CANNED GREEN TOMATILLO SAUCE

Tomatillos grow easily in my garden. Every year I have an abundance, so I have started canning them. I use the sauce for chile verde and enchiladas. This will make about 10 to 12 pint-sized jars.

5 pounds fresh tomatillos, husks removed
2 pounds poblano peppers
6 jalapeno pepper, seeded and minced
4 cups onion, chopped
2 cups chicken broth
8 cloves garlic, minced
1 bunch chopped fresh cilantro
¼ cup lime juice
2 tablespoons dried oregano
1 tablespoon seasoned salt

Steps:

  • Blend tomatillos, poblano peppers, jalapeno peppers, onion, chicken broth, and garlic in a food processor or an electric blender in batches.
  • Pour blended mixture into a large stockpot and add cilantro, lime juice, oregano, and seasoned salt. Bring to a boil over high heat; reduce heat and let simmer for 20 minutes.
  • Meanwhile, inspect 10 to 12 pint-sized jars for cracks and rings for rust, discarding any defective ones. Immerse in simmering water until blended mixture is ready. Wash new, unused lids and rings in warm soapy water.
  • Pack sauce into hot, sterilized jars, filling to within 1/4 inch of the top. Run a clean knife or thin spatula around the insides of the jars to remove any air bubbles. Wipe rims with a moist paper towel to remove any residue. Top with lids and screw rings on tightly.
  • Place a rack in the bottom of a large stockpot and fill halfway with water. Bring to a boil and lower jars 2 inches apart into the boiling water using a holder. Pour in more boiling water to cover jars by at least 1 inch. Bring to a rolling boil, cover, and process for 25 minutes.
  • Remove the jars from the stockpot and let rest, several inches apart, for 12 to 24 hours. Press the center of each lid with a finger to ensure the lid does not move up or down. Remove the rings for storage and store in a cool, dark area.

This is a sweet chili sauce made according to an old family recipe. It is great on hamburgers, and pot roast. If you don't can the sauce in jars, it can be refrigerated.

35 fresh tomatoes, peeled, seeded and chopped
3 fresh hot chile peppers, seeded and chopped
4 red bell peppers, cored, seeded and cut into 2-inch pieces
1 large onion, chopped
2 cups apple cider vinegar
⅓ cup fresh lime juice, or amount to taste
1 cup white sugar
1 cup packed brown sugar
1 tablespoon salt, or amount to taste

Steps:

  • Place the tomatoes in a large pot over medium heat, and simmer 1 hour. Skim off any excess liquid or foam. Stir in the chile peppers, bell peppers, onion, vinegar, lime juice, white sugar, brown sugar, and desired amount of salt. Reduce heat to low, and simmer 3 to 5 hours until liquid reduces and thickens. Adjust seasonings to taste.
  • Remove chili sauce from heat, and skim off any foam. Pour into hot, sterilized jars, leaving 1/4 inch headroom. Adjust lids. Process for 10 minutes in a boiling-water bath.

2/3 cups chopped onion
2 tablespoons flour
1 1/2 cups chicken broth
1 - 1 1/2 cups chopped green chilis (mild, medium or hot, this determines the spice)
1 large clove garlic - minced
dash of salt (to taste)
dash of cumin (to taste)

Steps:

  • 1. Melt butter in saucepan over medium heat. 2. Saute onion until soft. Add in flour to butter mixture and make a roux (Here is a great tutorial on on how to make a roux). Add chicken broth to butter mixture and stir until smooth. 3. Add chilies, garlic, salt and cumin and simmer for 10-15 minutes. 4. Summer heat came late and left a bit early this year...leaving lots of green tomatoes! This "throw together" green tomato salsa was declared "the best salsa I've ever had" by my brother-in-law. Cooking time includes canning process.

5 lbs green tomatoes, chopped small (as you prefer for salsa)
6 yellow onions, chopped (4 cups)
3 jalapenos, chopped with seeds (1/2 cup)
4 large red bell peppers, chopped (2 cups)
6 garlic cloves, minced
1 cup fresh cilantro, chopped
1 cup lime juice
1/2 cup vinegar
1 tablespoon salt
1/2 tablespoon cumin
1 tablespoon dried oregano leaves
2 teaspoons pepper
1/4 teaspoon cayenne (optional, to taste)
1 -2 teaspoon sugar

Steps:

  • Combine everything in a large pot, mixing well. Bring to a boil, reduce heat to simmer, and cook for 30-40 minutes, stirring occasionally.
  • To continue canning, bring salsa to a boil.
  • Ladle salsa into hot sterile jars, leaving 1/2 inch headspace. Wipe lids and jar edges clean before finger tightening lids and placing them back in the boiling canning pot.
  • Process (boil) jars for 15 minutes.
  • Remove carefully and let sit for 24 hours. Check lids for seal, and refrigerate any unsealed jars.

2.5 kilo of green tomatoes, roughly diced
200gm onions, finely diced
1 green capsicum, diced
40gm ginger grated
6 cloves of garlic, finely diced
6 green serrano chili, diced
100gm sugar
160ml white vinegar
6 bay leaves
5 cloves
1 cinnamon stick
8 peppercorns
1 ½ tsp salt
Pepper to taste
Small piece of muslin

Steps:

  • While chopping your tomatoes up make sure to discard any imperfections on their skin or interiors. Place all the chopped tomatoes, onion, capsicum, ginger, garlic and chili along with the sugar and vinegar into a large stock pot. Wrap bayleaves, cloves, cinnamon and peppercorns into a piece of muslin and place into the pot.
  • Bring the pot to a boil over a high heat and then reduce to a steady simmer. Allow the mixture to simmer for 30minutes while stirring every 5-8minutes. Towards the end of cooking you will need to stir more frequently to stop it from sticking to the bottom of the pan. It will reduce by a third, once there is no watery liquid sitting on top of the mixture remove the muslin of herbs and spices from the mixture.
  • Remove the pan from the heat and using a stick blender wizz the mixture until it becomes smooth. Return it to a low heat and check that there is no water coming to the surface of the mixture, do this for only a few minutes. You do not want any water in your tomato sauce as it will spoil sooner.
  • Pour the mixture into sterilised bottles. It will keep in a cool and dark place for six months.

This is a recipe I modified from a Ball Blue Book recipe. It's a great way to use up your green tomatoes! Adjust the number of peppers to your taste. Ten will give you medium heat.

7 c chopped green tomatoes
10 jalepeno peppers, chopped & seede
2 c chopped red onions, about two large
4 clove garlic, finely minced
1/2 c lime juice
1/2 c sugar
1/2 c minced fresh cilantro
1/4 c minced fresh thyme
1/8 c minced fresh oregano
1 Tbsp ground cumin
2 tsp gourmet salt blends roasted garlic shallot & pepper salt

Steps:

  • 1. Boil water in canner. Keepjars and lids in simmering water until ready for use but do not boil.
  • 2. Combine tomatoes, peppers, onion, garlic and lime juice in a large saucepan. Bring to a boil. Stir in sugar, cilantro, cumin, oregano, thyme and Gourmet Salt Blends salt. Reduce heat and simmer 5 minutes.
  • 3. Ladle hot salsa into hot jars leaving 1/2 inch headspace. Remove air bubbles by running a spatula around the inside of the jar. Wipe rim with a damp paper towel. Place lids and bands and adjust until fit is fingertip tight.
  • 4. Process for 20 minutes, adjusting for altitude. Remove jars and set on a clean dish towel cool. Check lids for seal after 24 hours.

1 tablespoon dried oregano
2 teaspoons smoked paprika
2 teaspoons ground coriander
1 pound dry pinto beans, soaked overnight, drained and rinsed
3 large green tomatoes, diced or 12 ounces tomatillos, husks removed and diced
6 cups chicken broth, stock or water
1 tablespoon kosher salt
1 bunch cilantro, leaves and tender stems chopped
Sliced avocado
Grated sharp white cheddar cheese
Thinly sliced scallions

Steps:

  • To Sauté The Vegetables: Heat oil in a large stock pot with a tight-fitting lid over medium-high heat. Add onion and cook, stirring occasionally, until translucent. Add garlic, poblano peppers, and jalapeños and continue cooking until browned, about 10 minutes.
  • Add ground beef, chili powder, cumin, oregano, smoked paprika, and coriander and stir, breaking meat up with the back of your spoon. Cook until beef is browned, about 5 minutes more.
  • To Cook The Beans: Add beans, tomatoes or tomatillos, and broth and bring to a boil. Reduce heat to low and simmer, covered until beans are tender, about 2 hours. Add salt and cook another hour. Taste and add more salt as needed; stir in cilantro right before serving.
  • To Serve: Ladle chili into bowls and pass garnishes like grated cheese, sliced scallions, and avocado at the table for everyone to garnish their own bowl.

4 small hot chili peppers

  • Place green tomatoes, bell peppers, onions and chilis in food processor and process till smooth. Place in a very large non-reactive stock pot and cook for 3 hours to reduce.

Easy green tomato sauce for pasta, a surprisingly delicious green tomato recipe perfect for the end of the season.

450 g/ 1 lb green tomatoes (Note 1)
4 garlic cloves
1 tablespoon olive oil
50 ml/ 1.7 fl.oz/ ¼ cup vegetable broth (Note 2)
50 ml/ 1.7 fl.oz/ ¼ cup milk
½ teaspoon sugar
¼ teaspoon red chili flakes (more to taste)
good pinch of fine sea salt and ground black pepper
5 basil leaves
To finish the sauce:
1 tablespoon Parmesan
1 garlic clove
1 tablespoon olive oil
red chili flakes (to taste)
2-3 basil leaves
fine sea salt and black pepper (to taste)
450 g/ 1 lb spaghetti

Steps:

  • Clean the green tomatoes, chop them roughly and place them in a food processor. Blend roughly, it should not become a puree. If you are making more sauce, blend the tomatoes in batches.
  • Chop the garlic. Heat the oil in a large nonstick saucepan. Add the garlic and stir continuously for 30 seconds, it should not darken.
  • Add the tomatoes, vegetable broth, milk, sugar, chili, torn basil leaves, salt, and pepper. Stir well. Stir and simmer on low heat, covered, for 20-25 minutes until the tomatoes are soft. Stir often, as the sauce tends to stick at the bottom of the pan. Add a splash of extra water or milk if it thickens too much.
  • Finish the sauce by adding the grated Parmesan, grated garlic clove, olive oil, chili flakes, basil, salt, and pepper.
  • Cook the pasta according to the packet's instructions. Drain and reserve about 1/3 cup of the cooking water.
  • Add about ¼ - 1/3 cup of the reserved pasta cooking water to the sauce if it is too thick. Mix with pasta and serve immediately.

4 quarts chopped peeled tomatoes (about 24 large)
2 cups chopped onions
2 cups chopped sweet red peppers (about 4 medium)
1 serrano pepper, finely chopped
1 cup sugar
3 tablespoons salt
3 tablespoons mixed pickling spices
1 tablespoon celery seed
1 tablespoon mustard seed
2-1/2 cups white vinegar

Steps:

  • In a stock pot, combine the tomatoes, onions, peppers, sugar and salt; simmer, uncovered, for 45 minutes. , Place the pickling spices, celery seed and mustard seed on a double thickness of cheesecloth; bring up corners of cloth and tie with string to form a bag; add to tomato mixture. Cook for 45 minutes or until very thick, stirring frequently. , Add vinegar; cook to desired thickness. Discard spice bag. Carefully ladle hot mixture into hot pint jars, leaving 1/2-in. headspace. Adjust caps. Process for 15 minutes in a boiling-water canner.

· 2 cups sweet green peppers, chopped, used 2 full peppers, yellow/red
· 3 medium chopped onions,
· 6 red peppers, seeded and chopped, All Jalapeno, cored but left many seeds
· 2 Anaheim peppers seeded and chopped, Cored but left many seeds
· 55 Romo tomatoes(5 quarts peeled, chopped)
· 4 Tbl Chopped Garlic
· 1 Tbl. salt
· 1 1/2 cup vinegar
· 1 cup sugar (used ¾ cup brown, keep at 1 cup)
· 1 Tbls. celery seed
· 1 tsp Nutmeg
· 1 tsp. ground allspice
· 1 tsp. ground ginger
· 1 tsp. ground cinnamon
· 1 tsp. ground cloves
· 1 tsp. Coriander seed
The last several ingredients basically duplicate a typical pickeling spice bag normally using whole elements and hung while cooking.
Flavor is bolder, just warm enough to earn its namesake, not at all sweet!
Leaving many seeds with the peppers is what I think makes this version warmer.

Steps:

  • Combine and add all ingredients to a heavy sauce pan or cast iron skillet. Bring to a boil and simmer 1 to 2 hours or till desired thickness has been reached. Stir often to prevent sticking. Pack hot jars with hot prepared tomato mixture leaving 1/2-inch head space. Remove air bubbles. Wipe rim and screw threads and adjust lids and screw bands. Hot Pack 15 minutes Follow all normal canning guidelines.
