GRILLED CHEESE WITH GRAINY MUSTARD
We used cheddar cheese in these sandwiches, but any type of cheese that oozes when it melts, such as Swiss, will produce just as delicious a sandwich.

Steps:
- Preheat oven to 300 degrees. Spread butter over one side of each slice of bread.
- Arrange bread, butter side down, on a piece of plastic wrap or wax paper. Spread each slice of bread with mustard. Arrange cheese over 4 slices of bread, and sandwich together with remaining bread, butter side out.
- Set a large cast-iron skillet over medium heat. Cook sandwiches in batches in skillet. Using a spatula, press down firmly on sandwiches. Cook until bread is golden brown, 2 to 3 minutes. Reduce heat to medium low. Turn sandwiches over, press down with spatula, and cook until bread is golden and cheese is starting to melt, about 2 minutes more. Transfer to a baking sheet, and place in oven. Bake until cheese is completely melted. Serve immediately.

- Heat a cast-iron skillet over medium-low heat. Spread both slices of bread with mustard and top 1 slice with Brie and pear. Top with remaining slice and press together gently. Generously brush both sides of sandwich with oil.
- Place sandwich in skillet and cover with a piece of foil. Place a half-filled teakettle or a heavy skillet on top to weigh it down and cook until bread is golden and cheese begins to melt, 1 to 2 minutes per side. Serve warm.

Steps:
- Preheat a large skillet to medium heat.
- In a bowl, combine oil, vinegar, salt and pepper. Add onions, toss to coat. Marinate for 15 to 20 minutes at room temperature.
- Lightly butter one side of each slice of bread (or brush with olive oil). Place half of the slices buttered side down, spread an even layer of mustard over bread and cover with half the cheese slices. Scatter marinated onions on top and place remaining cheese slices over onions. Put the top slices of bread over cheese, buttered side up.
- Grill sandwiches in a moderately hot skillet for 4 to 5 minutes until bread is golden brown and cheese has melted, turning sandwiches over halfway through grilling. Cut each sandwich in half on the diagonal and serve immediately.

- Heat a heavy bottomed saucepan over medium heat. Add in onions and 1 tablespoon olive oil. Cook for 1 minute until heated through, then turn heat down to low and add in 1/4 cup water, remaining 1/4 cup olive oil, and salt.
- Cook, stirring occasionally, for 1 hour. The onions will go from white to translucent, and finally will begin to turn golden brown. If the onions are looking dry, add 1-2 additional tablespoons of water, as necessary.
- Once onions have reached a nice medium golden brown color, remove from heat and allow to cool slightly. Onions can be stored for up to 1 week in the fridge.
- To make the grilled cheese, heat a skillet over medium heat. Spread mayonnaise over both slices of sourdough, then spread Maille Old Style Whole Grain Dijon Mustard over the opposite side of one of the slices. Place both slices, mayo side down, onto skillet.
