GRILLED YELLOW SQUASH

Grilled Yellow Squash image

This is a tasty way to use up all the yellow squash you have pouring out of your garden every summer. I also do this same thing with zucchini.

Provided by Sarah Stephan

Categories     Side Dish     Vegetables     Squash     Summer Squash

Time 30m

Yield 8

Number Of Ingredients 4

4 medium yellow squash
½ cup extra virgin olive oil
2 cloves garlic, crushed
salt and pepper to taste

Steps:

  • Preheat the grill for medium heat.
  • Cut the squash horizontally into 1/4 inch to 1/2 inch thick slices so that you have nice long strips that won't fall through the grill.
  • Heat olive oil in a small pan, and add garlic cloves. Cook over medium heat until the garlic starts to sizzle and become fragrant. Brush the slices of squash with the garlic oil, and season with salt and pepper.
  • Grill squash slices for 5 to 10 minutes per side, until they reach the desired tenderness. Brush with additional garlic oil, and turn occasionally to prevent sticking or burning.

STUFFED SUMMER SQUASH

Stuffed Summer Squash image

This time of year the markets are filled with an array of fresh vegetables. I love to browse through the bins to decide which ones alert my taste buds. We particular love the big, yellow squash with it's bright color and curved shape. Perfect for stuffing! They make a delectable side dish served with grilled fish or chicken. I hope you enjoy this recipe as it is colorful as well as full of flavor.

Categories     Vegetables

Number Of Ingredients 15

3 - medium to large yellow squash
1/2 cup(s) green onions, chopped
1/4 cup(s) onion, chopped
1/2 cup(s) cooked and crumbled bacon
1/2 cup(s) green/red peppers, chopped
1 teaspoon(s) minced garlic
1/4 teaspoon(s) basil or sweet basil
3 tablespoon(s) brown sugar
14.5 oz can(s) italian or cajun stewed tomatoes, chopped
3 tablespoon(s) parmesan cheese
2 tablespoon(s) bacon drippings
4 tablespoon(s) butter
1/4 cup(s) toasted bread crumbs
- salt and pepper to taste
11 oz can(s) creamed style corn or kernel corn (optional)

Steps:

  • Wash and cut off ends of squash. Split down the middle lengthwise. Core out centers with a small scoop or spoon and set aside. Place split squash in a buttered casserole dish (or sprayed with nonstick spray). Mash up pulp from squash with a fork or chopper.
  • Melt 2 tbs. butter in a skillet; saute the squash pulp, garlic, onion, green pepper, basil, 1/4 cup of the green onions, salt and pepper until tender; add more butter or olive oil if needed. Add the corn. Add to the mixture enough bread crumbs to thicken the mixture; add parmesan cheese.
  • Drizzle some bacon drippings over split squash in baking dish. Add sauted mixture to center of each squash. Drizzle with the remaining 2 tbs. melted butter. Pour the chopped, stewed tomatoes over squash. Sprinkle the squash with the brown sugar. Add crumbled bacon and remaining green onions.
  • Bake in 350 degree oven approximately 45 minutes or until squash is tender. Serves 6.

GRILLED & STUFFED SQUASH

Grilled & Stuffed Squash image

This is a lovely meatless option for the grill. Light and fresh, it still serves up a super-satisfying flavor. Next time I'm thinking about adding chopped jalapenos too... yum!

Categories     Vegetable Appetizers

Time 50m

Number Of Ingredients 9

2 yellow crooked neck squash
1/2 stick butter
1 c cubed velveeta cheese (or shredded cheddar cheese)
1/2 medium sized onion, diced
1 large tomato, diced
2 clove garlic, finely chopped
1 c diced vegetable of your choice (i use zucchini or squash)
cilantro and other fresh herbs (i.e. basil, oregano, thyme)
you can cook this dish in the oven at 425 for 35-45 mins, or try it in the microwave (cook on high for 6 mins, let it sit for a couple of minutes, then microwave again for 6 minutes (for a dish of 4 halves).

Steps:

  • 1. Slice the ends off the squash and cut them down the center lengthwise so there are two halves. Scoop out the seeds, making a well for the stuffing ingredients.
  • 2. Cut up and mix together all the remaining ingredients (excluding the butter) in a bowl and salt & pepper the mixture to taste.
  • 3. Place the squash on a large piece of aluminum foil and fill the center of each squash half with the mixture, then dot each one with butter. Sprinkle herbs and a bit of salt & pepper over the top of squash and cover loosely with foil (so the cheese doesn't stick to the foil).
  • 4. Place the stuffed squash on the grill for around 20-30 minutes. You want the squash to be cooked well and the cheese & butter melted. Serve and enjoy!

SAVORY SUMMER SQUASH WITH BACON

Savory Summer Squash with Bacon image

I love squash but wanted a new recipe with fewer calories. I did a search on flavorful ingredients and came up with a bunch of pasta recipes. So I thought, why not substitute yellow squash for pasta? And it worked! All the ingredients can be prepared in advance and refrigerated until ready to cook. Long, slender young squash make for the best texture.
