Eggplant Pizzas image

Eggplant makes a wonderful alternative to your ordinary pizza crust. I have tons of eggplant from my garden so I make these about once a week! Fun way to get your kids to eat their veggies. I suggest adding pepperoni, mushroom, and peppers.

2 eggs
1 cup all-purpose flour
½ teaspoon salt
¼ teaspoon ground black pepper
½ teaspoon dried oregano
1 large eggplant, sliced into 1/2 inch rounds
¼ cup vegetable oil
1 (14 ounce) can pizza sauce
1 ½ cups shredded mozzarella cheese

Steps:

  • Preheat an oven to 350 degrees F (175 degrees C).
  • Beat the eggs in a bowl. Mix the flour, salt, pepper, and oregano in a 1 gallon resealable plastic bag. Dip each eggplant slice in the egg, then drop the eggplant in the flour mixture one at a time, shaking the bag to coat the eggplant.
  • Heat the vegetable oil in a large, deep skillet over medium heat. Place the eggplant slices in the skillet to cook, turning occasionally, until evenly browned. Drain the eggplant slices on a paper towel-lined plate. Arrange the eggplant in one layer on a baking sheet. Spoon enough pizza sauce to cover each eggplant slice. Top each eggplant with mozzarella cheese.
  • Bake in the preheated oven until the mozzarella cheese is melted, 5 to 10 minutes.

Wonderful way to enjoy Aubergines

Number Of Ingredients 9

3 - medium to large aubergines - cut about 3/4 inch thick
1 - canned tomato sauce or passata
- fior di latte mozzarella or bocconcini shredded
10 slice(s) sliced rosa / baby tomatoes
- slices of salami or prosciutto of you choice
- grated parmesan
- fresh basil leaves
- salt to taste
- pepper to taste

Steps:

  • First you need to brush each side of the aubergines with olive oil and then grill them over a medium heat until they have just started to char but are still firm. You don't want to over cook them at this stage. You can also do this on a griddle pan in your kitchen.
  • Once they are grilled set them aside on a baking tray and start adding the layers of topping, starting with a thin layer of tomato sauce, then add the cheeses and the other toppings. Bake for about 8 - 10 minutes at 180C and until the cheese starts bubbling.
  • Move to oven mode and set the temperature to 180 C. Place the aubergine slices on a round pizza baking pan and bake for around 10 - 15 minutes until the cheese and sauces is bubbling and turning brown.
  • Drizzle with olive oil and season with salt and pepper and serve with a simple mixed green salad or salad leaves and or fresh basil leaves scattered over the top.
  • Serve with olive oil and salad

  • While grill heats, toss eggplant in olive oil and salt. Once grill is up to temperature, add eggplant directly on grates on a single layer over indirect heat (not directly over the flames). Close lid and grill for 10-12 minutes. Open lid, flip, and grill for another 2 minutes with the lid closed.
