Balsamic Roasted Green Vegetables is a delicious medley of caramelized Brussel sprouts, green beans, broccoli, and asparagus. Fennel, mushrooms, onion, garlic, and basil add more fresh flavor. A delicious side dish that has something for everyone!

12 Brussels sprouts (, ends removed and halved)
12 ounces green beans (, cut into 2-inch pieces)
10 ounces broccoli florets
10 ounces asparagus spears (, medium thickness, cut into 2-inch pieces)
8 ounces mushrooms (, halved if large)
1 fennel bulb (, cored and thinly sliced)
1 onion (, coarsely chopped)
4 garlic cloves (, peeled and thinly sliced)
3 tablespoons olive oil
1 ½ tablespoons balsamic vinegar
1 tablespoon agave (, maple syrup or honey)
1 lemon (, halved)
¼ cup freshly grated parmesan cheese (, optional)
¼ cup chopped toasted walnuts (, optional)
3 tablespoons fresh basil (, thinly sliced)
3 tablespoons fresh parsley (, chopped)
Salt and pepper
Nonstick cooking spray

Steps:

  • Preheat oven to 425°F. Spray an extra-large, rimmed baking sheet, or 2 smaller ones, with non-stick cooking spray.
  • Place Brussels sprouts, green beans, broccoli, asparagus, mushrooms, fennel, onion and garlic in a large bowl.
  • In a small bowl, whisk together the olive oil, vinegar and agave. Pour mixture over vegetables and toss to coat.
  • Spread vegetables evenly in a single layer on prepared pan(s). Season with salt and pepper. Place lemon halves on the pan.
  • Roast 20-22 minutes in preheated oven until vegetables are softened and caramelized, stirring once halfway through. When cool enough to handle, squeeze the lemons over the roasted vegetables.
  • Sprinkle with parmesan cheese and walnuts (optional), basil and parsley. Stir to combine. Season to taste with salt and pepper.
  • Serve in a large bowl or platter.
  • Can be made 2 hours ahead. Cover and let stand at room temperature. Rewarm at 350°F for 10-15 minutes.

Freekeh, Chickpea and Herb Salad image

There is a lot to love about freekeh, an earthy grain that I'd like to see catch on in more kitchens. It cooks up in about 25 minutes, and it's light, like coarse bulgur, which it resembles, except that the color is darker and greener. But freekeh has a more complex flavor than bulgur. What stands out is its smokiness, a result of the production process, in which durum wheat - the type used for many pastas - is harvested while still green and soft, and carefully roasted in the husk over open fires. The wheat is beaten to remove the chaff, and in the Middle East it is sold whole or cracked. The cracked version is what you're more likely to find here in the United States, and happily it's become easy to do so. Look on the shelves of Middle Eastern markets, at whole-food markets or online. Cracked freekeh is tastier and easier to work with than whole freekeh. Add it to soups or stews, or use in the same way you would use rice or bulgur. The cracked wheat has a grassy, herbal quality that also makes it great for use in lemony salads like this one, in which the freekeh is tossed with chickpeas, scallions and a welcome dash of bright green in the form of fresh mint and parsley.

1 cup freekeh
1/2 teaspoon salt, more to taste
1/2 cup chopped fresh flat-leaf parsley
1/4 cup chopped fresh mint
1 cup thinly sliced celery, plus 3 tablespoons chopped leaves
1 bunch scallions, finely chopped
1 can chickpeas, drained and rinsed
1/4 cup fresh lemon juice, more to taste
1/2 teaspoon lightly toasted cumin seeds, ground, more to taste
1 garlic clove, minced or puréed (optional)
6 tablespoons extra-virgin olive oil

Steps:

  • Heat a medium-size heavy saucepan over medium-high heat and add freekeh. Toast in the dry pan, shaking pan or stirring, until freekeh becomes fragrant, 2 to 3 minutes. Add 2 cups water and salt and bring to a boil.
  • Reduce heat to low, cover and simmer 20 to 25 minutes or until water has been absorbed. Turn off heat and uncover. Place a clean dish towel over the pot and return lid. Let sit at least 10 minutes. Uncover and allow freekeh to cool another 10 minutes.
  • In a large bowl, combine freekeh, chopped herbs, celery, scallions and chickpeas and toss together. In a small bowl, whisk together lemon juice, cumin, garlic, salt and olive oil; toss with salad. Taste and add more lemon juice if desired. Serve right away or let sit for up to 1 hour before serving.

1/4 cup extra virgin olive oil
1 cup mixed diced 1/3 inch carrot, onion and celery
1 bay leaf
3 cups green wheat (labeled as frik see note)
5 1/2 cups vegetable broth or water
Salt
freshly ground black pepper
4 cups spinach leaves
1 bunch asparagus, trimmed of coarse bottom ends
1 cup baby turnips, halved
1 cup peeled cippoline onions or spring onions, halved if larger than a quarter
1 cup baby carrots, trimmed
1 cup fennel bulb, thinly sliced with core still attached
1 cup yellow or green wax beans, trimmed
1 cup morel or shiitake mushrooms, cleaned and trimmed of stems
1 bunch spring garlic or 1/4 cup small (or halved if large) garlic cloves
5 sprigs fresh thyme
Extra virgin olive oil
1/4 cup parsley leaves
1/4 cup basil leaves
1/4 cup whole mint leaves
Juice and finely grated zest of 1 lemon
1/4 cup calamata or other briny black olives, halved lengthwise

Steps:

  • For the green wheat: Place a medium saucepan over medium heat, and add olive oil, diced vegetables and bay leaf. Stir, cover and cook, stirring occasionally, until tender, about 5 minutes. Add green wheat and cook uncovered, stirring, until lightly browned, 3 to 5 minutes. Add broth or water, and season to taste with salt and pepper. Cover and reduce heat to low. Simmer, stirring every five minutes, for 30 minutes. Meanwhile, prepare roasted vegetables and herb salad.
  • For roasted vegetables: Preheat oven to 400 degrees. Spread vegetables, mushrooms, garlic and thyme in a roasting pan. Lightly coat with olive oil and season liberally with salt and pepper. Roast until just tender (be careful not to overcook), about 20 minutes.
  • For the herb salad: In a medium bowl, combine parsley, basil, mint, lemon juice, lemon zest and olives. Add olive oil to taste, and season with salt and pepper.
  • To serve: When frik is cooked, mix in the spinach just before serving, and adjust salt and pepper to taste. Place a serving of green wheat in center of each of four plates, and arrange roasted vegetables on top as desired. Garnish each plate with herb salad, and serve immediately.
