GRILLED ROAST CHICKEN

Over the weekend my hubby and I purchased a new Weber 2 burner gas grill. Today, I decided it was time to roast a chicken which I'd thawed in the fridge for the past few days. The smell of the bird cooking has been permeating through the house for the past hour or so. I can't wait to taste it! I had some bbq. sauce I made so used it, but any will do. I cooked my bird in one of those large aluminum lasagne pans. I also used another same size lasagne pan to act as a cover when the bird was done and sitting on the counter to finish cooking. I have to say it was done perfectly. The meat was just falling off the bone and the meat was the perfect colour all the way though with no pink on the bones. It just makes good sense to cook this way in the summer, especially if you live in a hot climate like I do. Do give this a try, it is a simple and delicious way to enjoy chicken without heating up your kitchen.

5 lbs roasting chickens (roaster)
1 (18 ounce) bottle barbecue sauce (your choice)
1/4 cup olive oil
salt and pepper

Steps:

  • Prepare your grill by heating it for about 15 minutes on high.
  • In the mean time, wash and pat dry your bird. Make sure its totally thawed. It won't cook evenly if there are some frozen parts in it.
  • Coat the bird with the oil and season with salt and pepper.
  • Get yourself a large roasting pan that is bbq. safe and set a raised rack inside it. Put the chicken on this.
  • Put the pan with the bird in it on the grill and close the lid.
  • If you are doing the indirect heat method, turn off one burner and set the pan on the opposite side of the grill from the lit burner. That is what I read on the Internet as to how to do this.
  • However, being the adventuresome sort that I am, I decided to leave both the burners on but maintained a temperature of 350'F through out the whole cooking process.
  • I grill roasted my bird for about 1 1/2 hours. But of course this depends on your grill. This is what my instruction booklet said to do.
  • Use an oven thermometer to gauge the temperature. I stuck the pointy end of the gauge into the thickest part of the chicken thigh and when it registered just under 165'F that is when I added the bbq. sauce on top of the bird.
  • I used about 1/4-1/2 cup. I like lots. I closed the lid of the bbq. and let it roast for another 5-7 minutes.
  • Once it was 165'F I took the pan with the finished chicken in it and set in on my counter and put another pan on top of it to finish the cooking process. Leave for 15 minutes. You can use tin foil to cover it also.
  • This last step of letting the bird sit with a lid for 15 minutes will help redistribute the juices in the meat. Be patient, its worth it.
  • When the 15 minutes is up, dig in!

2 whole chickens (mine were 1.8 kilos each)
Bamboo sticks or skewers
Charcoal
Grill
4 tablespoons soy sauce
1 tablespoon fish sauce
2 tablespoons palm sugar
1 tablespoon sweet dark soy sauce (you can use kecap manis)
8 tablespoons water
4 heads garlic (30 - 40 cloves)
2 stalks lemongrass
2.5 tablespoons black pepper corns
8 fresh coriander roots (or you can try the powder coriander roots)
1.5 tablespoons khao kua (see method here)
1.5 tablespoons chili flakes
1 tablespoon of sugar
3 tablespoons fish sauce
8 tablespoons tamarind juice (you can add more or less according to how strong it is and how sweet and sour you want your sauce)
Few sprigs of cilantro

Steps:

  • For this recipe, I'm going to cook 2 full chickens, together weighing in at 3.6 kilos. If you wanted, you could also make this recipe with 3 - 4 kilos of chicken pieces, or really, however much chicken you want.
  • For this gai yang (ไก่ย่าง) to be at its finest, it's best to marinate the chicken overnight and grill it the next day, but if you don't have the time, marinate the chicken for at least a few hours.
  • Peel about 4 bulbs of garlic, which should be about 30 - 40 cloves in all.
  • Thinly slice 2 stalks of lemongrass and cut off the roots of 8 stalks of coriander.
  • Now comes the hard part, pounding everything using a mortar and pestle (If you don't have a mortar and pestle you can blend the ingredients in a food processor (but I'd really recommend you invest in a Thai style mortar and pestle).
  • Add small amounts of garlic, lemongrass, black peppercorns, and coriander roots to the mortar and pestle and pound them until the oils come out, and you have a coarse paste. Keep pounding until all the marinade ingredients are finished. You'll probably need to load the mortar a few times.
  • Put all the pounded marinade ingredients in a mixing bowl, stir them up, and add 4 tablespoons of light soy sauce, 1 tablespoon of dark soy sauce, 1 tablespoon of fish sauce, and 2 tablespoons of palm sugar. Mix everything together while adding about 8 tablespoons of water to the mixture. You should end up with a potent marinade that looks like a chunky garlicky sauce.
  • If you're using whole chickens, you'll want to butterfly cut them starting from the breast side down to the butt. Flatten the chickens out. This is going to prepare it for the grill (Watch the video to see how to do it).
  • In a big pan or mixing bowl start to rub the marinade on the chicken, making sure the garlic, herbs, and soy sauce go into all parts of the chicken. Rub down both chickens using all the marinade.
  • Cover the chickens and allow them to rest overnight. You might stir them a couple of times if you remember.
  • The next day, take out your chicken, and the first step is to light your charcoal. You want a low even heat, coals that aren't too hot, but a low and even.
  • Put the chicken on the grill and begin cooking!
  • Wait about 20 minutes or so (but monitoring them to make sure they don't burn), before making your first flip. You can baste the chicken with the extra marinade.
  • Cook the chicken on low heat for about 1.5 hours, until the chicken is cooked through to the bone and the skin is golden dark brown on the outside.
  • Take the chicken off the grill, and dismantle the bamboo supports.
  • If you have a Chinese cleaver, first cut the chicken in half from the neck to the butt, and from there cut off the drumstick, wing, and chop the rest of the chicken into strips.
  • Semi-dried tamarind pulp can usually be bought at the supermarket in a small block. To rehydrate it, get a couple tablespoons of hot water and start to work the tamarind into the hot water. This should turn it into a nice tamarind water sauce.
  • In a bowl, mix 1.5 tablespoons of khao kua (toasted sticky rice, recipe here), 1.5 tablespoons of chili flakes, 1 tablespoon of sugar, 3 tablespoons of fish sauce, and 8 tablespoons of tamarind juice.
  • Mix all of the ingredients together.
  • After mixing up the sauce, make sure you taste test. You're looking for the perfect sweet, sour, and salty combination. You might need to add more tamarind juice, more sugar, or more fish sauce to balance it out.
  • Top off your gai yang sauce with some chopped up cilantro.

Marinade
1/3 cup extra virgin olive oil
Juice and zest of 2 lemons
1 tablespoon dry oregano
1 tablespoon fresh thyme
1 teaspoon coriander
1 teaspoon paprika
½ teaspoon cumin
½ teaspoon black pepper
½ teaspoon cayenne pepper (more if you like spicy)
12 garlic cloves (peeled and minced)
For Chicken
3 1/2 lb Whole Chicken

Steps:

  • Spatchcock (butterfly) the chicken (or ask your butcher to do it). Place the chicken on a cutting board with its backbone facing you. Using a pair of sturdy kitchen shears like this one (affiliate link) cut out the backbone by cutting along both sides of the spine, and remove it. Push down on the breasts to flatten the chicken. Flip the bird over and remove the wing tips.
  • Season the chicken. Pat chicken dry and season with salt all over, lift the skin and apply salt underneath.
  • Mix the marinade. In a small bowl, mix together the marinade ingredients (olive oil, lemon juice, oregano, thyme, spices, and minced garlic cloves).
  • Apply the marinade to the chicken. Place the chicken in a large dish (with sides so that the marinade does not spill). Apply the majority of the marinade underneath the chicken skins (this will ensure best flavor), and be sure to rub some of the marinade on the back side of the chicken as well. Keep the chicken flat with skin side up. Marinate in the fridge for 2 to 4 hours.
  • Grill. Preheat an outdoor grill over medium-high (400 degrees F) and make sure to lightly oil the grates. Place the chicken over indirect heat (this means, the burner or burners directly below the chicken should be turned off, while the outer burners surrounding it should remain on. Watch the video to see how Adam does this). Cover and cook for 45 minutes to 1 hour or until the chicken's internal temp reaches 165 degrees F. Check every few minutes, and if the chicken gains some color on one part, rotate as needed.
  • Rest. Remove the chicken from the heat and set aside to rest for 10 minutes before slicing through to serve.

  • Preheat grill to 375 degrees using a fruit wood like cherry or apple. Oak is another good flavor for chicken.
  • Pat dry the chicken with a paper towel. Coat with olive oil, and season liberally, including inside the cavity. Stuff the chicken with the onion, garlic, lemon, and thyme. Tuck the wings under the chicken to keep them close to the body.

  • Start with setting up your grill for indirect cooking. Clean and oil the grates. Turn your burners that will be on to full and watch grill surface temperature. Aim for 350° to 400° in the indirect area. Adjust the lite burners as needed.
  • Clean, trim, and pat dry. Be sure to remove the giblets. I have a hard time not rinsing the interior of a bird. If you do it, do it carefully and clean up after done.

  • If you’re using gas, just turn it on and set two burners to medium-high and the other two you can leave off.
  • If you’re using charcoal, stuff the bottom of a chimney starter with 2 sheets of newspaper and fill the top with charcoal. Place the whole thing, upright, in the kettle of the grill – with the grill grates removed. Light the newspaper. The chimney will begin smoking immediately, but keep an eye on it for a least five minutes, as sometimes the paper will ignite, but not the charcoal. If this happens just stuff a little more newspaper in the bottom and relight. You can tell the charcoal is actually lit when you notice the smoking lessen but not stop completely and see it coming directly out of the top of the chimney rather than the bottom and sides.   • Prepare your chicken by spatchcocking it. This is just a hilarious word for cutting out the backbone. You can hold the chicken upright on a cutting board and use a knife to cut down either side of the backbone (kind of dangerous IMO), or you can use a pair of kitchen shears (you know, the ones that came in the knife block that otherwise just take up space). If you use shears, just cut up either side of the backbone to remove it. Then clean up the chicken by trimming any large pockets of excess fat or skin.
