ONION & GREEN CHILE ENCHILADAS

When we have guests, they lobby for my famous enchiladas. I usually make a meatless version, but feel free to add cooked chicken. -Anthony Bolton, Bellevue, Nebraska

2 tablespoons butter
3 large onions, sliced (about 6 cups)
2 cups shredded cheddar cheese, divided
1 cup sour cream
1/3 cup salsa
2 tablespoons reduced-sodium taco seasoning
12 flour tortillas (6 inches)
2 cans (10 ounces each) green enchilada sauce
Minced fresh cilantro, optional

Steps:

  • Preheat oven to 350°. In a large skillet, heat butter over medium heat. Add onions; cook and stir under tender and golden brown, 8-10 minutes. Cool slightly., Meanwhile, in a large bowl, combine 1 cup cheese, sour cream, salsa and taco seasoning. Stir in cooled onions., Place 2 tablespoons mixture off center on each tortilla. Roll up and place in a well-greased 13x9-in. baking dish, seam side down. Top with sauce; sprinkle with remaining cheese., Bake, uncovered, until heated through and cheese is melted, 20-25 minutes. Sprinkle with cilantro, if desired.

When I eat at a Mexican restaurant, I always like to order cheese and onion enchiladas as opposed to the ones with meat in them. I am glad I found this recipe. Whip this recipe up with ingredients you have on hand.

2 tablespoons oil
2 onions, chopped
1/2 teaspoon dried oregano
1/4 teaspoon salt
1 (15 1/2 ounce) can beans, such as kidney, rinsed and drained (optional)
2 cups shredded cheddar cheese (or monterey and colby)
1 (8 ounce) can tomato sauce
3/4 teaspoon chili powder
8 corn tortillas or 8 flour tortillas

Steps:

  • Preheat oven to 350 degrees.
  • Grease 1 1/2 quart baking dish.
  • In skillet, heat oil over medium-high heat. Add onions, oregano and salt. Cook, stirring occasionally, until softened.
  • Remove from heat, stir in beans, if using, and 1 1/2 cups cheese. Combine sauce, 2 T water and chili powder.
  • Dip each tortilla into sauce; place on plate.
  • Spoon 1/3 cup cheese-onion mixture down center of tortilla. Roll up, place seam-side down in baking dish. Repeat.
  • Top with remaining sauce and cheese.
  • Bake until hot 20-25 minutes.

1 tbs olive oil
2 tbs garlic, minced
1/2 onion, finely chopped
1 lb 92% Laura's Lean Ground Beef
1 1.4 cup enchilada sauce (Approx. 10 oz)
1 tbs taco seasoning
1 cup corn
4 oz diced green chiles
16 oz refried beans
15.5 oz black beans
2 cups shredded Mexican or cheddar cheese

Steps:

  • Preheat oven to 350 degrees.
  • In a large skillet, heat 1 tablespoon of oil.
  • Add minced garlic and diced onions to hot oil in pan and heat for a few minutes until the onions are translucent.
  • Add Laura's Lean Ground Beef and cook until browned under medium-high heat, making the beef into crumbles.
  • Drain meat.
  • Add the enchilada sauce and taco seasoning to pan with beef mixture.
  • Add corn and diced green chiles.
  • Next, add refried beans. Mix until the refried beans have been incorporated into the beef mixture.
  • Gently fold in the black beans and cook through.
  • Pour beef mixture into a casserole dish.
  • Top with shredded cheese.
  • Bake in a 350 degree oven for 20-25 minutes until cheese is melted and bubbly. After removing from oven, garnish with chopped green onion.

I found this in a Texas county cookbook years ago. It stated that it was the most popular recipe at a local pie kitchen. My family has always loved it, hope you do too!

SAUCE:
1 can(s) rotel tomatoes and green chilis
2 can(s) cream of chicken soup
1 c chicken broth
1 c velveeta cheese cubed
1 pkg green onion dip mix (dry)
FILLING:
1 1/2 lb lean ground beef
1 medium onion chopped
1 c cheddar cheese, shredded
MORE:
2 pkg corn tortillas (12 pk)

Steps:

  • 1. Combine all sauce ingredients in sauce pan over low heat until cheese melts; simmer over low heat an additional 20 mintues; set aside.
  • 2. In skillet, brown beef and onion; add cheese; stir until melted; set aside.
  • 3. Soften 2 packages of corn tortillas in hot oil; fill each tortilla with small amount of beef mixture and roll. Place in a 9x13 pyrex dish. Pour sauce over rolled enchiladas until covered. (you may have left over sauce}
  • 4. Bake at 450 degrees for 10-15 minutes until hot and bubbly.
