Beef or Chicken Satay With Peanut Sauce image

Thai style chicken or beef kabobs. These are very flavorful when marinated overnight. The recipe listed is for a large group. Perfect for potlucks. (Prep time is marinade time).

4 lbs flank steaks or 4 lbs boneless chicken breasts
4 fluid ounces peanut oil
1 stalk lemongrass, minced
1 tablespoon minced garlic
1 1/2 teaspoons crushed chili peppers
1 tablespoon curry powder
1 tablespoon honey
1 fluid ounce Thai fish sauce or 1 fluid ounce vietnamese fish sauce
1 3/4 cloves garlic, minced
1/2 ounce cilantro, minced
13 1/2 ounces peanut butter
12 ounces soy sauce
7 1/2 ounces sugar
1 tablespoon rice wine or 1 tablespoon dry sherry
1 1/2-4 1/2 tablespoons chilies, hot

Steps:

  • Method for meat and marinade: Trim the meat and cut into long thin strips.
  • Combine all of the marinade ingredients, add the meat, and let marinate under refrigeration for at least 2 hours and up to 12 hours.
  • Soak bamboo skewers in water for a least 10 minutes before you are ready to grill the satays.
  • Thread the meat on the skewers, one strip per skewer.
  • Skewer meat can be returned to the marinade to hold until cooking time.
  • Place the skewered meat on the grill or boiler rods.
  • Grill or broil undisturbed for about 1 minute, turn and grill 1 minute more for medium rare, or as needed for the desired doneness.
  • Server the satays with the spicy peanut sauce.
  • Method for Spicy Peanut Sauce: Process all ingredients in food processor until smooth.
  • Cover and set aside at room temperature for 1 hour or overnight in the refrigerator.
  • Bring to room temperature before using, and stir briskly or reprocess to mix.

1 pound beef tenderloin, cut into 2-inch strips
20 wooden skewers, soaked in water 30 minutes
1 cup plain yogurt
1 teaspoon freshly grated ginger
1 teaspoon minced garlic
1 tablespoon curry powder
1/2 lemon, juiced
Vegetable oil, for grilling
Cilantro leaves, for garnish

Steps:

  • Thread the beef onto the soaked skewers, working the skewers in and out of the meat so that it stays in place while grilling. Combine yogurt, ginger, garlic, curry powder, and lemon juice in a shallow platter and stir to combine. Place the beef skewers into the yogurt marinade and turn them until they are well coated. Cover and let the meat marinate in the refrigerator for up to 2 hours.
  • Place a grill pan over medium heat and brush it with oil to prevent the meat from sticking. Grill the satays for 3 to 5 minutes on each side, until nicely seared and cooked through. Serve piled on a large platter garnished with cilantro.

Satay is one of my all time faaaaavourite street eats, which is not surprising considering I spent six years of my childhood growing up in Malaysia where it's every where!

3 stalks lemongrass (chopped)
3 cloves garlic (peeled)
2 cm ginger piece (peeled and chopped)
2 teaspoons turmeric powder
1 ½ tablespoons brown sugar
1 teaspoon salt
1 ½ tablespoons peanut oil
500 g beef steak (e.g. scotch, rump, sirloin, cut into bite-sized pieces)
500 g boneless skinless chicken thighs (cut into bite-sized pieces)
30 bamboo skewers (soaked in water)
2 stalks lemongrass (chopped)
3 cm ginger piece (peeled and chopped)
½ teaspoon cumin (ground)
½ teaspoon ground coriander
1-2 tablespoons chilli paste
2 tablespoons oil (e.g. peanut, canola or soy)
150 g roasted peanuts (coarsely ground)
½ cup water
3-4 tablespoons tamarind juice* (or lemon juice)
2-3 tablespoons brown sugar
soy sauce to taste (GF if required)
1 telegraph cucumber (cut into 3cm chunks)
1 red onion (cut into small 1-2cm chunks)

Steps:

  • Place all marinade ingredients in a food processor and blend until a smooth paste. Combine with chicken and beef pieces (in separate bowls) and leave to marinate in the fridge for at least 1 hour or up to overnight.
  • Thread marinated beef and chicken onto bamboo skewers and set aside until ready to cook.
  • To make the peanut sauce, combine lemongrass, ginger, cumin, coriander and chili paste in a food processor and blend until smooth. Heat oil in a wok and fry the spice paste for a few minutes until fragrant. Add ground peanuts, water, tamarind juice, and sugar. Season with salt and simmer until thick, about 5 minutes.
  • Cook beef and chicken satay on a preheated barbeque or grill plate until cooked through, about 3 minutes each side.
  • Serve satay with peanut sauce, cucumber and red onion.

1 large red onion, chopped
2 large garlic cloves, chopped
3 stalks lemon grass, chopped
½ cup soy sauce
1 tablespoon peanut oil
1 tablespoon ground turmeric
1 ½ teaspoons brown sugar
1 teaspoon ground cumin
1 teaspoon ground ginger
salt and black pepper to taste
1 pound skinless, boneless chicken breast halves - pounded thin
12 wooden or bamboo skewers

Steps:

  • In a large nonreactive bowl, stir together the onion, garlic, lemon grass, soy sauce, peanut oil, turmeric, brown sugar, cumin, ginger, salt, and pepper. Reserve about 2 tablespoons of marinade in a small bowl, and refrigerate until cooking time. Mix the chicken breasts into the remaining marinade, stir to coat well, and marinate in refrigerator overnight.
  • About 30 minutes before serving, soak the skewers in water. Preheat an outdoor grill for high heat, and lightly oil the grate.
  • Remove the chicken breasts from the bowl, and discard the used marinade. Cut each chicken breast on the diagonal into 6 long strips, and thread a chicken strip onto one of the soaked skewers. Grill the skewers, turning frequently and basting with the reserved marinade, until the chicken is cooked through with brown, crispy edges, 5 to 8 minutes per skewer.

3 3 3 shallots, minced
2 2 to 6 lemon grass, trimmed to bottom 6 inches and minced
2 2 2 tablespoons grated fresh ginger
1 1/2 1 1/2 1/2 teaspoons ground coriander
3/4 3/4 3/4 teaspoon red pepper flakes
1/2 1/2 1/2 teaspoon ground cumin
1/2 1/2 1/2 teaspoon salt

2 2 2 tablespoons vegetable oil
2 2 2 tablespoons packed dark brown sugar
1 1 1 tablespoon fish sauce
1 1 1/2- to 1 3/4-pound) 1/4- 3/4-pound) flank steak, halved lengthwise, then sliced on slight angle against grain into 1/4- inch thick slices

  • Instructions 1. FOR THE BASTING SAUCE: Whisk all ingredients together in bowl. Reserve one-third of sauce in separate bowl. (Use reserved sauce to apply to raw beef.) 2. FOR THE BEEF: Whisk oil, sugar, and fish sauce together in medium bowl. Toss beef with marinade and let stand at room temperature for 30 minutes. Weave beef onto 12-inch metal skewers, 2 pieces per skewer, leaving 1 1/2 inches at top and bottom of skewer exposed. You should have 10 to 12 skewers. 3a. FOR A CHARCOAL GRILL: Poke twelve 1/2-inch holes in bottom of roasting pan. Open bottom vent completely and place roasting pan in center of grill. Light large chimney starter mounded with charcoal briquettes (7 quarts). When top coals are partially covered with ash, pour into roasting pan. Set cooking grate over coals with grates parallel to long side of roasting pan, cover, and open lid vent completely. Heat grill until hot, about 5 minutes. 3b. FOR A GAS GRILL: Turn all burners to high, cover, and heat grill until very hot, about 15 minutes. Leave all burners on high. 4. Clean and oil cooking grate. When buying lemon grass, look for green (not brown) stalks that are firm and fragrant. 1. Trim dry leafy top (this part is usually green) and tough bottom of each stalk. 2. Peel and discard dry outer layer until moist, tender inner stalk is exposed. 3. Smash peeled stalk with bottom of heavy saucepan to release maximum flavor from fibrous stalk.

DELICIOUS CHICKEN SATAY (GRILLED OR BROILED)

This can be made on the outdoor grill or under the broiler. It's even a great recipe to make on the George Foreman grill! I have made this recipe many times for get togethers. Everyone loves it and wants the recipe for it! This satay has just the right amount of spice blend. It's even mild enough for kids, but if you want to turn up the heat just add in 2 or more teaspoons red pepper flakes.! You will LOVE this satay, I promise. Serve this with grilled onions, mushrooms and bell peppers YUMMM! Remember to soak your wooden skewers for a minimum of 30 minutes in cold water before threading on the meat. Plan ahead the chicken needs to marinate for 24 hours!

1 small onion, finely chopped
1 garlic clove, crushed
1 inch gingerroot, peeled and grated
2 tablespoons soy sauce
2 teaspoons chili powder
1 teaspoon ground coriander
2 teaspoons dark brown sugar
1 tablespoon lemon juice or 1 tablespoon lime juice
1 tablespoon vegetable oil
1 1/4 cups coconut milk
1/3 cup crunchy peanut butter
1 tablespoon fish sauce
1 teaspoon lemon juice or 1 teaspoon lime juice

Steps:

  • Using a sharp knife, trim any fat from chicken, then cut into 3" strips.
  • For marinade, place onion, garlic, ginger, soy, shili powder, coriander, brown sugar lemon juice and vegetable oil in a zip top bag and mix well. Add chicken strips and mix in marinade until well coated. Put in refrigerator for 2 hours and up to overnight.
  • Remove meat from marinade and thread the strips accordion style onto pre-soaked wooden skewers.
  • Broil the skewers for 8-10 minutes, turning and brushing occasionally with the marinade until cooked through.
  • Meanwhile, make sauce.
  • Mix coconut milk with peanut butter, fish sauce, and lemon juice in saucepan. Bring to a boil and cook for 3 minutes.
