SEARED MAHI-MAHI WITH SAFFRON RISOTTO AND MANGO SAUCE

- Peel the mango, cut into slices, and drop into the feed tube of a running blender to puree. Add the rice wine vinegar, cilantro, garlic, ginger, water, oil, mustard, and lime juice. Season with salt and pepper, to taste, and set aside.
- Bring chicken stock to a simmer. In a separate large saucepan on an adjacent burner, heat the olive oil and add the shallots and the rice. Lightly saute: you actually are toasting the rice. Cook until the rice becomes translucent and the shallots become soft, stirring constantly. Add the white wine to deglaze the pan. Begin slowly adding the warm stock, 1 ladle-full at a time, to the rice pan, stirring as you go. This will bring out the starch in the rice and make the mixture creamy. As the mixture absorbs the broth, ladle more into the pot. When the first ladle of stock has been absorbed into the rice, add the pinch of saffron. When all of the stock has been ladled into the rice pot, slowly simmer until the rice is soft and creamy. Stir the butter into the risotto for more flavor and creaminess. Set aside, keeping warm until needed.
- Heat a saute pan for the fish. Rub fish fillets with oil, salt and pepper. Place in pan, skin side facing up. Turn the fish over after 3 to 4 minutes. Cook for another 3 to 4 minutes or until done. Do not overcook the fish. It is done when the flesh springs back. Remove the fish to a utility platter. Place a mound of risotto on each plate. Top with mahi-mahi. Drizzle some mango sauce around the plate and top with chopped scallions.
GRILLED CHICKEN WITH PAPAYA BBQ SAUCE
It's June so fire up that BBQ and get busy. With this recipe you'll enjoy the flavors of tropical fruit and citrus along with some heat on your chicken. I strongly suspect that the seasoned rice wine vinegar could be replaced with white wine vinegar. Time does not include marinading time.

- PAPAYA CHICKEN MARINADE:.
- In a bowl, combine all ingredients for the marinade (except chicken).
- Add chicken and immerse in marinade.
- Set aside to marinate for a minimum of 1 hour up to 24 hours.
- Prepare Papaya BBQ Sauce.
- PAPAYA BBQ SAUCE:.
- Heat oil in a pot over medium heat and add onion. Cook and stir until translucent ensuring onion does not brown.
- Add sugar, scotch bonnet, zest of limes and lemon. Allow sugar to dissolve.
- Add water, juice from lemon, limes and vinegar.
- Bring to a boil.
- Add papaya and season with salt.
- Bring to a boil again and allow to simmer for 15 minutes.
- Using a blender, puree sauce until smooth.
- TO GRILL CHICKEN:.
- Heat and oil grill.
- Remove chicken from marinade and place on grill.
- Baste each breast with 2 tablespoons of Papaya BBQ Sauce, continue basting occasionally until chicken is cooked through.
- Garnish with chopped Spiced Cashews and cilantro leaves.
- SPICED CASHEW NUTS:.
- In a small frying pan, melt butter over medium heat.
- Add cashews until golden brown. Remove from heat, add paprika and salt.
- Use half of Spiced Cashew Nuts and chop for chicken and reserve the remainder whole to add to a salad.
GRILLED ABALONE WITH PAPAYA SAUCE

- To make the marinade, microwave lime in a small bowl to release essential oils, and set aside until cool enough to handle. Through the feed opening of a running blender add, 1 at a time, half of the papaya (reserving the other half), chile pepper, vinegar, salt and pepper. Then with the blender still running, squeeze in the juice from the microwaved lime.
- Place abalone in a nonreactive container, pour marinade over, cover and refrigerate for 6 to 8 hours.
- Heat grill.
- Use marinade to make a sauce by adding it to a pan over medium-high heat. Bring to a boil and let reduce and thicken. In a small bowl, create a slurry by gradually adding 1 tablespoon water to cornstarch. Whisk slurry into sauce, and add reserved papaya slices and papaya seeds. Adjust seasoning with salt and pepper, remove from heat, cover and keep warm.
- Grill abalone over medium-high heat until opaque. Remove from heat and let rest.
- Serve with sauce and sprinkle with chopped cilantro.

- Most likely, the mantles of abalone will be curled. To relax the muscle, they are either rubbed with some sea salt or blanched in a sea or ocean water. Preheat your grill to medium heat. In a pot, bring 1/2 gallon of ocean water to boiling.
