- In a large saucepan, bring water to a boil; remove from heat. Add tea bags and lemon thyme sprigs; steep, covered, 3 minutes. Discard tea bags; steep, covered, 3 minutes longer. Strain tea. Add honey and lemon juice; stir until honey is dissolved. Stir in sugar if desired. Serve immediately.

MATCHA GREEN TEA CUPCAKES

- Preheat the oven to 350 F, place cupcake liners in cupcake pan and set aside.
- In a large mixing bowl, whisk together the sifted flour, baking soda, baking powder, salt and matcha green tea powder.
- In the bowl of a stand mixer fitted with the paddle attachment, or using an electric mixer, combine the butter and sugar together on medium-high speed until creamed together, and smooth. Add the oil, and mix together until incorporated. With the mixer running on low, add the eggs, one at a time, then the vanilla extract.
- Scrape down the mixing bowl with a rubber spatula as necessary. With the mixer still on low, add half of the flour mixture to the batter, followed by the buttermilk, then the remaining flour mixture. Mix just until completely incorporated.
- Fill cupcake liners just under half full with batter (about a ¼ cup). Bake for 21 minutes or until a toothpick comes out clean when inserted into the middle.
- Let the cupcakes cool a bit then transfer to a cooling rack to cool completely.
- While the cupcakes are baking make the frosting.
- Juice and zest a large lemon. In the bowl of a mixer beat cream cheese, butter, lemon juice and lemon zest until blended.
- Slowly mix in Powdered Sugar a cup at a time and continue to mix until sugar is incorporated.
- Place frosting in a pastry bag fitted with whichever piping tip you desire and frost the cupcakes once completely cool.
GREEN TEA WITH LEMON CAKE

- Heat oven to 350°F. Grease bottoms and sides of 2 (9-inch) round pans with shortening; lightly flour. In 1-cup microwavable measuring cup, stir tea powder into milk. Microwave 30 to 45 seconds on High or until warm. Stir until tea is dissolved; cool 10 minutes.
- In large bowl, beat tea mixture and all remaining cake ingredients except egg whites with electric mixer on low speed 30 seconds. Beat on high speed 2 minutes, scraping bowl occasionally. Beat in egg whites on high speed 2 minutes, scraping bowl occasionally. Pour into pans.
- Bake 30 to 35 minutes, or until toothpick inserted in center comes out clean. Cool 10 minutes; remove from pans to cooling racks. Cool completely, about 1 hour.
- Meanwhile, in medium bowl, beat 2 1/2 cups butter, 4 teaspoons lemon peel and lemon juice with electric mixer on medium speed 30 seconds. Gradually beat in powdered sugar. Beat 2 to 3 minutes longer or until light and fluffy.
- Place one cake layer on cake plate, top side down. Spread with 1 1/2 cups frosting. Top with second layer, top side up. Frost side and top of cake. Decorate as desired with remaining frosting. Garnish with lemon peel.

MEYER LEMON AND MATCHA GREEN TEA MARBLED BUNDT CAKE
Meyer lemons are a cross between the regular store bought lemons and oranges and have a fragrant sweet scent and flavor. You can find them at Farmers markets or some upscale grocery stores. If you can't find Meyer lemons, feel free to substitute an even mix of orange and lemon in it's place. You can find Matcha green tea powder at Asian grocery stores, some upscale markets or online.

- In 1-cup glass measuring cup, measure boiling water; add tea bags. Let steep 5 minutes. Squeeze liquid from tea bags into measuring cup. If necessary, add additional water to make 3/4 cup. Let tea stand until room temperature, about 1 hour.
- Heat oven to 350°F. Place paper baking cup in each of 24 regular-size muffin cups, grease bottoms and sides of muffin cups with shortening and lightly flour, or spray with baking spray with flour.
- In medium bowl, mix flour, baking powder and salt; set aside.
- In large bowl, beat 1 cup butter with electric mixer on medium speed 30 seconds. Gradually add granulated sugar, about 1/4 cup at a time, beating well after each addition and scraping bowl occasionally. Beat 2 minutes longer. Add eggs, one at a time, beating well after each addition. Beat in 2 tablespoons lemon peel and 1 teaspoon vanilla. On low speed, alternately add flour mixture, about one-third at a time, and 2/3 cup brewed tea, about half at a time, beating just until blended. (Reserve remaining tea for frosting.)
- Divide batter evenly among muffin cups, filling each with about 3 tablespoons batter or until about two-thirds full.
- Bake 20 to 25 minutes or until toothpick inserted in center comes out clean. Cool 5 minutes. Remove cupcakes from pans; place on cooling racks. Cool completely, about 30 minutes.
- In medium bowl, beat cream cheese, 1/4 cup butter, 2 teaspoons lemon peel and 1 teaspoon vanilla with electric mixer on low speed until smooth. Gradually beat in powdered sugar, 1 cup at a time, until smooth. Beat in 1 to 2 teaspoons of the reserved tea, 1 teaspoon at a time, until smooth and spreadable.
- Pipe or spread about 2 tablespoons frosting on top of each cupcake. Just before serving, place fortune cookie on edge of frosting on each cupcake to resemble tea cup handle. Garnish with lemon peel. Store covered in refrigerator.

COPYCAT GREEN TEA LEMON DRINK
This is my version of Lipton's Diet Lemon Green Tea drink, without all that sodium!!! I always seem to have a drink going and I really hate drinking plain water, so I figure I might as well get some extra benefits by drinking green tea with all those wonderful oxidents. I have to watch my sugar intake, so I purposely made it low in sugar...but this can be flavored to personal preference. I literally make a jug of this each day and go through the whole thing. - Brew the tea in a large tea pot. Timing depends on how strong you like your tea. I usually let it sit for 15 minutes then dilute with hot water if needed.

- Preheat the oven to 325°F/160°C.
- Separate three eggs. Egg yolks in one and whites in another stainless steel bowl.
- Whisk the eggs yolks with the sugar in ingredient (1), then add the oil and subsequently the water. Mix it until homogenous.
- Sieve all the ingredients in (2). Add the sieved ingredients to the egg yolk batter. Mix until homogenous.
- Beat the egg whites until it becomes foamy. Add the castor sugar and cream of tartar. Continue beating at medium speed until it forms firm peaks.
- Add 1/3 of the meringue to the batter, gently mix well.
- Divide the remaining meringue into the 2 portions. Add the first portion to the batter and fold in the meringue gently.
- Once it is almost homogenous, add the second portion. Fold until only traces of meringue are visible.
- Pour the batter into the tube pan.
- Bake at 325°F/160°C top temperature and 375°F/180°C bottom temperature.
- Bake for 25 minutes, check if the top of the cake is too brown or about to crack. Cover with aluminum foil or a small metal tray if necessary.
- Continue to bake for another 40 minutes or until it is cooked.
- Invert the cake on a wire rack. Let it cools fully.
- Lightly tap the cake pan with your palm, while rotating the pan. The cake will eventually detach from the pan.
- Squeeze the side of the cake close to the base until the base detaches from the cake. Remove the base. Serve.
