GRILLED CHEESE MEATLOAF SANDWICHES
Great way to use up leftover meatloaf! Use the hearty, or country style, white bread slices that are larger than regular white bread.

Steps:
- Heat a non-stick skillet over medium-high heat.
- Brush butter evenly on 1 side of each bread slice and place four of the slices, buttered side down, into skillet.
- Top each with 1 1/2 slices cheese, 2 meat loaf slices and then an additional 1 1/2 slices of cheese.
- Top with remaining bread slices, buttered side up.
- Cook 4-5 minutes on each side or until golden; serve immediately.

- In a large bowl, combine the first nine ingredients. Crumble beef over mixture and mix well. Shape into two loaves. Place a sheet of heavy-duty foil in center of grill. Place meat loaves on foil (do not seal foil)., Prepare grill for indirect heat; grill meat, covered, over indirect medium heat for 50 minutes or until meat is no longer pink and a thermometer reads 160°. Brush tops with additional ketchup if desired. Let stand for 10 minutes before slicing.

GIANT GRILLED CHEESE FOR A CROWD

- Put 1 baking sheet on the center rack of the oven and preheat to 350 degrees F.
- Slice 1/4-inch of the crust off the top and bottom of the loaf of bread. Split the loaf evenly in half, horizontally. Cut a piece of parchment paper large enough to accommodate both halves of bread and put both the top and the bottom on the parchment, cut-side up so the inside of the loaf is visible.
- Scoop about a 1/4-inch of the soft middle of the loaf out. Spread the mayonnaise evenly on the crustless top of each half, then flip them over so the mayonnaise-side is face down on the parchment.
- Evenly distribute the 3 cheeses between the 2 bread halves. Use the parchment to transfer your grilled cheese to the preheated baking sheet, using a spatula if the bread is sticking, then remove and discard the parchment. Bake until the crust is golden brown and crunchy and the cheese is melted, about 18 minutes. Remove from the oven and immediately sandwich the 2 halves with the cheese in the middle. Let rest about 10 minutes. Slice and serve while hot.

- Place meatloaf on a microwave-safe plate; cook in the microwave on High, 30 seconds at a time, until heated through.
- Melt margarine in a non-stick skillet over medium heat. Place both bread slices in skillet over melted margarine. Build sandwich on bread slice in this order: ketchup, 1 slice Cheddar cheese, warm meatloaf slice, and mustard. Flip second slice of bread over onto sandwich; cook until bottom of sandwich is lightly browned, about 2 minutes.

- Preheat a grill to medium high. Pulse the scallions, celery and parsley in a food processor until finely chopped; transfer to a bowl. Add the beef, panko, egg, 2 teaspoons Worcestershire sauce, 1/2 teaspoon salt, and pepper to taste. Mix with your hands, then divide into 4 portions; set a piece of cheese on each. Mold the beef around the cheese and form into mini oval-shaped loaves. Stack 2 large sheets of heavy-duty foil; coat the top sheet with cooking spray. Arrange the meatloaves 1 1/2 inches apart in the center of the foil; coat with cooking spray. Bring the foil edges together to make a packet and crimp to seal. Set the packet seam-side down on the grill; add the peppers to the grill, skin-side down. Cover and cook 10 minutes.
