- Rinse 2 bunches of asparagus and break off the ends by holding the base end and snapping it wherever it snaps.
- Place asparagus in a large rimmed baking sheet, drizzle with olive oil and season with salt and pepper. Roll asparagus lightly to coat in oil and seasonings.
- Squeeze 1/2 of a lemon evenly over the asparagus. Line the top third of the asparagus with lemon slices from the second half of your lemon. Thinly slice 4 tbsp of butter and line the center of the asparagus with butter.
- Bake at 400°F for 10 minutes or until asparagus is tender. Remove asparagus from the oven and set oven to Broil.
- Sprinkle the center of the asparagus with Parmesan cheese then return to the center of the oven and broil 2-3 minutes or until cheese is melted and golden.

- Preheat outdoor grill for medium heat.
- Using a double thickness of aluminum foil, make a tray with raised sides to hold the asparagus. You can also use a small baking pan with sides, just make sure you don't mind putting it on the grill. Drizzle the aluminum tray or baking pan with a bit of olive oil.
- Place the asparagus on the pan in a single layer. Drizzle with another tablespoon or so of olive oil, then sprinkle with garlic salt and pepper.

GRILLED ASPARAGUS WITH LEMON AND OLIVE OIL

- Preheat the grill to medium.
- In a shallow baking dish, toss the asparagus with the oil to coat well. Add the salt, and pepper and toss.
- Place the asparagus on the grill in a single layer, and cook, turning, until marked and tender, about 12 to 15 minutes. Transfer to a platter, sprinkle with the lemon juice and drizzle with olive oil, to taste. Cover with aluminum foil and let sit for 5 minutes before serving.

- Preheat the oven to 400 degrees F.
- If the stalks of the asparagus are thick, peel the bottom 1/2 of each. Lay them in a single layer on a sheet pan and drizzle with olive oil. Sprinkle with salt and pepper.
