30 pitted green olives
10 slices bacon, cut into thirds

Steps:

  • Wrap each olive with a piece of bacon and secure with a toothpick.
  • Preheat a grill for medium heat. When hot, lightly oil the grate.
  • Grill the olives until the bacon has crisped, about 10 minutes. Turn frequently and keep a spray bottle handy in case of flare-ups from the bacon grease. Remove to a paper towel lined plate to absorb any excess grease.

1/2 teaspoon cayenne pepper
1/2 teaspoon cumin
1/2 teaspoon onion powder
1/2 teaspoon citrus lemon pepper
1 teaspoon garlic
1 tablespoon Worcestershire sauce
1 tablespoon fresh squeezed lemon juice
4 tablespoons butter, melted
9 slices bacon
18 prawns
18 wooden skewers, soaked in water for at least 15 min

Steps:

  • Combine butter and spices, add shrimp, stirring to coat the shrimp. Let shrimp marinate for 1 to 2 hours.
  • Slice bacon in half and cook over medium high heat to render out some fat, keeping bacon flexible. Drain the bacon and pat grease out with a paper towel.
  • Wrap each piece of shrimp with a piece of bacon. Slide on to skewers. If you use wooden skewers, the skewers need to be soaked in water for about 15 minute in water or use metal ones.
  • Grill on a hot grill until shrimp are opaque. Use remainder of marinade when turning the shrimp.

4 whole fish, about 1 pound each, cleaned
Salt and pepper
1 cup fresh herbs such as thyme, tarragon, marjoram, etc.
1 tablespoon olive oil

Steps:

  • Rinse fish and pat dry. Season to taste inside and out. Place fresh herbs inside cavity of fish. Lightly oil both sides of fish. Wrap seasoned, oiled fish with pancetta that is thinly sliced and unrolled. Wrap fish loosely with the pancetta leaving head and tail exposed.
  • Set fish in center of cooking grate. Cover grill. Cook until opaque, but still moist in thickest part (10 to 15 minutes). Turn once during cooking. Remove from grill. Peel off top layer of skin. Slide fish onto platter. To serve slide a wide metal spatula between flesh and bones, and lift out each portion.

Olive oil, for brushing
2 whole Great Lakes whitefish or striped bass (about 3 pounds each), cleaned
Coarse salt and freshly ground pepper
4 lemons (3 cut into 1/4-inch-thick rounds; 1 cut into 1-inch pieces, for serving)
1 bunch fresh thyme, plus sprigs for garnish
20 strips bacon (about 1 pound)

Steps:

  • Preheat grill to high (if using a charcoal grill, the coals are ready when you can hold your hand 5 inches above grill for just 2 seconds). Brush 2 large fish-grilling baskets with oil. Using a sharp knife, make diagonal slits (in serving-size portions) along both sides of fish. Season both sides with salt and pepper. Reserve 6 to 8 lemon rounds and a few sprigs of thyme; place remaining lemon rounds and thyme inside fish cavities.
  • On a large cutting board, lay 2 bacon slices end to end, slightly overlapping; repeat with 6 more slices, laying pairs parallel to one another, 1 inch apart. Center 1 bacon slice at top and bottom, 1 inch apart from and parallel to overlapping slices. Lay fish over bacon, placing head and tail on single slices. Wrap fish in bacon, and secure with toothpicks. Tuck a few reserved thyme sprigs under bacon. Place fish in basket. Repeat with remaining fish, bacon, and thyme.
  • Grill fish, covered, turning once, until opaque throughout, about 10 minutes per side. Transfer to a platter. Grill reserved lemon rounds until lightly charred. Garnish fish with thyme, grilled lemon slices, and lemon pieces.

We love the zippy flavor using jalapenos and cilantro to grilled whitefish. I use a fish rack with handle on the grill, some may want to use a drip pan, others might want to place fish on a greased piece of foil and others may want to plop these right on the grill rack....whatever! I have also broiled these, but there's nothing like the flavor of things when grilled! I serve this with a Mango Salsa Ole, Recipe #235769 on the side and a lettuce salad using a ginger-flavored vinagarette.

1/2 cup lime juice
2 green onions, sliced thin with green tops
2 tablespoons vegetable oil
2 jalapeno peppers, seeded and chopped
1 teaspoon salt
1/2 teaspoon pepper
4 (6 -8 ounce) halibut steaks (6-8 oz. ea.)
8 slices bacon

Steps:

  • In ziplock bag combine lime juice, green onions, oil, cilantro,jalapeno, salt and pepper.
  • Add haliut steaks, seal, and turn to coat. Refrigerate for 15 minutes, turning once.
  • Meanwhile, fry bacon until cooked but not crisp. Drain on paper towels.
  • Remove halibut when marinated, discarding marinade.
  • Wrap two slices of bacon over top and sides of each steak and secure with soaked wooden toothpicks.
  • Spray nonstick cooking spray on grill racks before heating. Place halibut, bacon side down, on grill rack with drip pan underneath rack to catch any bacon drippings.
  • Grill covered over medium heat for 4-5 minutes on each side or until fish flakes easily with a fork.
  • Discard toothpicks, serve and enjoy!

1 pound (500g) fresh cod fillet
Sea salt and freshly ground black pepper
3 ounces (90g) thinly sliced slab bacon, rind removed
1 tablespoon extra-virgin olive oil
For the sauce:
1/2 cup fresh flat-leaf parsley leaves
1 shallot
1/4 cup extra-virgin olive oil
3 tablespoons capers

Steps:

  • 1. Season the cod all over lightly with salt and pepper. Roll or fold the cod so that it looks like a small roast, and wrap the bacon around it, securing the pieces of bacon with a skewer or toothpick, so the cod is almost completely covered with the bacon (except at the "corners").
  • 2. In a heavy-bottomed skillet, heat the olive oil over medium heat. When the oil is hot, add the fish and brown it on all sides, which will take about 6 minutes. Cover the skillet and continue cooking the cod until it is cooked through, about 16 minutes, turning it occasionally so it doesn't burn.
  • 3. While the cod is cooking, make the sauce. Mince together the parsley and the shallot and place in a small bowl. Whisk in the oil. Coarsely chop the capers and whisk them into the sauce.
  • 4. When the fish is cooked, transfer it to a warmed serving platter and let it sit for about 4 minutes. Remove the skewers or the toothpicks and drain away any liquid that comes from the fish. Pour the sauce over the fish and serve.

2 tablespoons sesame oil
2 tablespoons chili sauce
8 slices bacon
1 leek, chopped
1 ounce enoki mushrooms

Steps:

  • Preheat an outdoor grill for high heat. Soak some toothpicks in water while the grill heats up.
  • Spread a thin layer of sesame oil and chili sauce onto one side of each fish fillet. At one end, place some of the leek and a couple of mushrooms. Roll towards the other end. Wrap each roll with a slice of bacon, and secure with two toothpicks.
  • Place on the preheated grill, and cook covered for 5 minutes. Be careful of flare-ups from the bacon grease. Turn over, and cook for 5 more minutes, until bacon is crisp and fish flakes easily.

3 bulbs fennel, fronds separated, bulbs cut through core into 1-inch wedges
2 teaspoons whole black peppercorns
2 teaspoons whole pink peppercorns (available at penzeys.com)
4 cloves garlic, peeled
1/2 cup packed fresh flatleaf parsley leaves
1/4 cup extra-virgin olive oil, plus more for brushing
1 whole striped bass or snapper (3 3/4 to 4 pounds), cleaned
2 cups mixed herb sprigs and other aromatic greens, such as mint, celery leaves, oregano, and parsley (optional)
Coarse salt and freshly ground pepper
12 habanero or other colorful chiles, for serving (optional)
Lemon slices, for serving
Grilled Potatoes, for serving
Mixed Herb Sauce, for serving

Steps:

  • Using a mortar and pestle, crush 1/2 cup fennel fronds, black and pink peppercorns, garlic, and parsley to a paste. (Or pulse in a food processor.) Stir in 2 tablespoons oil. Rub mixture over fish, inside and out; stuff fish with more fennel fronds, herb sprigs, and greens. Cover with plastic wrap; let stand 30 minutes.
  • Preheat grill to medium. Season fish generously with salt and pepper. Brush a fish-grilling basket with oil; place fish inside and secure. Grill, covered, turning once, until fish is opaque and flakes when tested with the tip of a knife, 20 to 25 minutes.
  • Meanwhile, toss fennel bulbs and chiles in a bowl with salt and remaining 2 tablespoons oil. Grill until fennel and chiles are lightly marked and tender (if they start to burn, shift to a cooler area of grill). Arrange fish on a platter; surround with lemon, potatoes, fennel, and chiles (chiles should be eaten with caution). Drizzle with herb sauce; serve immediately.
