Almond-Bacon Cheese Crostini image

For a change from the usual toasted tomato appetizer, try this baked crostini recipe. If you like, slice the baguette at an angle instead of making a straight cut. -Leondre Hermann, Stuart, Florida

1 French bread baguette (1 pound), cut into 36 slices
2 cups shredded Monterey Jack cheese
2/3 cup mayonnaise
1/2 cup sliced almonds, toasted
6 bacon strips, cooked and crumbled
1 green onion, chopped
Dash salt
Additional toasted almonds, optional

Steps:

  • Place bread slices on an ungreased baking sheet. Bake at 400° until lightly browned, 8-9 minutes. , Meanwhile, in a large bowl, combine the cheese, mayonnaise, almonds, bacon, onion and salt. Spread over bread. Bake until cheese is melted, 7-8 minutes. Sprinkle with additional almonds if desired. Serve warm.

Steps:

  • Melt 4 tablespoons butter in a large skillet over medium heat. Add 3 sliced onions, 3 chopped anchovies and 2 teaspoons chopped thyme; season with salt and pepper and cook until the onions are golden brown, 20 minutes. Slice 1 baguette in half lengthwise. Butter the bread; top with the onions, pitted nicoise olives and a drizzle of olive oil. Bake in a 400 degrees F oven until the bread is crisp, 15 minutes. Cut into pieces; top with shaved parmesan.

4 cups green onions, sliced thinly
1/3 teaspoon pepper
3 ounces cream cheese (I have used fat free with great success)
1/4 cup mayonnaise (same as above with fat free)
1/4 cup sour cream (have used low fat)
1 baguette, thinly sliced and toasted
3/4 lb bacon, cooked and crumbled

Steps:

  • Combine first five ingredients mixing well. (This can be done well in advance.).
  • Spread mixture on toast and top with bacon.

  • Season ribs with 1 tsp (5 mL) salt and pepper. In large oven-safe saucepan, heat oil over medium-high heat. Brown ribs in batches, 1 to 2 min. per side, transferring to plate. Place browned ribs back into saucepan, along with juices. Pour in beef broth; bring just to a boil over high heat. Turn off heat, cover with lid and bake in oven 2 hr., or until meat is tender and falling off the bone.
  • Transfer ribs to bowl; cool slightly. Skim and discard fat from juices in saucepan; bring to a simmer over medium heat 10 to 15 min., until it is a slightly thickened sauce. Meanwhile, shred beef with two forks; discarding bones. Remove sauce from heat; mix in shredded meat. (Note: beef mixture can be made ahead, cooled and stored in a sealed container in fridge up to 2 days. Reheat on stove or in microwave to proceed with recipe.)
  • In small bowl combine yogourt, horseradish, 1/2 cup (125 mL) green onions and remaining 1/4 tsp (1 mL) salt. Top each toasted baguette slice with 1 tbsp (15 mL) warm shredded beef mixture and 1 tsp (5 mL) yogourt mixture. Sprinkle with additional green onions to serve.
