- Combine ground beef, parsley, garlic, Worcestershire sauce, and steak seasoning in a bowl; mix until thoroughly combined. Form into 3 evenly-sized patties.
- Warm a nonstick griddle over medium heat. Place burgers onto the warm griddle and cook to desired doneness, 4 to 6 minutes per side. An instant-read thermometer inserted into the center should read at least 160 degrees F (71 degrees C). Remove burgers and set aside.
- Warm a second griddle over medium heat. Butter 1 side of each bread slice. Place a slice of bread onto the griddle, butter-side down. Add a slice of cheese, a burger, and a second slice of cheese. Top with another slice of bread, butter-side up. Repeat with remaining burgers.
- Cook until bread is golden brown on the bottom, 3 to 5 minutes. Flip and cook until the other side is golden brown and cheese is melted, 3 to 5 minutes more.

- Heat grapeseed oil in a large skillet over medium heat; saute onion until softened and slightly browned, 5 to 10 minutes. Transfer onion to a small bowl, reserving the oil in the skillet.
- Lightly brush each bread slice with grapeseed oil from the skillet and season with salt and pepper. Arrange half the bread slices, oil-side down, in the skillet. Top each bread slice with 1 slice Gouda cheese, 1 slice provolone cheese, artichoke hearts, and onion; top with remaining bread slices, oil-side up.

The patty melt is a traditional cheeseburger with caramelized onions on sliced rye bread that's been enjoyed since the 40's.

- Cut onion in half and then slice.
- Mix ground beef with Worcestershire sauce, salt and pepper. Form into 4 patties and set aside.
- Butter both sides of your bread slices.
- Melt 2 tablespoons of butter in a skillet at med-low heat. Add onion. Cook for about 20-25 min stirring occasionally until softened and browned.
- While onions are cooking, place a large skillet over medium heat. Toast bread in the pan on both sides.
- In the large skillet, melt 2 tablespoons of butter at medium heat. Cook burgers for about 3-4 min on one side and flip. Continue cooking until done (140F for medium) usually another 3-5 minutes.
- Once nearly done add cheese to burger. Cover to melt.

- Preheat oven to 350°. Spread butter evenly on one side of each piece of bread, then place bread buttered side down in a cast-iron skillet over medium-high heat until golden brown. Transfer to a large sheet pan with toasted side down and place 2 pieces of American cheese on each piece of bread.
- Preheat same cast iron pan over high heat. In a mixing bowl, add cold ground beef and season with salt and pepper. - Preheat a grill to medium high. Form ground beef (preferably chuck) into 6-ounce patties and make an indentation in each. Season the patties on both sides with salt and pepper. I used to work at Friendly's, a family restaurant chain where patty melts were a major feature of the menu. The ordinary patty melt is a grilled swiss on rye with a hamburger and some grilled onions inside. But its even better with bacon and mushrooms. My DH's absolute, favorite burger. The prep work takes a little time as you cook each element but if you have the bacon, onions, and mushroom ready ahead you can assemble the patty melts as fast as you can cook a hamburger. - Cut the bacon strips in half. Fry to preferred doneness (I like mine moderately soft).
- Fry onions in a little butter over medium to medium-high heat until cooked and browned.
- Fry mushrooms in butter or bacon grease until nicely cooked and a little browned.
- Form ground sirloin into 6, slightly oval patties. Fry or grill to preferred doneness (I like medium-well).

- In a medium non-stick sauté pan, heat oil over medium high heat and add peppers and onions and sauté for about five minutes or until they start to soften up and brown slightly.
- Remove four peppers from the can of chipotle peppers in adobo and chop then add to the cooking peppers and onions.
- Sauté over medium heat until the vegetables are tender. As it finishes cooking, the mixture may stick a bit so add a little water and scrape the pan with a wooden spoon until finished cooking. Set aside.
- In a small bowl mix mayonnaise with 2 tablespoons of the cilantro and one teaspoon of the adobo sauce from the can.
- The remainder of the peppers in sauce can be frozen in a small zip lock bag for some other recipe.
- Heat an outdoor grill to medium high heat.
- Mix the ground beef with the remaining cilantro, coriander, cumin and chili powder and form into four patties. Brush a little oil on both sides of each patty along with salt and pepper.
- Grill to your preferred level of doneness and top with the jack cheese.
- To assemble, slather the prepared chipotle mayonnaise spread on the bottom half of the roll, then add two slices of tomato per sandwich.
- Top with the burger with cooked peppers and onions and the other half of the roll.

- Start by combining the beef, egg, evaporated milk, Worcestershire and rub in a bowl. Use your hands to mix well. Divide this mixture into 4 equal parts.
