1-1/2 cups sugar
5 tablespoons all-purpose flour
1 teaspoon ground cinnamon
Pinch salt
3 cups thinly sliced green tomatoes (4 to 5 medium)
1 tablespoon cider vinegar
Dough for double-crust pie
1 tablespoon butter

Steps:

  • Preheat oven to 350°. In a bowl, combine sugar, flour, cinnamon and salt. Add tomatoes and vinegar; toss to coat. On a lightly floured surface, roll one half of dough to a 1/8-in.-thick circle; transfer to a 9-in. pie plate. Trim to 1/2 in. beyond rim of plate. Add filling; dot with butter., Roll remaining dough to a 1/8-in.-thick circle; cut into 1-in.-wide strips. Arrange over filling in a lattice pattern. Trim and seal strips to edge of bottom crust; flute edge., Bake until tomatoes are tender, about 1 hour. Cool on a wire rack to room temperature. Store in the refrigerator.

Green tomatoes aren't just for frying; you can enjoy also them in a sweet and juicy pie. Green tomato pies have been called the "apple pies of summer" because, when baked with warm spices such as cinnamon and cloves, unripe green tomatoes take on fruity notes similar to Granny Smith apples or rhubarb. Top with a dollop of sweetened whipped cream or your favorite ice cream. When you get them home from the market, store green tomatoes in the refrigerator to keep them from ripening. As delicious as the filling is, the bacon dripping-flavored crust is also an integral part in making this a fantastic recipe. The dough can be made up to 3 days in advance and refrigerated, or 2 months ahead and frozen.

Steps:

  • Prepare the Crust: Place flour, sugar, and salt in a food processor; pulse to combine, about 3 times. Add butter and drippings; pulse until mixture resembles coarse crumbs, about 10 times. Gradually add 1⁄2 cup cold water, pulsing until mixture forms a dough, about 5 times. Turn out onto a lightly floured surface. Divide dough in half; shape into 2 disks. Cover disks tightly in plastic wrap. Chill until firm, up to 1 day.

2 cups seeded and diced green tomatoes
2 apples peeled, cored and cut into chunks
1 teaspoon lemon zest
1/4 teaspoon lemon juice
1 tablespoon cider vinegar
1/2 teaspoon salt
1 1/3 cup sugar
3 tablespoon all-purpose flour
1/2 teaspoon ground cinnamon
1/4 teaspoon ground ginger
1 (9-inch) double pie pastry
1 1/2 tablespoon butter, cut into pieces

Steps:

  • Preheat oven to 425 degrees F.
  • Wash raisins and set aside. In a large bowl combine the tomatoes, apples, lemon rind, lemon juice, and vinegar.
  • In a separate bowl, combine the salt, sugar, flour, cinnamon and ginger and mix well.
  • Roll out 1 of the pie crusts to fit a pie plate and place in the plate. Set aside.
  • Add dry ingredients into the wet ingredients and stir just until combined. Pour into pie shell. Dot top with butter.

I did try peeling the tomatoes first, dropping them in boiling water for a few minutes, thinking the skins might be tough. But the skins refused to budge, so I took it as a sign they weren't meant to be peeled. In the finished chutney, they'd softened nicely so my concerns were unfounded. If you don't have shallots, use one red onion, thinly sliced. To make sure to stir continuously during the last few minutes of cooking, just to make sure nothing burns as the chutney turns jam-like. I'd didn't preserve them in jars using any canning method, figuring I'd eat it within a month or so. If you want, there's a link at the end of the recipe for more information about canning chutney.

2 firm apples (cored, and cut into chunks (peeled or unpeeled))
1 cup (100g) peeled and sliced shallots
1 to 2 dried chiles (split and seeded, or 1 fresh chile, seeded and finely chopped)
1/3 cup (65g) chopped candied ginger
1 cup (250ml) apple cider vinegar
1 cup (160g) golden raisins
1 cup (180g) light or dark brown sugar
1 tablespoon yellow or black mustard seeds

1/2 teaspoon ground allspice
zest of one orange or 1/4 cup (45g) chopped candied orange peel

Steps:

  • Mix together all the ingredients in a large, non-reactive pot.
  • Bring to a boil, then reduce heat to a low boil and cook, stirring frequently, for 45 minutes, until the mixture is thick and jam-like.
  • Once finished, ladle the chutney into clean jars.

  • Cook the mixture slowly until it is tender and thick, about 1 hour or more. Stir frequently to prevent sticking.
  • To can, pour boiling mixture into hot, sterile jars , leaving 1/2-inch headspace; seal promptly .
  • Process in a boiling water bath for 20 minutes. Store in a cool dry place.
  • To freeze, pack cold mincemeat into freezer jars or containers, leaving about an inch headspace for expansion. Seal and freeze promptly.

2 pie crusts (either your own recipe, Most Incredible No Fail Pie Crust, or store bought)
3 cups green tomatoes, sliced
1 large apple, peeled and diced (Granny Smith apple preferred, but any good baking apples will do)
1 tablespoon lemon juice (fresh is best)
1/2 cup sugar
1/2 cup light brown sugar
2 tablespoons flour
1 teaspoon cinnamon
1/2 teaspoon salt
4 tablespoons butter

  • Preheat oven to 425°F.
  • Toss tomatoes and apples in a large bowl with lemon juice.

Add the lemon juice to prevent discoloration of the apples. Mound the apple, tomato mixture into the pie dough, mounding it slightly in the center. Dot with the butter. Add the second pastry dough on top and crimp the edges to seal. Brush the top of the pastry with the milk and sprinkle the toasted fennel and ground cardamom on top. Bake the pie for 10 minutes at 450 degrees, and then turn the heat down to 350 degrees. Bake for another 35 minutes, until the crust is golden. Let cool on a rack.
