2 large heads cauliflower
1/4 c. extra-virgin olive oil
1/2 tsp. garlic powder
1/2 tsp. paprika
Kosher salt
Freshly ground black pepper
2 c. shredded cheddar
Ranch dressing, for drizzling
8 slices cooked bacon, crumbled
2 tbsp. finely chopped chives

Steps:

  • Remove and discard leaves from each cauliflower head, then trim stem so that the cauliflower can lie flat on cutting board. (Leave the core intact!)
  • Cut each cauliflower into thick "steaks" about 3/4" thick. Reserve any loose florets to cook with the steaks. In a small bowl, whisk together olive oil, garlic powder, and paprika. Season mixture with salt and pepper.
  • Heat a grill or grill pan to medium. Brush one side of each steak with olive oil mixture and place the brushed side down on the grill. Brush the top sides with olive oil mixture and cook until tender and both sides are charred in spots, about 8 minutes per side. Top each cauliflower with cheese and cook until melty.
  • Toss any extra florets in the olive oil mixture and grill, turning often, until charred and tender, about 6 minutes.
  • Drizzle cauliflower with ranch dressing, then sprinkle cooked bacon and chives on top.

1 head cauliflower
2 Tablespoons olive oil
2 teaspoon Signature Sweet Rub (or equal parts salt and pepper)

Steps:

  • Trim the cauliflower. Break off any large and excess leaves on the bottom of the cauliflower. Use a large knife to cut the stem flat so the cauliflower sits without tipping over.
  • Preheat the grill. Start your grill and set the heat to medium. Allow the grill to preheat to approximately 400 degrees F while you season the cauliflower.
  • Season the whole cauliflower head. Drizzle the cauliflower with the olive oil and season with the sweet rub (or salt and pepper). Place in a grill basket for stability (if you have one) or onto a baking sheet.
  • Roast the cauliflower head on the grill. Put in cauliflower on the grill and roast for 25-30 minutes or until the flesh of the cauliflower is fork tender and the top begins to brown.
  • Enjoy! Serve immediately by slicing off large pieces for each portion.

1/4 cup Thai chile sauce
1 tablespoon honey
1 tablespoon sriracha

Steps:

  • For the cauliflower: Preheat the oven or a grill for cooking over indirect heat to 400 degrees F.
  • Lightly brush the oil on the cauliflower. (If roasting, cut into florets and place on a baking sheet lined with parchment paper or nonstick aluminum foil.) Sprinkle with salt, a few grinds of pepper and paprika, if using.
  • Place the cauliflower stem-side down over the indirect heat and grill until golden and tender when pierced with a fork or the tip of a knife, about 40 minutes. (If roasting, roast until the cauliflower is golden in parts, 20 to 25 minutes.)
  • Meanwhile, make the sauce: In a medium bowl, add the mayonnaise, chile sauce, honey and sriracha and whisk until smooth. Taste and season with salt and a few grinds of pepper.
  • Cut the cauliflower unto large florets and add to a large bowl. Drizzle the sauce over the cauliflower and toss to coat evenly. Transfer to a platter. Sprinkle with the scallions, spritz with lemon wedges, and serve hot, warm or chilled.

Steps:

  • When ready to cook, set the temperature to 180°F and preheat, lid closed for 15 minutes. For optimal flavor, use Super Smoke if available.
  • Cut the cauliflower into medium-sized florets, and place it on a sheet tray. Transfer the sheet tray to the grill and smoke for 20 minutes
  • While the cauliflower is smoking, mix all of the ingredients together except for the Parmesan cheese.
  • After 20 minutes remove the cauliflower. Increase the grill temperature to 450°F and preheat, lid closed for 15 minutes.
  • While the grill is coming up to temperature, toss the cauliflower with the spice mixture, and place it back on the sheet tray.
  • Place back on the Traeger and roast it for 10 minutes or until it has a nice golden brown color.
  • In the last few minutes of cooking, sprinkle the Parmesan over each piece and close the lid until the cheese is melted. Enjoy!

3 -4 tablespoons butter, softened to room temp
1/4 teaspoon garlic powder
1/4-1/2 teaspoon salt
1/4 teaspoon pepper
1/8 teaspoon nutmeg
1/8 teaspoon paprika

Steps:

  • Wash cauliflower. Remove leaves and stem. With a sharp knife, cut/dig out the hard core.
  • Tear a large piece of heavy-duty aliminum foil large enough to wrap the cauliflower. Place the cauliflower in the center if the piece of foil. Set aside.
  • In a small bowl, combine the softened butter and all the seasonings; mix well.
  • Spread the seasoned butter mixture over top of the cauliflower. Wrap tightly in the foil.
  • Place on top rack of grill, close lid and grill over med-high heat for about 50 - 60 minutes or until desired tenderness is achieved (you can test w/ a sharp knife or fork right through the foil).
  • Be careful not to get steam burns when openening the foil.

1/4 cup olive oil
kosher salt (to taste)
freshly ground black pepper (to taste)
2 tablespoons butter
fresh lemon wedges (optional)

Steps:

  • Trim leaves from cauliflower heads and slice off just enough of the stem so the head will sit flat.
  • Place one cauliflower head upright on a cutting board and starting at the center cut in half from the top straight down with a sharp knife. Cut 1 to 1 1/2 inch thick slices from each half, leaving the stem intact. Repeat with second cauliflower head so you have 4 equal steaks. (Reserve remaining cauliflower for another use. See recipe note #1)
  • Heat a gas or charcoal grill to medium.
