BARBECUED CORN ON THE COB

Barbecued corn on the cob image

Use our easy method for barbecued corn on the cob and upgrade this classic barbecue staple with our simple, brush-on chilli butter flavouring

Provided by Sarah Cook

Categories     Side dish

Time 50m

Number Of Ingredients 6

100g butter , at room temperature
1 tbsp runny honey
1 tbsp tomato ketchup
2 fat garlic cloves , crushed
2 tbsp harissa
6 corn cobs (cut into two if you have more than 6 guests)

Steps:

  • Mash together the butter, honey, ketchup, garlic and some seasoning, beating until quite smooth. At this point, if you are also cooking for children, split the mix into two serving bowls, before stirring the harissa into just one bowl. Add a pastry brush to each butter mix.
  • Wrap each corn cob in a double layer of foil. Barbecue, turning, for 30-35 mins until tender and a little charred. If you want them more blackened, simply unwrap and throw directly on the barbecue for a few more mins.
  • Pile onto plates and let everyone butter their own.

HOW TO MAKE SPICY CORN RIBS (CORN 'RIBLETS')

How To Make Spicy Corn Ribs (corn 'riblets') image

How to make corn ribs at home; a simple, flavorful corn side dish chopped, seasoned, and baked to crispy, tender perfection. Plus, these corn riblets can be cooked in an air fryer, oven, or even shallow fried.

Provided by Samira

Categories     Appetizer     Side

Time 20m

Number Of Ingredients 7

2 corn on cob
1 tbsp olive oil (or another oil, like avocado oil)
1/2 tsp salt
1/2 tsp garlic powder
1/2 tsp paprika (smoked)
1/4 tsp pepper
1/4 tsp onion powder (optional)

Steps:

  • I've tried various methods for this and found the best way to cut the corn is to stand it up vertically with the wider part against the table, and chop in half, then chop those halves into quarters.Doing it vertically removes the risk of squashing any of the kernels and it rolling away as you chop.If you're nervous, then I suggest chopping the cob in half, so you'll end up with 8 pieces per cob. The cob being shorter to cut through means more leverage on the counter surface and less risk of accidents.
  • Prepare the seasoning by combining all of the spices and oil in a small bowl and mixing well. Then brush the seasoning over the chopped corn.
  • Lay the corn ribs in a single layer in your air fryer basket, with a little space between each so the air can flow.
  • Cook the corn in an Air Fryer at 375ºF/190ºC for 12-15 minutes, optionally flipping them over at 7 minutes. If you prefer crispier results, then cook for the longest time (I did 15).
  • Lay the seasoned corn on a parchment-lined baking tray and bake in a preheated oven at 375ºF/190ºC for between 25-30 minutes.
  • The oven-baked corn doesn't curl as quickly/easily as air-fried- this is normal. You may want to increase the time slightly if you want them super crispy and curly.
  • If you plan to fry the corn, then don't season them first - add the plain chopped corn to the oil.Add around 1cm (or 1/2-inch) of cooking oil to a wide, thick-bottomed pan/wok.
  • When the oil begins to smoke, add the corn ribs, occasionally turning until the ribs are crispy, golden, and curled up.
  • Remove the corn riblets carefully from the oil and lay them on kitchen paper to drain. I like to use a second piece to blot the top of the corn too.
  • Then gently toss the corn with the dry seasoning mixture (no oil required).
  • Meanwhile, as the sweetcorn cooks, prepare the chili mayo and garnishes. Once baked, top and serve!

BEST-EVER GRILLED RIBS

Best-Ever Grilled Ribs image

Grilled BBQ ribs might sound intimidating, but they're actually so easy to make. There's no pre-cooking required and they come out smoky and flavorful every time.

Categories     dinner     grilled     meat

Time 2h15m

Yield 6-8 servings

Number Of Ingredients 12

1/4 c. light brown sugar
2 tbsp. smoked paprika
1 1/2 tsp. onion powder
1 1/2 tsp. garlic powder
1 1/2 tsp. kosher salt
1 tsp. ground black pepper
1/2 tsp. ground cayenne pepper (optional)
2 racks baby back ribs (about 5 to 6 pounds total)
3 tbsp. vegetable oil, plus more for oiling the grates
1/2 c. chicken stock
1/4 c. apple cider vinegar
1 1/2 c. BBQ sauce

Steps:

  • Preheat a grill (charcoal or gas) to 300˚, with the coals or flames only under one half of the grill.
  • For the spice rub: In a small bowl, mix the brown sugar, smoked paprika, onion powder, garlic powder, salt, black pepper and cayenne (if using) to combine.
  • Place the rack of ribs on a large sheet tray and remove the membrane from the underside of the ribs. Rub the vegetable oil all over both sides of the ribs, then sprinkle evenly with the spice rub.
  • Place the ribs on the sheet tray, with the curves of the bones facing down. Add the chicken stock and vinegar to the tray. Wrap the tray tightly with aluminum foil and place on the grill over the side with no coals/flame. Cook over indirect heat until the internal temperature of the ribs reads 180˚ to 190˚, about 80 to 90 minutes.
  • Increase the grill temperature to 375˚ and oil the grill grates well. Transfer the ribs directly over the grill grates and brush the tops with the BBQ sauce. Cover and cook for 5 minutes. Carefully turn the ribs over and baste the other side with the BBQ sauce. Cover again and cook for an additional 5 minutes. Continue basting and turning the ribs until the BBQ sauce has created a sticky coating and the ribs are charred in spots, 10 to 20 minutes longer.
  • Transfer the ribs to a cutting board, cut into pieces and serve.

GRILLED BARBECUED CORN RIBS

Grilled Barbecued Corn Ribs image

Fresh, sweet summer corn gets the full barbecue treatment in this recipe for corn ribs. Seasoned with a spicy sweet dry rub and brushed with a tangy barbecue sauce, the corn develops a delicious caramelized crust as it curls into a perfectly juicy rib. You'll need a sharp knife and a steady hand to cut through the hard cobs; make sure you have a large, sturdy work surface and take your time.

Provided by Food Network Kitchen

Categories     main-dish

Time 55m

Yield 4 to 6 servings

Number Of Ingredients 14

2 tablespoons chili powder
1 teaspoon smoked paprika
1 teaspoon packed light brown sugar
1/4 teaspoon cayenne pepper
Kosher salt
1 cup ketchup
1 cup apple cider vinegar
1/4 cup yellow mustard
3 tablespoons packed light brown sugar
1/2 teaspoon hot sauce
Kosher salt
4 ears corn, shucked
Canola or vegetable oil, for the grill grates
1 scallion, thinly sliced

Steps:

  • For the BBQ seasoning blend: Stir to combine the chili powder, smoked paprika, brown sugar, cayenne pepper and 1 teaspoon salt in a small bowl.
  • For the BBQ sauce: Whisk together the ketchup, apple cider vinegar, mustard, brown sugar, hot sauce, 1 teaspoon salt and 1 tablespoon of the BBQ seasoning blend in a small saucepan over medium-high heat. Bring to a boil, then reduce the heat to medium and simmer until the sauce has reduced and thickened, 10 to 12 minutes.
  • For the corn ribs: Using a large chef's knife and a large steady cutting board, cut off the ends of the corn cobs to make them flat. Using your hands, break the cobs in half crosswise. Stand a cob on one flat end and carefully and slowly cut down through the core, rocking the knife back and forth if necessary, to split the cob in half lengthwise. Repeat with all the cobs. Lay a split corn cob on its flat side on the cutting board and cut lengthwise through the cob, pressing down and rocking the knife back and forth if necessary, to make 2 long corn ribs. Repeat with the remaining cob halves. (You should have 32 ribs total.) Place on a rimmed baking sheet and set aside.
  • Prepare a grill for medium-high heat and lightly oil the grates. Sprinkle the corn ribs with 1 tablespoon of the seasoning blend. Brush the ribs with 1/2 cup BBQ sauce.
  • Place the corn, cut-side down, on the grill and close the lid. Cook until the cut edges are beginning to char and caramelize, about 8 minutes. Flip the ribs to the second cut side, close the grill lid and cook until the edges are caramelized and the corn kernels are crisp-tender, another 6 to 8 minutes.
  • Transfer the corn to a platter. Brush with more sauce and season with a pinch of the BBQ seasoning blend (reserve the remaining blend for another use). Sprinkle with the scallions and serve with the remaining BBQ sauce.

  • Prep the meat. Most store-bought ribs have what’s known as silverskin, a membrane over the underside of the ribs. Sometimes, if you’re lucky, your butcher will remove it for you.
  • Make the marinade. Pork is tasty as is, but marinating before cooking ribs on a charcoal grill enhances the flavor. It adds a deep savoriness that makes the meat more satisfying and delicious.
  • Treat the meat to a spice rub. Trust us: You want to add the spice rub. Like making the marinade, it’s simple to prep, just tossing some ingredients together in a bowl.
  • Grill. Here’s the real secret to how to cook ribs: Cook them over indirect flames, and give them time. This lets the connective tissue melt away, leaving you with perfectly tender, toothsome ribs.
  • Test for doneness. We’ve all heard the old saying: Ribs should “fall off the bone.” But should your ribs really fall off the bone? Our Test Kitchen experts say no. We can all agree that chewy ribs are no fun, but if the meat is literally falling off the bones, then the ribs are overcooked and might be dry.
  • Let Rest and Enjoy. By now, you’ve certainly built up an appetite. After letting your ribs rest for 10-15 minutes, you’ll want to split them up into manageable portions.
