SPAM SPRING CHILI
This recipe comes from my favorite cookbook. I was a bit aprehensive about making this one because I'm not a big Spam fan, but it's a wonderful soup. Even the kids think so!

Steps:
- Coat large saucepan with nonstick cooking spray.
- Saute garlic over medium heat 1 minute.
- Add bell peppers, green onion, chilies, jalapenos, oregano, and cumin; saute 5 minutes.
- Stir in beans and broth.
- Bring to a boil and cover.
- Reduce heat and simmer for 10 minutes.
- Stir in Spam.
- Simmer 2 additional minutes.

GREEN CHILI FRIES
I love green chili, and french fries, and cheese 3 of my foods. All in one dish can't get any better than that. I make green chili at least once ever 2 months. I do not eat legumes (beans)......except for green beans. Any way this is how I like to make my chili cheese fries. Hope you all enjoy.

Steps:
- Peel and cut potatoes into french fry sticks.
- Either fry potatoes in oil or bake in a 400 oven for 15 to 20 minutes.
- Heat green chili in a saucepan.
- When potatoes are done place on a broil proof pan, I use a metal pie pan, pour green chili on top then sprinkle with cheese.
- Place back into a broiler for 5 minutes to melt cheese.
- Optional toppings: sour cream, onions, jalapenos, or guacamole.

SPRING CHILI
I know there are thousands of recipes for chili out there, but this is how I like to make it when spring comes and I can use the first herbs and veggies of the season.

Steps:
- Heat up a dutch oven on medium heat.
- Melt 1 tablespoon of butter.
- Chop the green onion, green part included, and put into pot. Stir and let cook 2 minutes.
- Smash and peel one clove of garlic. Mince it very finely. Add to green onion.
- Chop yellow or white onion and add it to the pot. Cook this all for 5 minutes.
- Add ground beef. Cook, stirring occasionally, until browned.
- Chop and add parsley and celery. Cook for 1-2 more minutes.
- Add beans and tomatoes. Add 1/3 cup water if it's too thick.
- Add spices. Add salt and pepper to your taste and stir thoroughly. Turn heat up to high.
- Let it come to a boil and boil for 1 minute. Turn down heat and simmer, covered for 10 minutes.
- Enjoy!

GREEN CHILI CHEESE FRIES
This is too simple to be this good. I cannot remember where I first had these but they have been a favorite of my family for years! You will end up cleaning your plate with your fingers.

Steps:
- Melt the velvetta in a double boiler (pot of boiling water on bottom, bowl on top, velvetta inside bowl). When melted add the green chili's (juice and all).
- You may like more green chili's or less. Taste it after the first 2 cans and add to your taste. (Ive added 4 cans before!).
- Serve over baked french fries.
- (Feel free to just spoon directly into mouth also).

I love green chiles and this hits the spot! I just toss together a tomato and cucumber salad with this and I have dinner!

- Pre-bake the pie crust about 10 minutes at 375 degrees F and let it cool for a few minutes Spread 1 cup jack cheese and 1 cup cheddar on the bottom of pie crust.
- mix the eggs, half and half, chiles,and cumin and pour into pie crust.
- Salt and pepper to your taste and add the remaining 3/4 cup of jack cheese to the top Bake at 325 degrees F for 40 minutes.
