Steps:
- Combine juice, soy, brown sugar, bourbon, pepper, garlic powder and oil in a bowl.
- Remove all skin from the salmon.
- Place the salmon in a glass dish side by side. Pour some of the marinade over (reserve some for basting while grilling). Refrigerate for at least 1 hour a few hours will be even better.
- Drain and grill over med.-high about 5-7 minutes per side or until fish flakes-basting with the reserved marinade.

- Melt butter in a large heavy skillet over medium heat. Stir in brown sugar. Place salmon fillets on top of brown sugar mixture. Cook for 5 minutes on medium heat. Turn salmon, and pour bourbon around the fillets. Continue cooking for 5 minutes, or until fish flakes easily with a fork. Spoon glaze over the salmon, and serve.

BOURBON GLAZED SALMON
This simple salmon with bourbon glaze is absolutely delicious! It's a simple and delicious weeknight dinner that only requires 7 ingredients - and it's perfect for the whole family!

- Preheat oven to 425 F.
- For the glaze: In a small saucepan, combine the bourbon, sugar, soy sauce, garlic and mustard. Bring to a boil and simmer on low for 10-15 minutes, or until reduced by half. Remove from heat and let sit to thicken.
- Pat salmon fillets dry and season with salt and pepper on both sides. Lay the salmon skin side down on a lightly oiled wire rack set over a baking sheet (to catch the drips). If you don't have a rack, a baking sheet will work just fine. Bake for about 10-15 minutes or so, depending on the size of your fish. When the salmon is nearly done, turn the broiler on in your oven. With a food brush, spread the glaze on top of the salmon. Be generous with your glaze!
- Return to the oven and broil (not too close to heat) for about 30 seconds. Watch carefully that glaze doesn't burn. Repeat the process: take out the salmon, brush with more of the glaze and broil for a few seconds. Remove from oven.
- Arrange the fillets on each plate and drizzle each serving with the remaining glaze. Enjoy!

- Add all of the ingredients, except for the salmon, to a container or plastic bag that seals.
- Seal the bag and gently massage to combine ingredients or gently stir with a spoon.
- Lift the salmon fillets into the bag with the marinade. Seal tightly, removing excess air, and gently turn to coat.
- Allow the salmon to marinate about 30 minutes. Turn fish in bag as necessary to ensure that marinade is distributed evenly over fish.
- Remove fish from bag and discard marinade.
- Preheat oven to 375 degrees F and bake skin side down for approx. 10-15 minutes (10 minutes per inch of thickness.) Fish is done when flesh is opaque and separates easily with fork. Alternatively, grill salmon over medium-high heat.

- 1) Rinse salmon & pat dry. 2) Gently place in a large plastic bag. 3) In a small bowl- stir together bourbon, brown sugar, honey, soy sauce, ginger & pepper. 4) Pour sauce over salmon into bag. Marinate in frig for 1 hour, turning occasionally. 5) Get out your fish bag, set aside marinade.
