GREEN BEANS IN ONION SAUCE

Steps:
- 1. If using frozen beans, in a medium saucepan add enough water to cover bottom of pan. Add 2 tablespoons onion soup mx. Bring to a boil; add package of green beans. Stir and cover. Reduce heat to a low simmer and simmer gently for 7-9 minutes or until heated through.
- 2. If using canned green beans, pour enough liquid from the can/s to cover the bottom of the pan. Proceed as directed above, but drain the remaining green beans before adding.
- 3. When heated through, remove from heat, stir and serve. A sprinkling of grated Parmesan cheese may be added for garnish.
GREEN BEANS WITH ROASTED ONIONS

- Preheat oven to 450°F. Spray 2 heavy large baking sheets with vegetable oil spray. Arrange onions in single layer on prepared sheets.
- Dot onions with 4 tablespoons butter, dividing equally. Season with salt and pepper. Bake until onions are dark brown on bottom, about 35 minutes.
- Meanwhile, boil broth in heavy large skillet over high heat until reduced to 1/2 cup, about 6 minutes. Add sugar and vinegar and whisk until sugar dissolves and mixture comes to boil.
- Add onions to sauce; reduce heat to medium-low. Simmer until liquid is slightly reduced, about 5 minutes. Season with salt and pepper. (Can be prepared 1 day ahead. Cover and refrigerate. Rewarm over low heat before continuing.)
- Cook green beans in large pot of boiling salted water until crisp-tender, about 5 minutes. Drain well. Return beans to same pot. Add remaining 2 tablespoons butter and toss to coat. Mound beans in large shallow bowl. Top with onion mixture and serve.

- 1. Cook beans in water until tender crisp, not soft. Drain.
- 2. Melt butter, add onions and saute until limp. Add chopped dill. Add flour and stir well to make the roux. Add one cup of water, sugar and vinegar and stir while the sauce thickens.
- 3. Add drained beans and mix. If too thick, add a little more water. ( I found i didnt have to add additional water)
- 4. This is a forgiving recipe. I had made it, and we talked for a while, and it reheated over a low temp just fine.
SAUTEED GREEN BEANS WITH ONION

- Fill a stockpot with water and bring to a boil over high heat. Add green beans and 1 pinch salt; boil until tender, 5 to 10 minutes. Drain beans in a colander and rinse with cold water. Blot dry using paper towels.
- Heat olive oil in a skillet over medium heat. Cook and stir onion and shallot in the hot oil until tender and translucent, 5 to 7 minutes. Add green beans, garlic salt, soy sauce, salt, and pepper. Cook and stir for 5 to 7 minutes more. Serve immediately.

- In a skillet over moderate heat, melt the butter.
- Add in onions; cook/stir for 3 minutes.
- Add in mushrooms; cook, stirring a few times, until the liquid from the mushrooms has evaporated.
- Sprinkle the flour over the mushrooms and onions; stir until blended.
- Cook 2-3 minutes, stirring to make sure the vegetables don't stick to the bottom of the pan.
- Gradually stir in the broth and whisk it until it comes to a boil.
- Add in cream and sherry; cook, stirring, until the sauce thickens.
- Add in nutmeg; season with salt and pepper.
- Bring water t a boil in a saucpan; add in green beans; return water to a boil.
- Cook beans until crisp-tender, about 3 minutes; drain the beans.
- To serve, place warm beans in a serving dish and pour the warm sauce over them.

- Place a steamer insert into a saucepan and fill with water to just below the bottom of the steamer. Bring water to a boil. Add green beans, cover, and steam until tender, 2 to 6 minutes.
- Melt butter in a saucepan over medium heat; cook and stir onion and garlic for 2 minutes. Add sesame seeds; cook and stir until sesame seeds are golden brown, 3 to 5 minutes.
- Mix soy sauce, mayonnaise, sriracha hot sauce, and allspice into onion mixture. Add green beans and toss to coat; season with salt and pepper.

- In a large stock pot, bring water to a boil. Boil green beans for five minutes, then strain and set aside.
