  • Add lime juice,honey,vinegar,soy sauce, garlic, hot pepper sauce, and remaining 1 teaspoons Caribbean seasoning.
  • Whirl until the mixture is smooth, stopping to scrape down sides.
  • lend in the reserved marinade.
  • Grill over medium coals for 30 minutes,turning occasionally and basting with the carambola mixture after every turn.
  • The chicken is done when it reaches 170* on a meat thermometer.
  • Allow to stand 10 minutes before serving.

2 bell peppers, roasted, peeled and sliced (red or yellow)
10 cups lettuce greens
2 teaspoons minced garlic
2 teaspoons minced ginger
1 teaspoon minced jalapeno pepper
2 tablespoons cilantro, chopped
2 tablespoons basil, chopped
2 teaspoons sugar
2 tablespoons lime juice
2 cups diced mangoes
2 cups rice wine vinegar
2 tablespoons sesame oil
1 cup canola oil
salt and pepper

Steps:

  • Grill chicken breast, cool and slice into strips.
  • Place lettuce greens in the center of a large plate or platter and alternate; placing chicken strips, roasted peppers and star fruit slices around the greens. Combine the first 8 dressing ingredients in a bowl and slowly whisk in sesame and canola oil.
  • Spoon over the top of salad.
