GREEN TOMATO KETCHUP - QUEBEC STYLE CHOW-CHOW

Green Tomato Ketchup - Quebec Style Chow-Chow image

This is a traditional ketchup from quebec. It's delicious served with meats, but we especially like it with Tortiere. Sometimes fruit (apple or peaches- grated) were added, and that would be added to the saucepan before boiling.

EDITH'S RED TOMATO CHOW-CHOW

Edith's Red Tomato Chow-Chow image

My girlfriend's MIL fashioned this recipe many years ago and it is wonderful! Easy to make, and so good with so many things. Note: The easiest way I have found to sterilize jars is to wash and rinse them well, fill them with boiling water for a few minutes, empty, and keep them hot in a 200°F oven till you are ready to fill them. The flat sealing lids should be boiled for about five minutes, and the rings should be twisted only finger tight. Enjoy these pickles - beats anything you can buy ready-made. They keep for a very long time, which is a bonus.

GREEN TOMATO CHOWCHOW

Green Tomato Chowchow image

Here is a chunky relish of cabbage and bell pepper commonly served in the South with salty cold cuts and meats. It couldn't be simpler: simmer chopped vegetables for 15 minutes in a spiced brine - we use judicious amounts of clove, allspice, cinnamon and toasted coriander - and pack into jars. We tip the balance more toward green tomato than cabbage when green tomatoes are available because we love the tomatillo-like flavor of a green tomato - a near-apple flavor, but without the sweetness. It's a delicious substitute for any relish you would spread over a hot dog or a burger, but we take it in other directions, too. Mixed one-to-one with good mayonnaise, green tomato chowchow makes the perfect dressing for coleslaw. Sometimes we'll strain out the brine before we add the mayonnaise to make a killer tartar sauce. Or if we're feeling indulgent, we'll drain the chowchow, toss it with squid or small bay scallops and flood it with a fruity extra virgin olive oil for easy mock-ceviche.

Yield 2 quarts

Number Of Ingredients 13

4 whole allspice berries
1 teaspoon celery seed
1 teaspoon ground cinnamon
1 teaspoon coriander seed, toasted
2 teaspoons ground turmeric
1 tablespoon kosher salt
1 teaspoon freshly ground black pepper
1 quart apple cider vinegar
1 cup light brown sugar
3 cups green cabbage, cut into small dice (from 1/2 pound green cabbage)
3 cups Spanish onion, cut into small dice (from 1 1/4 pounds Spanish onions)

6 cups green tomatoes, cut into small dice (from 2 1/4 pounds green tomatoes)

Steps:

  • Pound the dry seasonings together in a mortar.
  • Bring vinegar, sugar, and 2/3 cup water to a boil in a large stockpot, stirring to dissolve sugar. Add spices, reduce heat to low and simmer 10 minutes. • With a slotted spoon, transfer the relish to 2 quart jars or 4 pint jars. Fill to 1/4-inch from rim with remaining brine, agitate jars, and let stand 1 minute. Top up with brine, close jars and let them cool. Store jars in refrigerator up to 2 weeks.

CHOW CHOW GREEN TOMATO RELISH RECIPE

Chow Chow Green Tomato Relish Recipe image

Learn how to cook and can this delicious green tomato and cabbage relish recipe that goes great with any hot dog, sausage, or burger.

Provided by Diana Rattray

Categories     Sauces     Condiment

Time 5h20m

Yield 64

Number Of Ingredients 11

5 cups green tomatoes (coarsely chopped)
5 cups cabbage (coarsely chopped)
1 1/2 cups yellow onion (or sweet onion, finely chopped)
2 cups bell pepper (coarsely chopped; at least 1 red bell pepper for color)
2 cloves garlic (finely minced)
1/3 cup pickling and canning salt
2 1/2 cups cider vinegar
1 cup light brown sugar (packed)
1 teaspoon celery seed
1 tablespoon yellow mustard seeds
Optional: 1/2 teaspoon red pepper flakes (or to taste)

Steps:

  • Gather the ingredients.
  • Combine the chopped vegetables in a large nonreactive kettle or bowl. Add the salt and stir to combine thoroughly. Cover and let stand for 4 hours or refrigerate overnight.
  • Prepare the canner and jars . Add water to a large canning kettle with rack and heat to a boil; reduce heat and keep at a simmer. The water should be high enough to be at least 1 inch above the filled jars. We usually fill it about halfway and keep a kettle or saucepan of water boiling on another burner to add to the canning kettle as needed. Wash jars thoroughly and heat water in a small saucepan. Put the lids in the saucepan and bring almost to the boil; lower heat to very low to keep the lids hot.
  • Drain the vegetables and rinse thoroughly.
  • In a large nonreactive kettle, combine the vinegar, brown sugar, celery and yellow mustard seeds, and red pepper flakes. Bring to a boil. Reduce heat to medium-low and continue simmering for 5 minutes.
  • Add the drained vegetables and bring back to a boil. Reduce heat to medium-low and simmer for 10 minutes.
  • With a slotted spoon, pack the vegetables into prepared jars. Cover vegetables with the pickling liquid, leaving approximately 1/4-inch headspace.
  • With a clean dampened cloth, wipe the rims of the jars. Place the flat lids on the jars. Close caps with screw-on rings tightly, but do not over-tighten. Arrange the filled jars in the canning kettle, and add more water so that it is at least 1 inch above the jars.
  • Bring to a full boil. Cover and continue boiling for 10 minutes. Remove the relish to a rack to cool completely.
  • Check for seals . The middle of the caps should have made a popping sound while cooling and will stay depressed.

  • Depending on how fine you want the final product, and the kind of tomatoes you are using (Beefsteak, Roma, etc), you can slice them, cut them into cubes, or chop the tomatoes.

  • Combine tomatoes, onions, celery, and red pepper into a large bowl. Using the ratio of ½ cup pickling salt to 4 cups cold water, cover ingredients completely with salted water. Add as much salted water as necessary to cover the vegetables. For this amount of vegetables, likely at least 1 cup pickling salt dissolved in 8 cups water will be required. Make sure the pickling salt is thoroughly dissolved in the water before pouring over vegetables. Let vegetables soak at room temperature for 7-8 hours. Drain vegetables in large colander. Rinse vegetables with cold water to remove any traces of salted water residue on vegetables. Let vegetables drip in colander for 1 to 1½ hours.
  • Combine vinegar, sugars, and spices into a large stockpot. Bring to a boil, stirring occasionally. Add the drained vegetables and bring to a boil. Boil for 1 to 1½ hours over medium-low heat, until vegetables are cooked, somewhat transparent, and mixture is slightly thickened.
