Cheesy-Garlic Grilled Zucchini image

This is so easy to make and you can adjust the spices and cheese to your taste. You can also try other spices. A very nice side dish with grilled chicken.

zucchini (as many as you would like to grill)
butter or margarine
grated parmesan cheese
shredded cheese (I like Monterey Jack)
minced garlic
oregano
basil
salt
pepper

Steps:

  • Cut the Zucchini in half lengthwise (you can also use yellow summer squash).
  • Spread butter or margarine on one half of the squash.
  • Sprinkle the garlic, cheese's and spices on the other half.
  • (Use as much or as little as you like) Place the buttered half on top of the half with the cheese and spices.
  • Slice in half or if squash is real big, cut in thirds or fourths.
  • Wrap each portion in aluminum foil and place on grill.
  • Grill for about 10 to 15 minutes turning often.

2 large Egg, fresh, whole, raw
1 cup Parmesan Cheese, grated
0.25 cup Chopped Green Onions (by DORNETTEB)
8 tbsp Argo Cornstarch
1 tbsp Extra Virgin Olive Oil
8 serving cheese, American, Borden™ Grilled Cheese Melts, 1 slice

Steps:

  • Squeeze excess moisture out of zucchini with a clean kitchen towel. In medium bowl, combine zucchini, eggs, Parmesan, onions, and cornstarch. Season with salt and pepper to taste, if desired. In large skillet, heat olive oil in bottom of pan. Scoop about 1/4 cup of zucchini mixture onto pan and shape into a square. Repeat to make another patty. Cook until lightly golden on both sides, about 4 minutes per side. Top one square with sliced cheese and top with other square. Cook until cheese has melted, about 2 minutes per side. Repeat to make a total of 8 sandwiches. Serve immediately.

2 medium zucchini (yields 2 cups grated zucchini)
1/2 cup mozzarella cheese (grated)
1/2 cup parmesan cheese, grated (vegetarian)
1 medium egg (beaten)
1/3 cup almond flour
1/2 teaspoon salt
1/2 teaspoon black pepper
2 slices cheese
2 tablespoons butter

Steps:

  • Cut the ends from the zucchini and grate.
  • Place the zucchini in a sieve and salt (this helps remove the moisture). Sit for 10-15 minutes over a bowl to catch any excess water.
  • Give the grated zucchini a light wash to remove the salt, then using either nut bag, muslin cloth or strong kitchen towel, squeeze the water out of the zucchini.
  • Place the squeezed zucchini into a bowl and add the almond flour, egg, Mozzarella, parmesan cheese, salt and pepper.
  • Stir until the mixture is combined.
  • Line a baking tray with parchment paper.
  • Spoon the zucchini onto the tray in 4 equal portions and shape into even squares.
  • Bake for 15 minutes at 200C/400F then flip the zucchini squares over. Bake for another 10 minutes
  • Remove the zucchini squares from the oven and cool for 10 minutes.
  • Heat the butter in a frying pan on a medium heat.
  • Put a slice of cheese in between two zucchini slices and place in the frying pan.
  • Fry for 2 minutes per side and flip over for even cooking.
  • Slice the zucchini sandwich into 2 and eat!

1 onion, sliced into rings
½ cup all-purpose flour
½ cup cornmeal
½ teaspoon salt
½ teaspoon ground black pepper

1 cup vegetable oil for frying

Steps:

  • Place zucchini and onions in a medium bowl and mix together.
  • In a small bowl mix flour, cornmeal, salt, pepper and garlic powder.
  • Pour dry mixture over zucchini/onion mixture, cover bowl and shake well. Let mixture sit for about 30 minutes; a batter will form on the vegetables.
  • In a medium skillet heat oil over medium heat. When oil is hot add breaded vegetables and fry, turning to brown evenly.

Pan fried zucchini is an easy recipe, great aside eggs or meats. I love sear zucchini before cooking them slowly along with garlic and Parmigiano Reggiano cheese. A sprinkle of black pepper and minced Italian parsley complete this tasty recipe. Delicious just cooked, but great reheated as well!

3 medium zucchini
3 cloves of garlic
1 tbsp fresh parsley
4 tbsp extra virgin olive oil
4 tbsp Parmigiano Reggiano cheese
1 dash black pepper
to taste table salt

Steps:

  • First, peel and crush the cloves of garlic.
  • Then, rinse zucchini and cut them into rounds long 2 inches, then cut zucchini chunks into quarters.
  • After that, drop the olive oil into a pan and place over medium heat. When the oil is hot but not smoking, pour the garlic.
  • Now, sautè the garlic until golden, then take out from the pan and save it aside. Raise the flame, then pour zucchini into the pan.
  • Finally, Sear zucchini until golden brown, stirring occasionally.
  • When the zucchini are golden brown, lower the heat and add 2 tbsp of grated Parmigiano Reggiano cheese and the golden garlic we previously saved.
  • Salt as needed, stir well and cover with a lid.
  • Then, cook until are zucchini well cooked but not mushy.
  • Turn off the heat and complete pan fried zucchini with the remaining of grated cheese, a dash of black pepper and a sprinkle of minced fresh parsley.
  • Eventually, cover with the lid and rest 5 minutes far from the heat before serving.
