GRILLED FRIED EGG, BOLOGNA AND CHEESE SANDWICH
I was craving fried bologna. Came across an Egg, Cheese Bologna recipe and tweaked it a little bit to make it like a grilled cheese sandwich! Delicious!!

- Prep:.
- Slit the bologna in 4 places alond the side to 1/2 to middle (like a pinwheel) to prevent it from curling when fried.
- Mayo one side of 2 slices of bread (I prefer to grill with mayo -- browns better than butter -- a trick I learned from a diner).
- Add small pat of butter to grease a non-stick frying pan on medium. Add the bologna. Fry to your liking turning frequently as not to burn. Transfer to one piece of your bread on the un-mayo side.
- Fry an egg. You will have plenty of grease to fry it inches Poke yolk. Flip. Add a slice of cheese to cooked side. Fry it through. Transfer to on top of bologna.
- Put other slice of bread over. Mayo side out. Transfer to fry pan. Grill it like you would a grilled cheese sandwich. I put Frank's Red Hot cayanne pepper sauce as a condiment. (milder than Tabasco) -- use whatever condiment you want or leave it plain! Super YUMMY!

- To prepare this egg and cheese grilled sandwich recipe, lay the whole wheat bread slices on a clean surface (or a tray). Carefully spread butter on one side of the bread slices. Once done, keep them aside until needed again.
- Next, put a non-stick pan on medium flame and melt butter in it. Once the butter has melted, crack open eggs in the pan. Cook the eggs until the egg whites are completely settled and the egg yolk becomes thick. Top it up with black pepper powder and salt to add more flavour. Then, remove the eggs from the pan and keep them aside.
- Now, put another non-stick pan on medium flame and transfer the bread slices on it. Make sure to keep the side with butter on it, facing towards the pan. Add cheese slice on it followed by the scrambled eggs (see step-2 for reference).
- Add the remaining bread slices to cover the sandwich. Make sure to keep the side with butter on it, facing upwards.

- Cook pancetta in large nonstick skillet over medium-high heat until crisp. Transfer to paper towels. Reserve skillet with drippings.
- Melt butter in extra-large nonstick skillet over medium heat. Add 4 bread slices; top each with 2 provolone slices. Sprinkle with black pepper. Cook until cheese melts, 3 to 4 minutes.
- Meanwhile, heat skillet with drippings over medium heat. Crack eggs into skillet; cook until whites are set but yolks are still runny, 2 to 3 minutes. Set 6 pancetta slices and 2 eggs atop each of 2 cheese toasts. Top eggs with onion, Parmesan, and basil, then remaining bread slices, cheese side down. Cut sandwiches in half and serve.
