MEATLOAF GRILLED CHEESE SANDWICH
This grilled cheese and meatloaf sandwich has crisped cheese on the outside and warm melted cheese on the inside. Perfect with sliced pickles and extra ketchup for dipping.

Steps:
- Place meatloaf on a microwave-safe plate; cook in the microwave on High, 30 seconds at a time, until heated through.
- Melt margarine in a non-stick skillet over medium heat. Place both bread slices in skillet over melted margarine. Build sandwich on bread slice in this order: ketchup, 1 slice Cheddar cheese, warm meatloaf slice, and mustard. Flip second slice of bread over onto sandwich; cook until bottom of sandwich is lightly browned, about 2 minutes.
- Flip sandwich with a spatula and place 1 slice Cheddar cheese on top; continue cooking until cheese melts slightly, about 1 minute. Flip sandwich over and lay remaining slice of cheese on top; cook until cheese on the bottom of sandwich is melted and crisp, about 2 minutes. Turn sandwich over; cook until cheese is melted and crisp, about 2 minutes.

- In a large bowl, combine the first nine ingredients. Crumble beef over mixture and mix well. Shape into two loaves. Place a sheet of heavy-duty foil in center of grill. Place meat loaves on foil (do not seal foil)., Prepare grill for indirect heat; grill meat, covered, over indirect medium heat for 50 minutes or until meat is no longer pink and a thermometer reads 160°. Brush tops with additional ketchup if desired. Let stand for 10 minutes before slicing.

- Heat a non-stick skillet over medium-high heat.
- Brush butter evenly on 1 side of each bread slice and place four of the slices, buttered side down, into skillet.
- Top each with 1 1/2 slices cheese, 2 meat loaf slices and then an additional 1 1/2 slices of cheese.
- Top with remaining bread slices, buttered side up.
- Cook 4-5 minutes on each side or until golden; serve immediately.

- Heat gas or charcoal grill for indirect cooking as directed by manufacturer.
- Meanwhile, in large bowl, mix all ingredients except bacon. On work surface, pat mixture into 7-inch square. Cut into 4 (3 1/2-inch) squares. Top each square with 2 half-slices bacon; attach with toothpicks.
- Carefully spray grill rack with cooking spray. Place patties on unheated side of two-burner gas grill or over drip pan on charcoal grill (medium heat). (If using one-burner gas grill, cook over low heat.) Cover grill; cook 20 to 25 minutes or until slightly pink in center.
- Using spatula, turn patties over. Cover grill; cook 5 to 8 minutes longer or until meat thermometer inserted in center of patties reads 160°F and bacon is crisp. Remove toothpicks before serving.

- Pickle the onion: In a small nonreactive bowl, combine the onion, vinegar, sugar, salt and several grinds of pepper. Set aside for 20 minutes. Drain, squeezing excess liquid from the onions and place the onions in a large bowl. Reserve the pickling liquid.
- To the bowl of onions, add the radicchio, celery, tomatoes, pepperoncini peppers, olives, basil and oregano. Sprinkle over 3 tablespoons of the sherry vinegar pickling liquid, along with 2 tablespoons oil. Gently massage the mixture together and taste, adjusting the flavorings and seasonings as desired. Cover and refrigerate for 20 minutes before using to give the flavors time to marry. This makes about 1 quart slaw, which will keep, covered and refrigerated, for up to 3 days.
- Spread 1 side of each of the slices of bread with mayonnaise. Top each slice with half of the cheese. On top of one slice, place the warm meatloaf slice, then the slaw. Top with the inverted second slice of bread to form a sandwich, pressing gently so everything stays together.
- Heat a griddle over medium-high heat until hot. Meanwhile, spread the outside of one side of the sandwich with mayonnaise.
