GOAT CHEESE AND RED ONION FRITTATA SANDWICH CRUNCHIFIED WITH PEPPER RELISH
Steps:
- Preheat the oven to 400 degrees F.
- Put the pancetta on a baking sheet, leaving a few inches of space between slices, and sprinkle with pepper. Bake until crispy, 10 to 15 minutes. Let cool.
- Preheat the broiler. Heat the oil in an 8-inch nonstick pan over medium-high heat. Add the onions and cook until soft, about 5 minutes. Add the garlic and cook 30 seconds longer. Season with salt and pepper.
- Whisk the eggs in a large bowl until light and fluffy. Whisk in the goat cheese and herbs. Add the egg mixture to the pan with the onions and garlic, and stir just until soft curds begin to form. Sprinkle with some salt. Transfer the pan to the broiler. Broil until the frittata is lightly golden brown and just set, 3 to 5 minutes. Invert onto a platter and let cool slightly or to room temperature, then cut into 4 pieces to fit the rolls.
- Spread some hot pepper relish on the bottoms of the rolls. Top with a piece of frittata, 2 slices of pancetta, some arugula, and the roll tops.

- Turn the oven to 375 degrees. Lightly oil your bell pepper on all sides. I like to cut mine in half and put them on foil lined baking sheet, cut side down. Bake until skin is blackened and loose. Allow pepper to cool and peel skin. Chop into very small pieces (like pickle relish).
- Whip the soft goat cheese, sour cream and lemon juice in a smooth consistency. Add salt to taste. Set in the refrigerator.
- Heat a nonstick griddle or pan to medium heat. Mix the Simply Potatoes mashed potatoes, flour, egg, baking powder, and sour cream to a smooth consistency. Add enough milk to make a pancake like batter. Mix in the green onions. (No need to salt the batter as Simply Potatoes is already seasoned unless you wish to.) Spoon one tablespoon of batter onto pan, as many as you can handle at one time. When bubbles form then pop, flip the pancake. Cook each side to golden brown.
- To plate your blinis, top with a dollop of goat cheese cream and a small amount of roasted red pepper relish and a sprig of dill. Enjoy!

I recently bought some Mezzetta Zesty Bell Pepper Relish and was pleasantly surprised how good it was. In my attempt to find a recipe so I could make my own, I stumbled across this tasty one. Not the same, but still so very good with a hint of heat. This won a secret food bloggers secret ingredient contest for a recipe using red bell peppers. I hope you enjoy! - Add everything to a small sauce pan and mix until well incorporated.
- Cook the relish on medium heat for 5 minutes and turn down the heat to medium-low(or low) for an additional 20 minutes, stirring occasionally until most of the liquid has reduced.
- Remove from heat and allow to cool before serving.
- Note:.
- The relish needs to be cooked on a low heat, so stir frequently and reduce time if necessary. This recipe will keep quite awhile in the fridge and you may multiply the recipe and can it if desired.

- Heat the oil in a pan over medium heat. Add the onion and saute until tender, about 5-7 minutes.
- Add the garlic and red pepper flakes and saute until fragrant, about 1 minute.
- Add the tomatoes, tomato paste, balsamic vinegar, oregano, salt and pepper and bring to a boil.
- Reduce heat and simmer until the sauce starts to thicken, about 15-20 minutes.
- Mix in the chicken and parsley and set aside.
- Start cooking the noodles as directed on the package.
- Heat the butter in a saucepan over medium heat until it is bubbling and it has turned a light golden brown.
- Mix in the flour and let simmer until it returns to a light golden brown.
- Mix in the milk, nutmeg and goat cheese and heat until it thickens.
- Lightly grease the bottom of a 9"x13" inch baking dish.
- Place a layer of noodles in the dish followed by 1/2 of the tomato sauce.
- Place another layer of noodles over the tomato sauce.
- Sprinkle 1/2 of the feta, 1/2 of the chopped basil and 1/2 of the roasted red peppers over the noodles.
- Spoon half of the ricotta in small spoonfuls over the noodles.
- Spoon 1/3 of the bechamel sauce over the layer.
- Place another layer of noodles over this.
- Repeat this sequence and top with a final layer of noodles, the remaining bechamel sauce and top with the mozzarella and parmesan.
- Bake in a preheated 350F oven until the top is golden brown and the sides are bubbling, about 35-50 minutes.

SWEET RED PEPPER RELISH/SPREAD
This is a favorite appetizer at every family function. It is especially well received with cocktails! It is similar to pepper jelly, but you do not need pectin. We usually serve it with crackers spread with a little cream cheese and a dollop of this sweet spread on top. - To roast peppers:.
- Slice peppers in half, place cut side up on pan and drizzle with 2 tbsp of olive oil, sprinkle with salt.
- Roast in oven at 375°F until skin blisters. Remove from oven, cool and peel off skin.
- To make dip:.
- Place the red peppers, garlic and cheese in a food processor.
- Pulse until smooth.
- Add olive oil, chopped basil, oregano, rosemary, salt and pepper and pulse until well blended.
- Place in a serving bowl; stir to make sure that the dip is homogenized.
- Cover and refrigerate for 2 hours.

- Heat up 1 tbsp of oil in a heavy bottom pan. Add finely diced onion and fry gently, on a low heat, until lightly coloured. Give it a stir from time to time.
- Add red wine vinegar, sugar (you may want to start off with 4 tbsp first and adjust to your own taste), a good pinch of salt and hot chilli flakes. Mix well. Let the mixture cook slowly, on a very low heat (I used setting 2 out of 6), stirring from time to time, until the red pepper becomes sticky and translucent.
- Taste and adjust the salt, sugar and spice content to your liking. After the relish cools down, transfer it to a sterilised jar and keep in the fridge - it will keep for 1-2 weeks.
