ROASTED RED POTATOES WITH BACON AND ONION
I have got the most perfect potato side dish for you to try! Roasted red potatoes are cooked with bacon and onion for a side full of flavor. Easy to make and perfect to serve for Thanksgiving and the holidays.

Steps:
- Adjust an oven rack to lower-middle position and heat oven to 450°F. Place the bacon on a large, rimmed baking sheet and set it in the oven. Cook bacon just until browned and crisped about 10 minutes. Remove the bacon from the oven and cut-up or crumble it; Set aside. Remove all except 2 tablespoons bacon fat from the pan.
- Reduce oven temperature to 400°F.
- Place potatoes, garlic cloves and sliced onion onto the baking sheet, and toss with the bacon fat. Sprinkle vegetables with dried thyme and season liberally with salt and black pepper. Turn the potato halves cut-side-down, and separate the vegetables so there is no crowding.
- Roast, shaking the pan every 15 minutes, and continue cooking until vegetables are tender and caramelized.
- Taste, and if needed, season with salt & pepper.
- Garnish with the crumbled bacon.
- This dish can be served hot or at room temperature. Enjoy!

Steps:
- Preheat oven to 425ºF (220ºC).
- Cook bacon in a cast iron skillet until crisp.
- Remove any excess grease, if preferred.
- Add the potatoes and onion soup mix to the skillet and stir. Add salt and pepper to taste.
- Bake in the skillet for 20-25 minutes, or until potatoes are cooked through.
- Enjoy!

YUKON GOLD ROASTED POTATOES WITH BACON, ONION AND GARLIC
You can use any kind of potatoes for this but Yukon Gold are simply the best! All ingredients can be adjusted to taste. If you do not like your garlic crispy then just add in two or three whole bulbs garlic (outer layer of skin removed) sprinkle with oil and place in the roasting pan with the potatoes and separate the cloves after roasting. If desired, roast 1-2 pounds fresh mushrooms in the oven with a bit of butter or oil until they are soft and release their juices, remove to a bowl and continue with the recipe, add in the mushrooms to the roasting pan just before serving, I have done this many times if I have fresh mushrooms handy.

- Set oven to 425ºF.
- Prepare a large roasting pan.
- In the roasting pan cook the bacon in the oven until crisp (this should take about 10 minutes) remove from the roaster and crumble, then set aside to a plate to cool slightly (DO NOT drain the bacon fat, leave in the roaster).
- Place the potato wedges skin-side down in the roasting pan; toss to coat in the bacon fat (you can also add in some oil if it seems too dry).
- Add in onion wedges (the onion wedges will separate).
- Sprinkle the peeled garlic cloves in the pan around the potatoes and onions.
- Sprinkle the veggies with rubbed thyme, salt and pepper.
- Roast uncovered for about 40-45 minutes, or until the potato wedges are fork-tender and browned.
- Before serving sprinkle with crumbled bacon and season with more salt and pepper if desired).

My dad's a meat and potatoes kind of guy, so these 'baked' potatoes wrapped in bacon and sprinkled with brown sugar and pepper really make his day!

- Preheat an outdoor grill for medium-high heat.
- Make 4 cuts into each potato without going all of the way through so that each potato has been cut into 5 thick slices. Place potatoes onto squares of aluminum foil. Sprinkle 1/4 teaspoon of salt inside each potato, then wrap with 3 slices of bacon and secure with toothpicks if needed. Brush the potatoes with olive oil, then sprinkle with brown sugar and black pepper. Wrap the potatoes loosely in the aluminum foil.
- Grill potatoes until the bacon has crisped, and the potato is soft in the center, about 45 minutes depending on grill temperature.

GRILLED POTATOES AND ONION
Always cook up a package of potatoes and onions with the rest of your grilled meal! Start early, because it takes about a half an hour to cook. These cook over indirect heat (off to the side), so you can grill other things at the same time.

- Preheat grill for medium heat.
- For each packet, measure out 2 or 3 squares of aluminum foil large enough to easily wrap the vegetables, and layer one on top of the other. Place some of the potatoes and onion in the center, sprinkle with salt and pepper, and dot with butter. Wrap into a flattened square, and seal the edges. Repeat with remaining potatoes and onion.
- Place aluminum wrapped package over indirect heat, and cover. Cook for approximately 30 minutes, turning once. Serve hot off the grill.

GRILL ROASTED POTATOES WITH BACON AND ONION

- Cut potatoes into quarters or eighths. Rough chop onion and bacon. Mix potatoes, onion and bacon in a bowl. Drizzle with olive oil to coat. Sprinkle on garlic salt and pepper, I add a little kosher salt but this is optional. Tear off 4 sheets of heavy duty foil(or 8 sheets regular foil) and spray with non-stick cooking spray. Put 1/4 the potato mixture onto each sheet of foil and wrap into a packet. Grill over high heat for 30-45 minutes until potatoes are tender. If packs are cooked at a lower heat they will take longer to cook and bacon won't be very crisp. For oven, set temperature to 450 degrees and you will have to stir poatoes frequently to prevent bacon from burning.(Or add bacon in last 15-20 minutes). Enjoy!
