I found this recipe in a canning book. It look easy, so I tried it. It tastes like the relish in the store. Plus, you can use all those green tomatoes you look at and hate going to waste.

1 quart chopped green tomato
1 large sweet white onion, chopped
1 large green pepper, chopped
2 tablespoons canning salt
1 cup sugar
1 tablespoon prepared mustard
1 teaspoon celery salt
4 whole cloves
1 cup vinegar (5% acidity)

Steps:

  • Combine tomatoes, onion, and pepper in large bowl.
  • Sprinkle salt over vegetables, mix in,and let stand 1 hour.
  • Drain vegetables.
  • Combine drained vegetables, sugar, mustard, and celery salt in a large pot.
  • Tie cloves in cheesecloth and add to mixture.
  • Stir in vinegar and simmer for 20 minutes.
  • Take out spice bag.
  • Pack hot relish into hot jars.
  • Leave 1/4 inch headspace.
  • Place canning lids on jars.
  • Process half pints for 10 minutes in hot water bath.

13 ¼ pounds green tomatoes, cored and cut into chunks
5 red bell peppers, seeded and cut into chunks
4 green bell peppers, seeded and cut into chunks
2 large onions, peeled and cut into chunks
6 apples, cored and cut into chunks
3 large cucumbers - peeled, seeded, and cut into chunks
1 cup salt (scant)
2 quarts distilled white vinegar
1 tablespoon ground allspice
1 tablespoon ground cloves
1 tablespoon ground mustard
1 tablespoon salt
1 tablespoon ground cinnamon
1 tablespoon ground turmeric
5 pounds white sugar
11 (1 pint) canning jars with lids and rings

Steps:

  • Using a food grinder, grind together the green tomatoes, red peppers, green peppers, onions, apples, and cucumbers into a large food-safe container. Mix in 1 scant cup salt, and let stand overnight.
  • The next day, drain off the excess liquid from the ground vegetable mixture.
  • Bring the vinegar to a boil in a large kettle or stockpot. Place the allspice, cloves, mustard, 1 tablespoon of salt, cinnamon, and turmeric into a closely-woven cloth bag, and place the bag into the hot vinegar to boil for about 15 minutes. Remove the spice bag, and stir in the sugar until dissolved. Add the ground vegetable mixture, bring back to a boil, and simmer over medium-low heat, stirring frequently to prevent burning, until the relish is soft and slightly darkened in color, about 20 minutes.
  • Sterilize pint canning jars and lids in boiling water for at least 5 minutes. Pack the relish into the hot, sterilized jars, filling the jars to within 1/4 inch of the top. Run a knife or a thin spatula around the insides of the jars after they have been filled to remove any air bubbles. Wipe the rims of the jars with a moist paper towel to remove any food residue. Top with lids, and screw on rings.
  • Place a rack in the bottom of a large canning kettle, and fill halfway with water. Bring to a boil over high heat, then carefully lower the jars into the pot using a holder. Leave a 2 inch space between the jars. Pour in more boiling water if necessary until the water level is at least 1 inch above the tops of the jars. Bring the water to a full boil, cover the pot, and process for 5 minutes.
  • Remove the jars from the kettle and place onto a cloth-covered or wood surface, several inches apart, until cool. Once cool, press the top of each lid with a finger, ensuring that the seal is tight (lid does not move up or down at all). Store in a cool, dark area.

24 large green tomatoes
3 red bell peppers, halved and seeded
3 green bell peppers, halved and seeded
12 large onions
3 tablespoons celery seed
3 tablespoons mustard seed
1 tablespoon salt
5 cups white sugar
2 cups cider vinegar

Steps:

  • In a grinder or food processor, coarsely grind tomatoes, red bell peppers, green bell peppers, and onions. (You may need to do this in batches.) Line a large colander with cheesecloth, place in sink or in a large bowl, and pour in tomato mixture to drain for 1 hour.
  • In a large, non-aluminum stockpot, combine tomato mixture, celery seed, mustard seed, salt, sugar, and vinegar. Bring to a boil and simmer over low heat 5 minutes, stirring frequently.
  • Sterilize enough jars and lids to hold relish (12 one-pint jars, or 6 one-quart jars). Pack relish into sterilized jars, making sure there are no spaces or air pockets. Fill jars all the way to top. Screw on lids.
  • Place a rack in the bottom of a large stockpot and fill halfway with boiling water. Carefully lower jars into pot using a holder. Leave a 2 inch space between jars. Pour in more boiling water if necessary, until tops of jars are covered by 2 inches of water. Bring water to a full boil, then cover and process for 30 minutes.
  • Remove jars from pot and place on cloth-covered or wood surface, several inches apart, until cool. Once cool, press top of each lid with finger, ensuring that seal is tight (lid does not move up or down at all). Relish can be stored for up to a year.

Cucumber, onion, bell pepper, and spices are all you need to make homemade sweet hot dog relish.

4 to 5 cucumbers
1 medium onion
1 small red bell pepper
2 tablespoons kosher salt (or another non-iodized salt)
1 1/2 teaspoons cornstarch (or ClearJel)
1/2 cup apple cider (or white wine vinegar)
3/4 cup sugar
1/2 teaspoon celery seed
1/4 teaspoon mustard seeds
1/4 teaspoon ground mustard
1/4 teaspoon ground turmeric
1/4 teaspoon ground nutmeg
1 dash black pepper

Steps:

  • Gather the ingredients.
  • In a large, nonreactive bowl, combine cucumbers, onion, bell pepper, and salt. Mix well. If this seems like a lot of salt, don't worry: Most of it is rinsed off later. The salt is there to draw water out of the vegetables, a step that results in better texture and flavor in the finished relish.
  • Cover the bowl of vegetables and leave in the refrigerator for 24 hours.
  • Transfer vegetables to a fine mesh sieve or strainer and let drain for a couple of minutes. Rinse well with cool water and drain again. Get out even more of the liquid by squeezing hard with clean hands or by pressing vegetables against sieve with the back of a wooden spoon.
  • Whisk cornstarch into cool or room temperature vinegar in a medium saucepan. Stir in sugar, celery seed, mustard seeds, mustard, turmeric, nutmeg, and pepper. Bring to a boil over medium heat, stirring often to help dissolve sugar and prevent lumps.
  • Once syrup is boiling and becoming translucent, add vegetables. Simmer, stirring occasionally, for 10 minutes.
  • Scoop hot dog relish into clean, hot canning jars leaving 1/2 inch of headspace. Screw on the lids. If canning, process in a boiling water bath for 10 minutes. Serve as desired.

8 cups finely chopped green tomatoes
2 cups finely chopped onions
4 bell peppers (some red, finely chopped)
1/3 cup pickling salt
2 tablespoons mixed pickling spices
1/2 teaspoon celery seed
2 1/4 cups white vinegar
1 clove garlic (chopped)
1 2/3 cups brown sugar (packed)

Steps:

  • Gather the ingredients.
  • Combine the tomatoes, onions, peppers, and salt in a large stainless steel pan. Cover and let stand in a cool place (about 65 F to 70 F) for 10 to 12 hours or up to overnight.
  • Pour the vegetables into a colander over the sink and let drain. Rinse with cool water and use your hands to squeeze out any excess liquids.
  • Place the pickling spices and celery seeds in a cheesecloth spice bag and tie closed.
  • In a large stainless steel or enamel-lined pan, combine the vinegar, the spice bag, garlic, and brown sugar. Place over high heat and bring to a boil, stirring until the sugar dissolves.
  • Add the drained green tomato mixture and bring the mixture to a boil. Reduce the heat to medium-low and boil gently, stirring often, for 1 hour.
  • While the mixture is cooking, prepare the canner, jars , and lids.
  • Fill the hot, prepared jars with the relish and remove any air bubbles with a small plastic spatula, leaving 1/2-inch headspace. Clean the jar rims and fit with the lids and rings.
  • Process in a covered boiling-water bath canner for 10 minutes. Turn off the heat, remove the cover, and let the jars stand in the hot water for 5 minutes. Remove to a rack to cool completely.
  • Store in a cool, dark spot for up to a year.

4 c ground green tomatoes
4 c ground onions
4 c ground cabbage
4 c ground green peppers
2 red peppers ground
4 c cider vinegar
2 c water
6 c sugar
1/2 c salt
1 Tbsp celery seed
2 Tbsp mustard seed
1 1/2 tsp turmeric, ground

Steps:

  • 1. Day one: Grind all vegtables using coarse blade with food processor, put them in a large bowl, then sprinkle the 1/2 cup of salt over the veggies cover with a towel and let sit over night.
  • 2. Day two: mix the other ingredients together in a large pot, rinse and drain the veggies, add the veggies to the pot, mix thoroughly.
  • 3. heat to a simmer, simmer 5 min. remove from heat. divide into 8 pint jars. seal with new flats and rings. let stand a week before use. Enjoy!!!

3.5 kg pickling cucumbers ((8 lbs))
175 g pickling salt ((1/2 cup / 6 oz))
1 litre white vinegar ((5% acidity or higher. 4 cups / 32 oz))
450 g sugar ((white. 2 cups / 16 oz))
1 tablespoon celery seed
1 tablespoon mustard seed
325 g onion ((finely chopped. 2 1/2 cups / 12 oz / 2 1/2 medium onions))
3 drops green food colouring ((optional. Per per 250 ml / cup / 8 oz relish in jar))

Steps:

  • Wash and scrub the cucumbers under cold running water, trim off both ends, leave skin on. Chop into large chunks, then finely chop in a food processor (use pulse) or put through a food mill. Put in a large pot or very large bowl. Sprinkle with the salt OR salt sub, mix the vegetables and salt with your hands. Top with enough cold water to cover completely. (The exact quantity of water doesn't matter.) Let stand for 2 hours.
  • Meanwhile, you can prep the onion and set aside.
  • Drain the cucumber, rinse and drain again.
  • In large pot, mix together everything from the vinegar down to and including the mustard seed, then stir in the onion and then the cucumber.
  • Bring to a boil, lower to a simmer and simmer for 10 minutes.
  • Pack hot into quarter-litre (1/2 US pint) jars or half-litre (US pint) jars.
  • Leave 2 cm (1/2 inch) headspace for either size jar.
  • Debubble, adjust headspace.
  • Wipe jar rims.
  • Put lids on.
  • Process in a water bath or steam canner.
  • Process either size jar for 15 minutes; increase time as needed for your altitude.
  • Best after at least a month of jar time.

2 pounds Green Tomatoes (fresh, raw)
1/2 Onion (large)
1/2 Red Bell Pepper
1 Jalapeno Pepper
5 Garlic Cloves
1 tablespoon Pickling Spice
4 Chile de Arbol (whole, not chopped)
3/4 cup Apple Cider Vinegar
1 tablespoon Salt

Steps:

  • With food processor, process green tomatoes, onion, red bell pepper, jalapeno peppers and garlic cloves. You want to have small pieces, but you don't want to liquify.
  • Place processed vegetables in cheesecloth and squeeze excess liquid out but you don't need to go completely crazy with this. A little bit of liquid remaining will be okay.
  • Pickling Spice Bag: Prepare a small square of cheesecloth and place pickling spices in the center. Tie the top with a small strip of cheesecloth or baker's twine.
  • Place vegetables into medium saucepan with pickling spice bag, chile de arbol, vinegar and salt. Place pan on stovetop on medium heat until just boiling then allow to simmer uncovered for 30 minutes.
  • Stir occasionally. If it looks like the vegetables are starting to stick to the bottom, add about 1/4 to 1/2 cup water and continue simmering.
  • Remove from heat and allow to cool completely before placing in refrigerator. Remove spice bag before storing. You can also remove the whole chiles, if you like. Serve as a condiment with hot dogs or hamburgers. Serve as a side relish for meats and baked beans.

6 medium (about 2 pounds) green tomatoes, cored and cut up (about 4 cups chopped)
0.5 pound cabbage, cored and cut up (about 3 cups chopped)
3 medium green sweet peppers, seeded and cut up (about 2-1/4 cups chopped)
2 medium red sweet peppers, seeded and cut up (about 1-1/2 cups chopped)
1 large onion, cut up (about 1 cup chopped)
2 tablespoon pickling salt
1.25 cup sugar
2 teaspoon mustard seed
1 teaspoon celery seed
0.5 teaspoon ground turmeric
1.25 cup cider vinegar
0.5 cup water

Steps:

  • Use a food processor to finely chop green tomatoes, cabbage, green and red sweet peppers, and onion, processing a portion at a time, using several on/off turns of the processor. (Or, finely chop by hand.) Place vegetables in a large bowl. Sprinkle with the 2 tablespoons pickling salt; stir well. Cover and chill overnight. Rinse well in colander under running water; drain.
  • In a large pot stir together sugar, mustard seed, celery seed, and turmeric. Stir in vinegar and water. Bring to boiling, stirring to dissolve sugar. Stir in vegetables. Return mixture to boiling, stirring frequently. Remove from heat. Ladle hot relish into hot, sterilized half-pint or pint canning jars, leaving a 1/2-inch head-space. Wipe jar rims and adjust lids. Process in boiling water canner for 5 minutes for half-pints or 10 minutes for pints (start timing when water begins to boil). Store sealed jars up to 3 months. Makes 6 to 7 half-pints or 3 to 4 pints (eighty-four 1-tablespoon servings).

7 pounds green tomatoes (about 20 medium)
4 large onions
2 large red onions
3 large green peppers
2 large sweet red peppers
4 teaspoons canning salt

  • Cut tomatoes, onions and peppers into wedges. In a food processor, cover and process vegetables in batches until finely chopped. Stir in salt. Divide mixture between two strainers and place each over a bowl. Let stand 3 hours., Discard liquid from bowls. Place vegetables in a stockpot; stir in vinegar, sugar, celery seed and mustard seed.
