Steps:
- In a small saucepan, bring 2 cups water to a boil. Remove from the heat; add tea bags. Cover and steep for 5 minutes. Discard tea bags., In a large saucepan, bring sugar and remaining water to a boil. Cook and stir until sugar is dissolved. Remove from the heat; stir in the juices and green tea. , Fill cylinder of ice cream freezer; freeze according to manufacturer's directions. Transfer sorbet to a freezer container; cover and freeze for 4 hours or until firm.

- In a small saucepan, bring the sugar and orange and lime juices to a boil. Cook and stir until sugar is dissolved; set aside to cool., Place the honeydew in a food processor; add sugar syrup and lime and lemon zests. Cover and process for 1-2 minutes or until smooth. , Transfer to an 8-in. square baking dish. Freeze for 1 hour or until edges begin to firm; stir. Freeze 3 hours longer or until firm., Just before serving, transfer to a food processor; cover and process for 1-2 minutes or until smooth.

This version of a green tea smoothie was found in the May 2007 cookbooklet Smoothies & Summer Drinks. Preparation time does not include time needed for brewed tea to chill completely.

Steps:
- Place tea bags in heatproof mug, then add boiling water & steep for 5 minutes.
- Remove & discard tea bags, & refrigerate brewed tea until cold.
- Place chilled tea, sugar, lemon juice, lemon sorbet & 4 ice cubes in blender, blending on high until mixture is frothy & ice cubes finely ground, up to 1 minute.
- Pour into pitcher, then add club soda & stir carefully to mix.
- Pour into 2 tall glasses & enjoy!

- Place the water and gelatin in a medium saucepan; let dissolve for 5 minutes. Add sugar and corn syrup, bring to a boil, and cook over medium heat until the sugar is dissolved, about 2 minutes. Add the tea bags, remove pan from heat, and allow bags to steep for 10 to 15 minutes to infuse the flavor.
- Fill a large bowl with ice and water. Remove tea bags; transfer mixture to a bowl set in the ice bath to cool. Add the lemon juice and food coloring, 1 drop at a time, until the desired shade is reached. The color will lighten slightly when frozen.
- Freeze mixture in an ice-cream maker according to the manufacturer's directions until set but not hard. Transfer to a chilled loaf pan, wrap with plastic, and place in the freezer until firm, 4 hours or overnight. Serve garnished with Chinese hat tuiles.

- The first thing you need to do is “muddle” or crush the mint leaves. The term “muddle” in drink recipes, like Mint Julep, what it means basically is crush the leaves so that the oil can seep through. So to crush the leaves, use a mortar and pestle. Place the leaves in it with the teaspoon of sugar, and crush it till you see the sugar is evenly disturbed and looks like it is a bit absorbed by the oil from the leaves. If you don’t have a mortal and Pestle than simply roll the leaves in your hands with the sugar. Roll the mint like you are wadding up tissue.
- Next, after the water is boiling add the leaves to the water and let it boil for a minute or two longer with the leaves.
