GRILLED COUNTRY-STYLE PORK RIBS
The country-style pork ribs are rubbed with a dry rub, grilled over a two-zone fire, and finished in BBQ sauce. An inexpensive weeknight grilling recipe!

- Rinse the ribs gently under cool running water in the sink and pat dry with paper towels. (See Notes)
- Rub the country-style ribs with a dry rub of your choice, using your hands to press it onto the meat so it will adhere. Let them sit out on the counter while preheating the grill or for best results, cover the ribs with plastic wrap refrigerate for two hours or overnight.
- Light a chimney full of charcoal. When the coals are lit and gray with ash, pour out the coal into the grill and set up the coals for a two-zone fire for indirect heat. Preheat to 350 degrees F.
- Place the ribs over direct heat on a clean and oiled grate. Grill until golden brown with a slight char on them, about 3 to 5 minutes (depending on size), then flip the ribs and char the other side for an additional 3 to 5 minutes.
- When both sides of the ribs are charred, move them over to the cooler (indirect) side of the grill. Close the lid and allow the ribs to cook for about 20 to 30 minutes at 350 degrees F. Add charcoal and adjust the vents of the grill to maintain temperature.
- After 20 minutes, check the temperature of the ribs with an instant-read thermometer. The thickest part of the ribs should read somewhere around 135 to 140 degrees F.
- At this point, move the ribs back over direct heat and baste with warm barbecue sauce to caramelize the sauce. It's important to pay close attention not to let the ribs get to charred and black.
- Double-check the temperature which should be at 145 to 150 degrees F before removing from the grill. Remove them and allow the ribs to rest at least 10 minutes before serving.

- Wisk together the Brown Sugar, Pepper, Garlic Powder, Onion Powder, Water, Worcesteshire Sauce and Soy Sauce. Then wisk in the Mustard. Reserve 1/4 cup of the marinade.
- Trim the pork ribs and place in a sealable plastic bag in a large bowl.
- Pour in the marinade remove the excess air and seal the bag. Let the ribs marinade at room temerature for 30 minutes.
- Heat up the grill and clean the grates.
- Mix the reserve marinade with the barbecue sauce.
- Remove the meat from the marinade and discard the remaining marinade.
- Brush the meat with the marinade & Barbecue sauce and grill over direct high heat with the grill covered turning every 10-15 minutes. When meat temp reaches 155° remove from grill and enjoy.

- 1. In a medium bowl and blend together both sugars, the paprika, salt, pepper, granulated onion, and cayenne. Sprinkle the short rib pieces liberally with this mixture until coated on all sides. Let sit at room temperature for about 30 minutes.
- 2. Oil the grill racks. Preheat your grill using all burners set on high and with the lid closed for 10 to 12 minutes.
- 3. Place the beef ribs on the grill, close the lid, and reduce the heat to medium. Turn the ribs every 3 to 5 minutes or so, so that every side gets slightly caramelized, 15 to 20 minutes total. (If your short rib pieces are small, it won't take quite this long.) The ribs should yield easily to the touch, not unlike a medium-rare steak or the way the tip of your nose feels. Reduce the heat a little more and brush the ribs with the sauce. Cover the grill and let cook for a minute or two for the sauce to set up, and then continue to turn and brush until all sides of the ribs have been glazed. Remove to a platter and let sit for 5 to 10 minutes, covered with foil. Serve.

- Optional: Brine first if you have time. 2 cups water, 1 tablespoon table salt, and 1 tablespoon brown sugar for 1-4 hours in the refrigerator. Rinse well and use a rub without salt.
- Clean and oil grill grates then preheat grill to a grill surface temperature of 450°-500°.
- Trim ribs of any excess fat. Deepen the cuts that are already in the ribs to about 75% through.
- Coat both sides of ribs with a rub of your choice. Be sure to get in the cuts. Rub in and let rest for 10 minutes while preheating grill.
- Place over direct heat and close lid. Flip about every 5 minutes and grill until an internal temperature of about 145°-150°. About 20 minutes depending on grill and the thickness of the meat. Always cook to the final internal temperature and never by time alone.
- The last few minutes, coat with sauce on both sides and grill until brown. Let stand for 5 minutes before cutting.

GRILLED TENDER JUICY BONELESS BEEF RIBS
You don't have to be a diehard pitmaster to make tender juicy boneless beef ribs. All you need is a little time, a grill and some foil.

- In a small bowl, whisk together the soy sauce, vinegar, broth, Tabasco sauce and honey. Place the ribs in a zip-top bag. Pour the marinade inside and rub to coat. Seal the bag and let marinate at least 4 hours.
- Heat the grill to high. Place the ribs on direct heat and sear on each side for five minutes. Discard the extra marinade.
- Move the ribs to indirect heat (For a gas grill, turn the heat off on one side and move the ribs to that side. For a charcoal grill, push the coals to one side and move the ribs to the side with no coals.). Close the lid and grill for 30 minutes.
- Wrap the ribs in foil and continue grilling for 2 hours. The internal temperature of the grill should be kept at 275 degrees.
- Open the foil pouch and place the ribs on a platter. Pour the broth from the foil pouch over the ribs and serve.

- Preheat oven to 300°F. Coat bottom of a sheet pan with olive oil. Stir together paprika, chile powder, garlic powder, onion powder, 3/4 teaspoon of the salt, and 1/2 teaspoon of the pepper in a small bowl until blended. Sprinkle all sides of ribs with spice mixture, and place ribs in a single layer in prepared sheet pan. Cover tightly with aluminum foil, and bake in preheated oven until ribs are tender and can be pulled apart with a fork, about 1 1/2 to 2 1/2 hours.
