FROZEN GREEN PEAS
Steps:
- Place the gallon of water and kosher salt into an 8-quart pot and place over high heat. Bring to a boil. Once boiling, add the peas and cook for 1 minute. Immediately drain in a colander and then transfer to a container with the 2 quarts of water and the ice. Shock for 1 minute. Pour the peas back through the colander and transfer to a half sheet pan lined with 3 layers of paper towels. Pat dry with additional paper towels. Place the tray in the refrigerator for 1 hour.
- After 1 hour, remove the paper towels and place the sheet pan on the bottom of the freezer. Leave the peas on the sheet pan for 1 hour. Once frozen, transfer them into a 1 gallon zip-top bag. Lay the bag flat on a counter and using a straw, suck out any remaining air in the bag. Label and return to the freezer.

Steps:
- Warm the olive oil in a large pot over medium heat. Add the diced onion and cook until the onion has softened and is turning translucent, about 5 minutes.
- Add the peas and cook stirring frequently about 1 minute.
- Then add vegetable broth (or water), raise the heat, bring to a boil and stir in pasta and salt (I use 1 tsp of salt and then I adjust the seasoning at the end). You might need to add or to reduce the amount of water according to the type of pasta.
- Cover with a lid, reduce the heat and cook your pasta in the starchy water. During the cooking time, you need to stir often until the water is absorbed, otherwise, it will stick to the bottom. The water should barely cover the pasta, but it's fine, add extra water gradually only if needed.
- Cook until ready but firm to the bite. Turn off the heat and stir in freshly grated parmesan cheese until melted. Taste and adjust the seasoning.
- Serve immediately with a drizzle of olive oil, black pepper, and extra parmesan cheese if you like. Enjoy!

- To Shell: Fresh green peas or English peas should be shelled before cooking. Simply snap off the top of the pod, and pull the string down the side of the pod. Remove peas, and rinse in cold water; drain. (For sugar or edible- pod peas remove the tips and rinse in cold water.)
- To Boil: Fill a large Dutch oven half full of water; add salt and bring to a rolling boil. Add shelled peas; bring back to a boil. Cook 6 minutes or until peas are tender. Drain well. Season and serve immediately.
- Note: If green peas are to be served cold in salads, drop cooked peas immediately into cold water. Cool completely. Drain well.
