CAJUN-SPICED GRILLED SHRIMP WITH REMOULADE



Cajun-Spiced Grilled Shrimp with Remoulade image

Number Of Ingredients 15

2 tablespoons lemon juice, from 1 lemon
2 tablespoons extra-virgin olive oil
2 teaspoons Cajun spice
Kosher salt
1 pound large shrimp (10 to15 per pound), peeled and deveined
1 tablespoon chopped fresh flat-leaf parsley, for serving
Lemon wedges, for serving
1/2 cup mayonnaise
1/2 cup sour cream
2 tablespoons Cajun spice
1 tablespoon ketchup
1 tablespoon whole grain mustard
1 tablespoon chopped fresh flat-leaf parsley
1 teaspoon lemon zest
Kosher salt

Steps:

  • For the shrimp: Add the lemon juice, olive oil, Cajun spice and 1/2 teaspoon of salt to a medium bowl and whisk to combine. Add the shrimp and toss to coat them in the spice mixture. Allow the shrimp to marinate while you make the remoulade. Do not marinate shrimp longer than 20 minutes.
  • For the remoulade: Add the mayonnaise, sour cream, Cajun spice, ketchup, mustard, parsley, lemon zest and 1/4 teaspoon salt to a bowl and whisk to combine. Refrigerate until ready to serve.
  • Preheat a grill pan over medium-high heat. When the pan is hot, add the shrimp in an even layer. Allow the shrimp to cook for 2 minutes, then flip them and cook until they are just opaque and the tails are pink, about another minute. Remove the shrimp to a serving platter, garnish with parsley and lemon wedges and serve with remoulade.

3 garlic cloves, minced
2 teaspoons paprika
1 teaspoon salt

2 pounds uncooked medium shrimp, peeled and deveined with tails on
4 medium lemons, each cut into 8 wedges

Steps:

  • In a large shallow dish, combine the first 8 ingredients. Add shrimp and turn to coat. Cover; refrigerate for 15 minutes. , Drain shrimp, discarding marinade. On 12 metal or soaked wooden skewers, thread shrimp and lemon wedges., Grill, covered, over medium heat or broil 4 in. from the heat until shrimp turn pink, turning once, 6-8 minutes.

This grilled shrimp recipe came from a neighbor, Katie. These shrimp are a nice change from the regular Cocktail shrimp. The ingredient list looks long, but very easy to make with sprices/herbs that are usually onhand. Easy make-ahead, or bring with appetizer. Frozen shrimp work great.

2 lbs shrimp, peeled deveined, and be sure they are thawed, if using frozen. (I buy mine at Sam's 2 lb bag)
1/2 cup olive oil
2 tablespoons lemon juice
2 tablespoons parsley
1 tablespoon honey
1 tablespoon soy sauce
1 tablespoon paprika
2 1/2 teaspoons salt
1 teaspoon onion powder
1 teaspoon garlic powder
1 teaspoon cayenne pepper
3/4 teaspoon white pepper
3/4 teaspoon black pepper
1/2 teaspoon thyme
1/2 teaspoon oregano

Steps:

  • Mix together. Marinade for up to 24 hours. Skewer and grill, 3 minutes per side, or until tender. Serve warm or refrigerate to serve later.

Grill, covered, over medium heat or broil 4 in. from the heat for 5-8 minutes or until shrimp turn pink, turning once.

This is an adaptation of BBQU recipe. My favorite way to cook and eat shrimp. Adjust the heat according to your taste.

3 lbs shrimp, peeled and deveined
3 tablespoons Old Bay Seasoning
3 tablespoons cajun seasoning
1 tablespoon ground coriander
1 tablespoon fresh ground black pepper
1 -3 teaspoon cayenne pepper
1/4 cup olive oil
3 tablespoons fresh lemon juice

Steps:

  • Rinse the shrimp under cold running water.
  • Place the Old Bay seasoning, Cajun Rub, coriander, black peppercorns, and cayenne in a small bowl and stir to mix. Sprinkle the rub over the shrimp and toss to mix. Stir in the olive oil and the lemon juice and stir to mix. Let the shrimp marinate in the refrigerator, covered, for 1 hour.
  • Thread shrimp onto skewers. Set up the grill for direct grilling and preheat to high. If using a gas grill, place all the wood chips or chunks in the smoker box or in a smoker pouch and run the grill on high until you see smoke. If using a charcoal grill, preheat it to high, then toss all of the wood chips or chunks on the coals. When ready to cook, brush and oil the grill grate. Place the marinated shrimp on the hot grate and grill until just cooked through, 1 to 3 minutes per side. When done, the shrimp will turn a pinkish white and feel firm to the touch.

1 teaspoon salt
1/4-1/2 teaspoon pepper

1 lb jumbo shrimp, raw, shelled and deveined, tails intact if you like

Steps:

  • Mix all marinade ingredients. Add shrimp, stir to coat and refridgerate 15 minutes Not longer or shrimp will get rubbery when you cook them.
  • Thread onto skewers. Grill over med heat for 2 to 3 mins per side or till shrimp are slightly pink. Remove and enjoy.
  • Grilled corn makes a great side for this.
