- Heat 12-inch nonstick skillet over medium heat. Spread Country Crock® Spread on one side of each bread slice.

I started liking grilled cheese & tomato sandwiches years ago at a little restaurant near my office. I would go about three times a week to order a grilled provolone cheese & tomato sandwich. Today I wanted something different, something a little spicier, so I made up the following recipe. I thought it was delicious! Hope you try it and enjoy it!

Steps:
- Spread both slices of bread with a light layer of mayo.
- Put slice of cheese on one piece of bread.
- Add tomato slices.
- Sprinkle with salt, pepper& Italian Seasoning.
- Cover tomato slices with other slice of cheese, then cover with other piece of bread.
- In the meantime, heat griddle or pan with butter and garlic power or minced garlic.
- Also spread butter on top of each side of bread.
- Grill until sandwich is brown on both sides and cheese is melted.
GRILLED CHEESE, PICKLE AND VIDALIA ONION SANDWICH
I came up with this recipe because I always enjoy pickles on the side with my basic grilled cheese sandwich. So one day I decided just to put my pickles on the sandwich in addition to some other favorite ingredients. I think it turned out really delicious!

PICKLES GRILLED CHEESE SANDWICH
The Pickles Grilled Cheese Sandwich adds an extra burst of flavor to the classic grilled cheese sandwich with a few pickles.

- Heat the pan on medium.
- Add a slab of butter to the pan and let it melt completely.
- Put two sandwich pickle slices onto a paper towel. This will soak up some of the liquid so your sandwich doesn't get soggy.
- Put one slice of cheese on each slice of bread.
- Chop up the pickles into small pieces. About an inch or so wide should be fine. Then layer the pickles onto one slice of cheese and close up your sandwich.
- Once the butter is completely melted, coats the whole pan, and starts bubbling a little, put the sandwich into the pan. Cook for 3-4 minutes on one side, checking to make sure it isn't burning.
- Once the first side is golden brown, flip and cook the other side for 3-4 minutes. If the first side isn't golden brown yet, cook each side for another minute or two.
- When both sides are a crispy golden brown and the cheese is melty and holds the pickles in place, your pickles grilled cheese sandwich is done and ready to eat.

- Preheat oven to warm, 250 degrees F.
- Preheat large griddle or large nonstick skillet over medium heat.
- To a small pot over medium low heat add 2 tablespoons vegetable oil, eyeball it. To warm oil, add butter and melt it into the oil. Keep a pastry brush on a spoon rest or small plate on hand.
- Lay out 8 slices of rye bread. Dot bread with teaspoonfuls of red pepper relish. Top with even amounts of smoked turkey, sauerkraut and thinly sliced cheese. Top cheese with remaining slices of bread. Brush griddle or skillet with oil and butter mixture. Grill and toast sandwiches 2 or 3 minutes on each side. Transfer sandwiches to cookie sheet and place in oven to keep warm. Wipe off griddle or skillet.
- Lay out 8 slices of mini pumpernickel bread. Cut sliced Swiss cheese into pieces that will fit bread. Layer cheese and sliced tomatoes on bread. Season with salt, pepper, chives and place another layer of cheese on tomatoes. Top sandwiches with another slice of bread. Brush griddle or skillet liberally with oil and butter. Grill and toast sandwiches 2 or 3 minutes on each side. Transfer grilled cheese and tomato sandwiches to warm oven. Wipe griddle or skillet clean.
- Mix beef, Worcestershire, onion and seasoning or salt and pepper. Form 8 small patties. Raise heat to medium high. Fry patties in 1 tablespoon vegetable oil on griddle or skillet 2 or 3 minutes on each side. Place patties on rye bread bottoms and wipe griddle or skillet clean. Top patties with cheese and another slice of bread. Reduce heat on griddle or skillet back to medium and brush with oil and butter. Grill sandwiches 2 or 3 minutes on each side until toasted.
- Remove mini Rachael's and grilled cheese and tomato sandwiches from the warm oven. Pass trays of sandwiches with mini pickles, mini pretzels. Mini candies and cookies treat your sweet tooth.
