EASY COLD GREEN BEAN SALAD

Easy Cold Green Bean Salad image

What makes this cold green bean salad so good is that the beans marinate while they are still warm--that way the beans soak up the vinaigrette and become more flavorful.

GRANNY'S VINEGAR GREEN BEANS

Granny's Vinegar Green Beans image

My 100-year-old grandmother (who everyone calls granny)used to make these green beans when I was a child. She picked the beans fresh from her large backyard garden. Although I have never been a green bean fan, my husband is, and he loves this old time dish!

Provided by Martha Price

Categories     Vegetables

Time 45m

Number Of Ingredients 6

2 lb fresh green beans
1 small onion, thinly sliced
6 slice bacon, coarsely chopped
2 large eggs
1/2 c cider vinegar
1/4 c sugar

Steps:

  • 1. Trim bean; cut in half if extra long. Cook in boiling salted water until tender. Drain, then place in a warm serving dish.
  • 2. Put onion and bacon in a small skillet and saute until bacon is crisp.
  • 3. Whisk together eggs, vinegar and sugar in a small bowl, then whisk this mixture into skillet. Heat. When sauce is hot (don't overheat or you will 'scramble' the eggs!), pour over green beans; toss and serve.
  • 4. *I know there is a concern nowadays about consuming uncooked eggs. Although the eggs in this dish are not fully cooked, they are heated until hot (perhaps 'pasturized'?) - as in Spaghetti Carbonara.

GRANDMA'S GREEN BEANS WITH BACON VINAIGRETTE

Grandma's Green Beans with Bacon Vinaigrette image

Ridiculously good beans that make a great side dish to just about anything. One of those recipes that grandma made for years that we could never get enough of. Garnish with sliced or slivered almonds.

Provided by Sarahbeara

Categories     Side Dish     Vegetables     Green Beans

Time 30m

Yield 8

Number Of Ingredients 8

4 slices bacon
2 pounds fresh green beans, trimmed
½ cup finely chopped onion
½ cup brown sugar
¼ cup white vinegar
½ teaspoon salt
½ teaspoon dry mustard
ground black pepper to taste

Steps:

  • Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until crisp, about 10 minutes.
  • Meanwhile, place a steamer insert into a saucepan and fill with water to just below the bottom of the steamer. Bring water to a boil. Add green beans, cover, and steam until tender-crisp, 3 to 5 minutes. Drain.
  • Drain bacon slices on paper towels, reserving grease in the skillet. Saute onion in the bacon grease until softened, about 5 minutes. Stir in brown sugar, vinegar, salt, mustard, and pepper.
