Grilled Steak Tacos With Cherry Tomato-Avocado Salsa image

In this supremely summery taco recipe, chile-rubbed grilled steak is topped with a spicy tomato-avocado salsa before being rolled into warm corn tortillas. Grilling the onions, garlic and jalapeño for the salsa adds a concentrated sweetness, while lime zest keeps everything sharp and bright. If you don't have access to a grill, feel free to use your broiler.

2 teaspoons kosher salt
2 1/2 teaspoons New Mexican or other mild chile powder
1 1/2 teaspoons ground coriander
1/2 teaspoon ground cumin
1 large garlic clove, finely grated or minced
Finely grated zest of 1 lime (cut lime into wedges for serving)
2 1/2 pounds skirt steak (usually 2 steaks)
1 white onion, peeled and sliced into 1-inch-thick slices
2 large garlic cloves, unpeeled
2 jalapeños
1 quart cherry tomatoes, quartered
1 avocado, diced
1/4 cup chopped cilantro leaves and stems
2 teaspoons fresh lime juice, more to taste
3/4 teaspoon kosher salt, more to taste
Corn or flour tortillas, for serving
Sliced radishes, for serving
Mexican crema or sour cream, for serving (optional)

Steps:

  • Prepare the steak: In a small bowl, mix together the salt, chile powder, coriander, cumin, garlic and lime zest. Rub mixture all over the steaks, cover and refrigerate for at least 1 hour or preferably overnight.
  • Prepare the salsa: Light the grill or heat to medium-high (or heat the broiler). Grill onion, garlic and 1 jalapeño until tender and charred on all sides, 5 to 10 minutes (or place on a broiler pan and broil). Remove from heat until cool enough to handle, then roughly chop onions, peel garlic and remove seeds and stem from jalapeño.
  • Transfer grilled onion, garlic and jalapeño to a blender or mini food processor. Halve the fresh jalapeño and seed it, if desired, then add it to the blender. Process to a chunky paste. Scrape into a serving bowl and toss with tomatoes, avocado, cilantro, lime juice and salt.
  • Add more charcoal to the grill, if needed, and grill the steaks until done to taste, about 2 minutes per side for rare (or broil). Let meat rest on a cutting board covered with foil for at least 7 minutes. Meanwhile, grill or broil the tortillas until warm.
  • To serve, slice the meat across the grain, and serve with the warm tortillas, radishes, lime wedges, salsa and crema. Let people assemble their own tacos at the table.

8 (6-inch) flour tortillas
1 1/2 pounds skirt steak
2 tablespoons canola oil
Salt and freshly ground black pepper
1/2 head romaine lettuce, thinly shredded
1 medium red onion, thinly sliced
1 ripe avocado, peeled, pitted, halved and diced
Grilled Tomato Salsa, recipe follows
8 ounces sour cream
2 tablespoons canola oil, plus more for brushing tomatoes
2 serrano chiles
1 small red onion, coarsely chopped
4 cloves garlic, peeled
6 plum tomatoes, halved and seeded
Salt and freshly ground black pepper
2 limes, juiced
1/4 cup chopped fresh cilantro leaves

Steps:

  • Heat grill to high.
  • Wrap tortillas in aluminum foil and on the top rack of the grill while the steak is grilling.
  • Heat grill pan over high heat. Brush steak with oil and season with salt and pepper on both sides. Grill on one side until golden brown and slightly charred, about 3 to 4 minutes. Turn the steak over and cook to medium-rare doneness, about 3 to 4 minutes longer. Let rest 5 minutes then slice against the grain into 1/4-inch thick slices.
  • Fill each tortilla with some lettuce, 3 to 4 pieces of meat, onion, grilled tomato salsa, sour cream, and avocado.
  • Heat grill to high.
  • Heat oil in a small saute pan and saute the chiles, onion, and garlic until soft.
  • Brush tomatoes with oil and season with salt and pepper. Grill on both sides until slightly charred and soft.
  • Transfer tomatoes and serrano mixture to a food processor; add the lime juice and salt and pepper and process until smooth. Add the cilantro and pulse a few times (there should be flecks of cilantro in the salsa.) Transfer to a bowl.

1 stick (8 tablespoons) unsalted butter, at room temperature
2 canned chipotle peppers in adobo, seeded and minced, plus 2 tablespoons adobo sauce
2 tablespoons lime juice plus 1 lime, cut into 8 wedges
Kosher salt and freshly ground black pepper
1/2 cup sour cream
8 ounces peeled and deveined large shrimp, tails removed
1 tablespoon tequila
1 tablespoon extra-virgin olive oil
1 1/2 teaspoons minced fresh cilantro plus 1 cup cilantro leaves
2 large chilled cooked lobster tails, split lengthwise
8 corn tortillas (6 inch)
1 cup julienned radishes
1 avocado, sliced
1 Fresno chile, thinly sliced

Steps:

  • Prepare a grill for medium-high heat.
  • In a mixer with the paddle attachment, combine the butter, chipotle peppers, 1 tablespoon of the adobo sauce and 1 tablespoon of the lime juice. Season with salt and pepper, then paddle the mixture until the ingredients are distributed evenly.
  • In a bowl, mix the sour cream with the remaining 1 tablespoon adobo sauce. Season with salt and pepper. Refrigerate until ready to use.
  • In a bowl, combine the shrimp, tequila, olive oil, minced cilantro and remaining 1 tablespoon lime juice. Season with salt and pepper.
  • Spread a heaping tablespoon of the butter mixture onto each lobster split. Put the lobster butter-side up on the grill, along with the shrimp. Grill the shrimp until just cooked through, about 3 minutes per side. Grill the lobster until the butter is melted and the meat is just heated through. Remove the lobster meat from the shells and chop into 3/4-inch pieces.
  • Grill the tortillas until warmed. Assemble the tacos by distributing the lobster and shrimp among the tortillas, then topping with the radishes, sliced avocado, Fresno chile slices, cilantro leaves and sour cream mixture. Serve with a lime wedge.

1 pound skirt steak
2 tablespoons olive oil
2 tablespoons ancho chile powder
Kosher salt and freshly ground black pepper
1 ear of corn
1 jalapeño, seeded
1/2 red onion, sliced into 1/2-inch rounds
1 tablespoon olive oil
Kosher salt and freshly ground black pepper
2 tablespoons chopped fresh cilantro
1 avocado, diced small
1 lime, zested and juiced
8 mini naan breads, warmed
1/2 cup chipotle mayonnaise, optional
1 cup crumbled queso fresco
Lime wedges, for serving

Steps:

  • For the steak: Heat a grill pan over medium heat. Drizzle the steak with the olive oil and season with the ancho chile powder, 2 teaspoons salt and 1 teaspoon pepper. Grill the steak to the desired temperature, 3 to 4 minutes per side for medium rare. Set aside to rest while you make the salsa.
  • For the grilled avocado-corn salsa: Brush the corn, jalapeño and red onion with the olive oil and sprinkle with 1 teaspoon salt and 1/2 teaspoon pepper. Grill until the vegetables are lightly charred, about 6 minutes. Slice the corn off the cob and chop the jalapeño and onion. Toss the vegetables with the cilantro, avocado and lime zest and juice in a bowl. Taste and adjust the seasoning as needed.
  • For the assembly: Slice the steak thinly against the grain. Build a taco by grabbing a warm naan and adding a tablespoon of the chipotle mayo, if using. Top with some of the steak and a spoonful of the salsa. Top with some crumbled queso fresco and serve with a lime wedge.

2 pounds heirloom tomatoes all the same color, seeded and cored
2 cloves garlic, chopped
1 red onion, chopped
2 jalapenos, split and seeded
1 cup cilantro leaves
1/2 cup extra-virgin olive oil
Salt and pepper

Steps:

  • Place tomatoes, garlic, red onion, jalapenos, 1/2 cup of cilantro, and 1/4 cup of the oil into a food processor. Pulse until the consistency of the mixture is course, about 5 (1 second) pulses. Transfer to a serving bowl and season with salt and pepper. Garnish the salsa with the remaining cilantro and oil.

For the Salsa Fresca:
2 large heirloom or beefsteak tomatoes, chopped into small bite size pieces
1 medium size avocado, peeled, seeded and diced
2 large green onions (white and light green parts), chopped
1 large garlic clove, minced
1 heaping tablespoon cilantro, chopped
2 teaspoons fresh lime juice
1 teaspoon light olive or vegetable oil
Salt and Pepper to taste
For the Quesadillas:
1 - 8 ounce bacon wrapped beef fillet steak, approximately 1" thick
1 - 8 ounce lobster tail, shell removed
Salt and Pepper to taste
1 teaspoon freshly squeezed lemon juice
1 tablespoon light olive or vegetable oil, divided
2 - 1" thick slices from a medium to large sweet yellow onion
3 large jalapeno peppers, remove seeds and membranes for a milder flavor
8 - 8" flour tortillas
8 ounces grated quesadilla cheese
2 tablespoons butter, softened to room temperature
2 cups chopped romaine hearts and baby arugula blend

Steps:

  • Place all of the salsa ingredients into a medium size bowl. Gently mix well to combine. Cover and refrigerate until ready to use. Preheat an outdoor grill to medium high. Season the fillet and the lobster tail with salt and pepper to taste; set aside. Mix the lemon juice and 1 teaspoon of the oil and sprinkle over the lobster; run a metal or wooden skewer (that has been soaked in water for at least 30 minutes) through the middle and set aside. Skewer the onion and jalapeno peppers. Brush with one teaspoon of the oil. Place the onion and jalapeno and the fillet skewers toward the center or hottest part of the grill. Grill each skewer for approximately 5 minutes on each side. Just before turning the steak, place the lobster tail on the hottest part of the grill next to the steak. Grill the lobster for approximately 3 minutes on each side or the tail turns opaque and brown around the edges. Remove the meat and vegetables when done, transfer to a cutting board; cover and allow resting for five minutes or so. After resting, cut the fillet, lobster, onion and jalapeno into small bite size pieces; set aside and keep warm until ready to use. Lay the tortillas in a single layer on flat, clean surface. Sprinkle each of the tortillas with equal amounts of the grated cheese. To one side of the tortilla, sprinkle equal amounts of the steak, lobster, onion and jalapeno. Fold the tortilla in half and spread the outside with equal amounts of the butter; set aside. Clean the hot grill with a grill brush. Place the quesadillas onto the hot grill and, watching very carefully, toast on both sides until they are golden brown and the cheese is melted on the inside. Remove from the heat and transfer to a serving platter and allow cooling for 3 minutes or just until they are hot but cool enough to handle. Open tacos up with your fingers and stuff with equal amounts of the lettuce and arugula blend and top with desired amounts of the Salsa Fresca.

A lite and refreshing summer dish to use up some of those garden tomatoes. Quick and tasty dish. I used heirloom because that is what we grow but any type of tomato could be used.

1 teaspoon onion powder
1 teaspoon garlic powder
¾ teaspoon ground cumin
¾ teaspoon kosher salt
¾ teaspoon ground black pepper
¼ teaspoon chili powder
2 (6 ounce) skinless, boneless chicken breast halves
1 ½ tablespoons olive oil, divided
1 medium ripe avocado, diced
1 medium heirloom tomato, seeded and diced
½ small red onion, diced
1 teaspoon lime juice, or to taste
salt and ground black pepper to taste

Steps:

  • Preheat an outdoor grill for high heat and lightly oil the grate.
  • Combine onion powder, garlic powder, cumin, salt, pepper, and chili powder in a small bowl. Sprinkle chicken with spice mixture and rub until evenly coated. Drizzle with 1 tablespoon olive oil.
  • Arrange chicken on the preheated grill and grill for 8 minutes. Turn and grill until no longer pink in the center and the juices run clear, about 4 more minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).
  • Remove chicken from the grill and drizzle with remaining olive oil. Let stand for 10 minutes.
  • Meanwhile, mix avocado, tomato, and red onion for salsa together in a small bowl. Add lime juice and season with salt and pepper.
  • Slice chicken and top with salsa.
