2 tablespoons margarine
1 small onion, chopped
1 clove garlic, chopped
6 eggs, beaten
½ cup salsa picante, divided
¼ teaspoon ground cumin
1 cup shredded Cheddar cheese
6 corn tortillas, warmed

Steps:

  • Heat margarine over medium heat in a skillet. Cook and stir onion and garlic in the hot skillet until tender, 3 to 4 minutes. Add eggs, 1/4 cup salsa, and cumin; scramble until set, 3 to 4 minutes. Stir in Cheddar cheese.
  • Spoon eggs evenly into tortillas; fold and top with remaining 1/4 cup salsa.

These grilled chicken tacos are full of fresh flavor! I love this recipe because it can be easily modified for the number of guests/family members you have. I honestly don't really measure the seasonings either but I love the combination of these spices with just a hint of the cinnamon! Yummy!

3 skinless, boneless chicken breast halves
2 teaspoons chili powder
1 teaspoon garlic powder
½ teaspoon ground cinnamon
½ teaspoon ground cumin
2 avocados, chopped and slightly mashed
½ cucumber, chopped
½ red onion, chopped
1 teaspoon lime juice
1 (15 ounce) package flour tortillas, warmed
1 (9 ounce) jar mango-peach salsa
½ red cabbage, shredded
1 (8 ounce) package shredded Mexican cheese blend
¼ cup chopped fresh cilantro

Steps:

  • Season chicken breasts with chili powder, garlic, cinnamon, and cumin.
  • Preheat an outdoor grill for medium heat and lightly oil the grate. Grill chicken breasts until no longer pink in the center, about 5 minutes per side. Cut grilled chicken into chunks or strips.
  • Mix avocados, cucumber, red onion, and lime juice together in a bowl.
  • Divide grilled chicken, avocado mixture, salsa, cabbage, cheese, and cilantro among warmed tortillas.

Flat iron steak is an inexpensive but totally flavorful cut of meat, especially when marinated in a citrus adobo sauce to make my favorite steak tacos.

1 cup orange juice
2 cloves garlic (, peeled)
2 chipotle peppers plus 2 tablespoons adobo sauce from the can
1/2 cup cilantro leaves and stems ((or a large fistful))
1 tablespoon cumin
1 teaspoon cinnamon
1 teaspoon kosher salt
1 1/2 pounds flat iron steak
Sliced avocado
Chopped tomato
Chopped onion
Chopped cilantro leaves

Steps:

  • Poke holes in the steak with a large knife, taking care to make the holes with the grain. Add the steak to a gallon size freezer bag.
  • Add the orange juice, garlic cloves, chipotle peppers and adobo sauce, cilantro, cumin, cinnamon and kosher salt into a blender. Puree until smooth then pour into the freezer bag with the steak, seal and refrigerate for 1 hour up to overnight.
  • Let the steak come to room temperature before grilling, about 20 minutes. Oil grates with grapeseed oil and preheat it on high heat.
  • Reduce the heat to medium-high and grill the meat for 10 minutes on each side or until cooked to desired doneness.
  • Allow the steak to rest on a platter, covered with foil, for 10 minutes before cutting.
  • Warm the tortillas over a gas flame or on the grill. Assemble the tacos with sliced avocado, chopped onion, tomatoes, cilantro, queso fresco, and a squeeze of grilled limes or sliced jalapeño if you like.

Juicy tomatoes and sweet corn are at their peak in summer, and the grilled salsa in these tacos celebrates both. It is spooned on top of soft-scrambled eggs with grilled chorizo, all wrapped in warm corn tortillas. Be sure to add the cheese while the eggs are fresh out of the pan, so their heat will melt the cheese.

8 ounces fresh chorizo (about 2 links)
1/3 cup extra-virgin olive oil
1 cup cherry tomatoes
2 ears yellow corn, shucked
1 bunch scallions
1 jalapeno, halved
2 limes, halved
Kosher salt and freshly ground pepper
1/4 cup fresh cilantro leaves and tender stems, roughly chopped
8 large eggs
2 tablespoons heavy cream
Eight 6-inch corn tortillas
4 ounces Monterey Jack cheese, finely shredded (about 1 1/2 cups)

Steps:

  • Prepare a grill for medium heat. Prick the chorizo links 3 or 4 times with a fork (this keeps them from bursting on the grill). Brush them all over with 1 tablespoon of the oil. Grill, flipping as needed, until charred all over and cooked through, 12 to 15 minutes. Let cool slightly, then slice into 1/4-inch-thick rounds; set aside.
  • Meanwhile, thread the tomatoes onto a 10-inch skewer. (If using a wooden skewer, leave just 1/2 inch sticking out on each end so you do not have to soak it.) Put the skewered tomatoes, corn, scallions, jalapeno and limes on a rimmed baking sheet or large platter, brush the vegetables and limes liberally with 2 tablespoons of the oil and sprinkle liberally with salt and pepper.
  • Place the vegetables and limes (flesh-side down) on the grill. Grill the corn, using tongs to rotate the ears occasionally so they cook evenly, until lightly charred in spots, 7 to 9 minutes. Grill the tomatoes, scallions, jalapenos and limes, rotating as needed, until deeply charred, 4 to 6 minutes. Return the vegetables and limes to the baking sheet when done cooking. Transfer the cooked chorizo to a cutting board. When cool enough to handle, halve the tomatoes, cut the kernels off the cobs and thinly slice the scallions and jalapenos (seed the jalapeno, if desired). Put the cut vegetables, the juice of 2 of the lime halves and the cilantro in a large bowl; stir to combine, and season with salt and pepper. Cut the remaining 2 grilled lime halves into wedges; set aside.
  • Meanwhile, whisk together the eggs, cream and 1/2 teaspoon each salt and pepper in a medium bowl. Place a large cast-iron skillet on 1 side of the grill, and pour in the remaining oil (it might seem like a lot, but you do not want the eggs to stick). Heat the oil for 1 minute, then add the egg mixture. Use a heat-resistant spatula to stir the eggs until soft curds form, 6 to 8 minutes. Gently stir in the chorizo.
  • While the eggs are cooking, grill the tortillas on the other side of the grill until lightly charred on both sides and warmed through, 1 to 2 minutes total.
  • To assemble the tacos, divide the egg mixture among the warm tortillas, sprinkle each with 1 to 2 tablespoons of the cheese and top each with a spoonful of the grilled salsa. Serve immediately with the grilled lime wedges and any remaining grilled salsa on the side.
