GREEN TEA WITH GRAPEFRUIT
Combine green whole leaf tea with grapefruit slices and a sprig of rosemary to make this refreshing tea blend. Sweeten with honey or agave syrup to taste

Steps:
- Pour 150ml cold water into a large heatproof jug then top up with 450ml boiling water. Add the tea leaves and leave to steep for 2 mins.
- Meanwhile, fill your teapot with boiling water to warm it. Once the tea has steeped, pour away the water in the teapot then add the grapefruit and rosemary. Strain the green tea into the teapot, leaving the tea leaves behind. Don't throw the leaves away - you can re-brew them again for another pot that same day. (For the second brew, make sure you let the mixture steep for 3-4 mins.)
- Let the grapefruit and rosemary infuse for a few moments, then serve. Add honey or agave syrup to sweeten if you like.

- Instructions Pour the boiling water into a pan and place the tea bags into the water to steep for 3 minutes Add the agave nectar and the juice from the squeezed half of the grapefruit and stir. Leave in the fridge until cooled, alternatively to speed up the process you can use a bar mixer filled with ice and shake the tea until chilled in batches. Pour the chilled tea into a jar with ice and add the remaining chopped grapefruit, lemon, and mint ready to serve.

ICED PASSION-FRUIT GREEN TEA

- Put lemon zest into a large cup or mug. Cover with 2 teaspoons boiling water and let steep for about 3 minutes. Stir in the green tea powder and hot water. Add the grapefruit juice, lemon juice and honey. Mix well and serve.

- Boil 8 cups water. Pour into a clear pitcher. Add 6-8 green tea bags and steep for 3-5 minutes or to desired strength. Remove tea bags and refrigerate.
- Place strawberries in a food processor and pulse gently until roughly chopped. In a pourable container, combine strawberries, orange juice and lime zest. Pour into ice cube trays. Freeze for 2 hours or until set.
- To serve, fill glasses with ice cubes and top with chilled green tea. Garnish with lime slices.
