GRILLED BARBECUE PORK BITES
Try this bite-sized, grill-friendly barbecue pork appetizer plus creamy dipping sauce, sure to be gone in a flash. It'll work indoors on the broiler, too.

Steps:
- Cut pork into 32 (1-inch) pieces; place in medium bowl. In small bowl, mix chili powder, cumin, brown sugar, garlic powder and red pepper. Reserve 2 teaspoons spice mixture; sprinkle remaining mixture over pork pieces; stir to coat completely. Let stand 15 minutes.
- In small bowl, mix mayonnaise, mustard, reserved 2 teaspoons spice mixture and the onion; set aside.
- Heat gas or charcoal grill. Spray grill basket (grill "wok') with cooking spray. Spoon pork into basket.
- Place basket on grill. Cover grill; cook over medium heat 10 to 12 minutes, shaking basket or stirring pork once or twice, until pork is no longer pink in center. Serve with toothpicks and mayonnaise mixture for dipping.

- Heat coals or gas grill for direct heat. Spray half of one side of four 18x12-inch sheets of heavy-duty aluminum foil with cooking spray.
- Mix barbecue sauce, honey and cumin in small bowl. Place 1 pork chop, 3 pieces corn, 1/4 cup carrots and 1/2 cup potato wedges on center of each sprayed foil sheet; sprinkle with 1/4 teaspoon salt. Spoon 3 tablespoons sauce mixture over pork and vegetables on each sheet.
- Fold foil over pork and vegetables so edges meet. Seal edges, making tight 1/2-inch fold; fold again. Allow space on sides for circulation and expansion.
- Grill packets 4 to 6 inches from medium heat 15 to 20 minutes, turning once, until pork is slightly pink in center. Place packets on plates. Cut large X across top of each packet; fold back foil.

- 1. Place the pork belly in a large slow cooker. Add the chicken and beef broth, covering the belly; add cool water, if necessary. Add the rest of the ingredients to the cooker. 2. Set the slow cooker to high heat, and cook for 3 hours or so, watching to be sure not to overcook. You don't want it falling apart when you remove it! Once done, remove the belly and allow it to come to room temperature. You can remove the layer of skin on the bottom if you like. (I like to keep it on, as it adds significantly to the flavor experience.) 3. Time to get the grill going. Get the coals gray/white hot, spread out evenly, to medium-high heat. Place your grate on the top setting above the coals for grilling. 4. Place a bit of oil or butter onto the meat side of the belly, dust it with a bit of your favorite seasoning and lay it meat side down on the grill. Immediately cover the grill. Cook the belly for S minutes, then turn it 90°F. This will create the perfect grill marks. Grill for another 3-4 minutes. Remove from the grill, place on a cutting board and cut into bite-size morsels. Serve on crostinis, if desired.
CRISPY DEEP-FRIED PORK BELLY RECIPE

- Cut the pork belly into 1x6-inch strips.
- Heat a pot of water until boiling, then add salt and vinegar.
- Add the pork belly and boil it for 10 minutes.
- Remove and drain the water well.
- Heat oil to 284 degrees F in a deep-fryer or large wok.
- Fry the meat for about 8 to 10 minutes until lightly browned.
- Remove and drain.
- Raise the heat in the oil to 338 degrees F.
- Add the partially fried pieces of meat.
- Fry for about 2 to 3 minutes until crispy brown.
- Let cool completely before cutting.
- Serve and enjoy.

- If your ribs have a silverskin (some butchers remove it before you purchase), you will need to remove it. There are tons of tutorials and advice on how to do this. This is one of my favorites.
- In a small bowl, combine the brown sugar, salt, pepper, garlic powder, onion powder, paprika, chili powder and cayenne pepper. Rub the blended mixture on both sides of your pork ribs. Cover and refrigerate at the very least 2 hours but overnight is best.
- Preheat your oven 250 degrees F. In a large roasting pan, combine the chicken broth, cider vinegar, olive oil, minced garlic and soy sauce. Add the pork ribs to the roasting pan.

- Prepare your pizza dough. When it has just 5-10 minutes of rising left, preheat outdoor bbq grill to medium-high heat. Place all other prepped ingredients on a tray so they’re ready to go and easily accessible.
- Divide dough into 4-6 pieces. Roll out each piece on a floured surface to about 1/3 of an inch thick. Lightly brush with oil.
- Make sure grill grates are clean, and lightly grease them. (Tip: An easy way to grease grill grates is to dip a few folded paper towels in vegetable oil and use a pair of tongs to hold them and lightly rub them along grill grates.) Place dough oil-side down on grill. Lower heat just a bit and close the lid. Cook for a few minutes, checking for the dough to look puffed, and golden brown on the bottom. Lightly brush top side of dough and flip.
- Immediately drizzle top of pizzas with bbq sauce and spread out evenly. Sprinkle with cheeses, pork, red onion, and pineapple. Close BBQ lid and cook for a few more minutes until crust is cooked and toppings are melted and bubbly and then sprinkle on cilantro or parsley. If bottom crust is getting too done, place on top rack, or turn off heat directly under pizza to let center of dough and toppings continue to cook. If needed, you can always pop pizzas under the broiler to brown tops.

- Make the white BBQ sauce by combining the mayonnaise, mustard, horseradish, garlic, vinegar,black pepper, salt, and paprika in a medium bowl. Set aside.
- Use paper towels to dry the tenderloins off and trim away excess fat and silverskin if present. Place the tenderloins in a gallon ziptop bag and add about half of the white BBQ sauce. Seal and toss to coat. Refrigerate for at least 4 hours or overnight. Cover remaining sauce and refrigerate.
- When ready to cook, allow the pork to warm to room temperature so it will cook evenly. Preheat the grill over medium high heat. - Remove from the grill and tent with foil. Allow to rest for about 5 minutes. Slice and serve with remaining white BBQ sauce.
