JALAPENO PEPPER JELLY

Jalapeno Pepper Jelly image

Jalapeño Pepper Jelly is a delicious sweet and spicy spread. This is a great way to preserve all those summer jalapenos and peppers. Enjoy on cheese and crackers, toast, sandwiches, or grilled meats.

Provided by Garnish and Glaze

Categories     Toppings

Time 40m

Number Of Ingredients 7

10 jalapeno peppers (half seeded)
1 red bell pepper (chopped)
1 green bell pepper (or orange) (chopped)
5 1/2 cups granulated sugar
1 1/2 cup white vinegar
1/2 teaspoon salt
1 3 ounce pouch liquid pectin

Steps:

  • Place all peppers in a food processor and pulse until peppers are finely chopped. Empty into a mesh strainer and drain off excess liquid.
  • Place the chopped vegetables in a large stock pot and add in the sugar, vinegar, and salt. Bring to a boil over medium-high heat and boil for 10 minutes. Add the pectin and boil 1 more minute. Remove from heat
  • Ladle jam into hot sterile jars using a wide mouth funnel. Leave 1/4 inch headspace. Top the jars with the lids, screwing them on with just your thumb and index finger (this is to ensure that it is on but not too tight that the air can't escape).
  • Place jars back on the rack and lower into the water. Bring to a boil and boil for 10 minutes. (Add 1 more minute for each 1000 ft elevation above 1000 ft.)
  • Remove and place on a towel about 1 inch apart. After a few minutes you should start to hear the cans seal with a pop. Leave the jars untouched on the counter for 12 hours.
  • To check for a proper seal, remove the the ring of the lid and lift the can up off the counter 1-2 inches while holding the edges of the lid. If the lid stays attached the jelly is sealed properly and can be stored on the shelf (screw bands removed).
  • If a seal did not form or if you opened the lid and broke the seal, jelly can be stored in the fridge.
  • Let jelly rest 1 day before opening to allow it to fully set up and be thick.

PEPPER JELLY

Pepper Jelly image

I love pepper jelly. This recipe is a mix of sweet and heat. My favorite way to use it is: Pour some pepper jelly over a block of cream cheese and serve with crackers. You can't get any easier than that for an appetizer and it has always been a crowd pleaser. I like to have both items on hand, just in case I have unexpected guests. This recipe makes 3 cups of pepper jelly and it will keep in the refrigerator for up to 3 months. It also makes a great hostess or neighborly gift!

Provided by LifeIsGood

Categories     Jellies

Time 20m

Yield 3 cups

Number Of Ingredients 6

1/2 cup red bell pepper, very finely chopped
1/2 cup green bell pepper, very finely chopped
1/4 cup jalapeno pepper, very finely chopped (seeds and ribs left in if you like it hot, or seeds and ribs removed if you like it milder)
3 cups sugar
3/4 cup cider vinegar
1 (3 ounce) package certo liquid pectin

Steps:

  • Stir together the peppers, sugar and vinegar in a saucepan over medium-high heat.
  • Bring to a boil, stirring, until the sugar is dissolved.
  • Stir in the pectin and cook for another 1 to 2 minutes.
  • Remove from the heat.
  • Let cool until slightly thickened.
  • Ladle into sterilized jars (peppers will float to the top, so stir the mixture before transferring to the jars).
  • Keep covered in the refrigerator for up to 3 months.

RED OR GREEN PEPPER JELLY

Red or Green Pepper Jelly image

I first had this recipe after buying it at our school fundraiser. It was so good that I went through the trouble of finding out who made it and got the recipe. Since then I have made it numerous times and given away lots of little jars at Christmas. It is delicious served with cream cheese and crackers. I am not absolutely sure of the yield, it could be more.

HOW TO MAKE GREEN PEPPER JELLY IN ONLY 8 EASY STEPS

From morningchores.com
Estimated Reading Time 7 mins
  • Prepare the Peppers. Start the process of making pepper jelly by washing the peppers. Allow cool water to run over them while you gently rub the surface of the peppers with your hand.
  • Pull Out the Food Processor. Once the peppers have been dried, cut them into smaller pieces to make it easier for the food processor to finish the job.
  • Put It to Bed. When the pepper mixture has been thoroughly mixed with the apple juice, cover it with a lid or piece of aluminum foil. Place the covered bowl in the refrigerator and allow it to stand uninterrupted overnight.
  • Juice the Pepper Mixture. The birds are chirping. It’s a beautiful morning. But it’s also time to check your pepper mixture in the fridge. Remove the mixture from the fridge and place a cheesecloth or jelly bag over a colander.
  • Create the Jelly Mixture. Once the juice has been strained, pour it into a sauce pot along with the pectin and salt. Bring the mixture to a boil but be sure you stir the mixture constantly to deter sticking.
  • Give it a Bath. Be sure to clean and sanitize your canning jars, lids, and rings prior to canning. From there, put the hot jelly mixture into hot jars.
  • Let Stand. After the 10 minutes has passed, turn the stove off, and remove the jars from the canner with jar grabbers. Place the jars on a thick towel on a hard surface such as a countertop or a table top to keep from burning the surface.
  • Label and Store. After the 24-hour waiting period, check your jars. Each lid has a raised button in its center. When you run your finger over the top of the cap, it should feel smooth.
