This chopped green salad will amaze everyone around the table! Homemade Italian dressing, crunchy veggies and Parmesan cheese combine into one extraordinary side salad.

1 recipe Homemade Italian Dressing
1 Romaine heart (3 cups)
5 cups leafy lettuce
1 large shallot
1 English cucumber (2 cups chopped)
1/2 cup cherry tomatoes
1/2 cup ripe green olives, halved
1/2 cup jarred sliced pepperoncini
1/4 cup Parmesan shavings or shreds, plus more to serve
1/4 teaspoon red pepper flakes, optional

Steps:

  • Make the Homemade Italian Dressing.
  • Chop romaine and lettuce. Thinly slice the shallot. Peel and chop cucumber. Slice tomatoes and olives in half.
  • Mix together all the ingredients for the salad, including the dressing, and toss to combine. If making in advance, refrigerate the components separately; bring the dressing to room temperature before serving.

Garlicky toasted oats and a goat cheese vinaigrette turn green salad into something very special.

3 large garlic cloves
1 c. old-fashioned rolled oats
1 tbsp. melted unsalted butter
2 tbsp. honey
salt
5 oz. soft goat cheese
2 tbsp. flat-leaf parsley leaves
2 tsp. thyme leaves
2 tsp. red wine vinegar
1 scallion
1/2 c. skim milk
1/4 c. extra-virgin olive oil
Freshly ground pepper
8 c. packed Boston lettuce leaves (from 1 large head)
16 cherry tomatoes

Steps:

  • Preheat the oven to 300°F. In a baking pan, toss the garlic with the oats, butter, and honey and season lightly with salt. Spread the oats in an even layer and bake for about 25 minutes, stirring occasionally, until lightly browned. Spread the crunch on a plate and let cool completely, until crisp.
  • Meanwhile, in a blender, combine the goat cheese, parsley, thyme, vinegar, scallion, skim milk, and olive oil and blend until smooth. Scrape the dressing into a bowl and season with salt and pepper.
  • In a large bowl, toss the lettuce and tomatoes with 1/2 cup of the dressing. Sprinkle some of the crunch over the salad and serve. Reserve the remaining dressing and crunch for another use.

6 tablespoons olive oil
2 tablespoons fresh lemon juice
1 tablespoon chopped garlic
1 teaspoon red wine vinegar
1 large head red leaf lettuce, torn into bite-size pieces
3 large plum tomatoes, seeded, coarsely chopped
1/2 cucumber, peeled, seeded, coarsely chopped
1/2 cup pitted black olives (preferably brine-cured), coarsely chopped
3/4 cup crumbled feta cheese

Steps:

  • Whisk first 4 ingredients in small bowl until blended. Season to taste with salt and pepper. (Can be prepared 3 hours ahead. Let stand at room temperature. Rewhisk before using.)
  • Combine lettuce, tomatoes, cucumber and olives in bowl. Toss with dressing. Sprinkle cheese over and serve.

CRUNCHY SPRING ICEBERG SALAD



Crunchy Spring Iceberg Salad image

A big plate of greens may feel virtuous, but this one is also luxurious. This is a very green salad, with chunks of crisp iceberg lettuce serving as a bed for briefly blanched peas and asparagus, topped with a cooling-yet-spicy cilantro yogurt. Tearing the iceberg into bite-size chunks makes this an easy-to-eat salad, no knife required. It's particularly great for outdoor dining or for those who need to eat with one hand. (We see you, new parents.) The feta adds lovely hints of tang and saltiness that work well with the herbaceous yogurt. The peas and asparagus bring freshness; you could also use other springtime staples such as snow peas, sugar snap peas or sliced radish. Serve with jammy boiled eggs for something heartier.

Salt and black pepper
2 cups frozen peas
16 to 20 asparagus spears, trimmed and sliced into 1-inch pieces (about 12 ounces)
1 (1½-pound) medium head iceberg lettuce
6 ounces feta, drained and broken into chunks
Handful of cilantro leaves, for serving
1 cup full-fat Greek yogurt
1 cup chopped cilantro (leaves and tender stems from about ½ bunch)
2 tablespoons extra-virgin olive oil
Juice of ½ lemon or lime (1 to 2 tablespoons)
1 garlic clove, peeled and roughly chopped
1 teaspoon kosher salt (such as Diamond Crystal)
1 to 2 jalapeños or serrano chiles, trimmed and roughly chopped

Steps:

  • Prepare the salad: Bring a medium saucepan of salted water to the boil. Add the frozen peas and asparagus, and cook for 1 to 2 minutes until the asparagus and peas are bright green and crisp tender. Drain and run under cold water until they are cold. Leave to drain.
  • Prepare the lettuce: Run a sharp paring knife around the core and gently pull it out. Remove the outer layer of the lettuce and discard. Tear the lettuce into large chunks. Wash the leaves and allow them to dry in a colander. Pat them dry with a clean kitchen towel.
  • Prepare the spicy cilantro yogurt: To a blender or small food processor, add the yogurt, cilantro, olive oil, lemon juice, garlic, salt and 1 jalapeño. Blitz until smooth. (Add a teaspoon of water at a time to get the mixture moving in the blender if necessary.) Taste and add the second jalapeño if you would like it spicier.
  • Serve as one large salad or divide among four individual serving plates: Add the lettuce chunks to the plate, and scatter the asparagus and peas on top and around the lettuce. Spoon the spicy cilantro yogurt all over the vegetables, dot with feta and squeeze the juice from the lemon half over everything. Season with salt and black pepper, and top with a few cilantro leaves.

1 large head Romaine lettuce (or another variety, if desired), about 1 1/4 to 1 1/2 pounds
1 large clove garlic, peeled, crushed and finely chopped
1 tablespoon Dijon-style mustard
1 tablespoon red wine vinegar
1/4 teaspoon salt
1/4 teaspoon freshly ground black pepper
3 tablespoons peanut, canola or virgin olive oil

Steps:

  • Separate the lettuce leaves, removing and discarding damaged or wilted areas, and break or cut them into 2-inch pieces. (There should be about eight loose cups.) Wash the lettuce in a basin of cool water, drain and dry thoroughly, preferably in a salad spinner, so no water remains.
  • Place all the dressing ingredients in a bowl large enough to hold the salad greens, and whisk briefly to mix but not to emulsify.
  • Add the greens, and toss well. Serve with the Cornish hens.
