GRILLED BACON-WRAPPED DATES
These bacon-wrapped dates are stuffed with manchego and almonds and grilled to perfection.

Steps:
- Prepare an outdoor grill for medium indirect heat.
- Slice into the dates lengthwise, just deep enough so that you can pull out the pits with your fingers. Discard the pits. Fill each date with a piece of cheese and an almond. Wrap a slice of bacon around each date, trim all but an inch of overlap and secure with a toothpick. Season with salt and black pepper.
- Grill, on the indirect side, flipping occasionally, until the bacon is cooked through and crispy, about 10 minutes. Transfer to a platter. Serve warm or at room temperature.
BACON-WRAPPED DATES

- Preheat the oven to 400 degrees F.
- Slice the dates lengthwise three-quarters of the way down. In a small bowl, press the cream into the blue cheese with a fork. Press a small scoop of the blue cheese into the center of the dates and close them back up. Cut each piece of bacon in half. Wrap each halved bacon strip around a date. Secure with a toothpick.
- Place the bacon-wrapped dates on a baking sheet. Bake until the bacon is crisp, 15 to 20 minutes.
BACON-WRAPPED DATES
A bacon-wrapped date is sweet, smoky, squidgy and crisp, all in one bite-size package. The trick is getting the bacon to cook before the date burns, and you can do that by starting in a cold oven so that the bacon slowly renders its fat and evenly crisps. While this appetizer was en vogue in the 1970s and 1980s, it has never gone out of style. In fact, it dates back to Victorian England, when bacon-wrapped oysters or prunes (also known as angels or devils on horseback) were eaten before or after a meal. ("Horseback" referred to their being served on toast.) Sometimes the prunes were soaked in tea or liqueur, and stuffed with chutney, cheese, or nuts. You can do the same if you like.

Steps:
- Using scissors, cut each slice of bacon in half crosswise at a diagonal, like cutting ribbon. (This will help secure the bacon to the date.) Starting at the straight end of the bacon, roll the bacon around the dates. Tuck the point under the wrapped bacon to secure. Place seam side down on a baking sheet.
- Place in the oven, and heat the oven to 400 degrees. Cook for 10 minutes, then flip and cook until golden brown all over, another 5 to 15 minutes, depending on the thickness of your bacon.
- Season with black pepper (if desired), then transfer to a paper towel-lined plate to crisp and cool slightly.

GRILLED BACON WRAPPED DATES WITH SMOKED HONEY

- Preheat grill for indirect heat or two zone grilling using lump charcoal. Target 375 to 400 degrees Fahrenheit.
- If dates are not pitted, use a paring knife and insert a small vertical slice along the date and remove the pit.
- Cut up the goat cheese in small rounds (about 1/2 teaspoon worth) and place into the pitted dates. Put just enough so that the dates can still close around the cheese.
- Using the half slice of room temperature bacon, place the date with the sliced side down on one end of the bacon. Roll the date tightly so the bacon wraps around the date. Room temperature bacon will seal without the need for a toothpick or skewer. If using cold bacon you will need to use a toothpick to hold the bacon in place. Place on a sheet pan until you grill.

- Use thumbs to spread slit in pitted date and use a small spoon or butter knife to fill pocket with 1 to 2 teaspoons cheese. If desired, press whole almond or whole pecan into cheese. Squeeze date sides to enclose filling. Repeat with remaining dates.
