Great for leftover ham. This is easy to make with ingredients you probably already have in the kitchen. Try adding peas or other vegetables, if desired.

2 cups cooked egg noodles
1 cup cubed, cooked ham
½ cup cubed Cheddar cheese
1 (10.75 ounce) can condensed cream of mushroom soup
½ (10.75 ounce) can milk

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • Place the noodles, ham, cheese, soup and milk in a 9x9 inch casserole dish and mix well.
  • Bake at 375 degrees F (190 degrees C) for 25 to 30 minutes.

8 ounces dried spinach pasta
5 ounces lower-sodium, low-fat ham, all visible fat discarded, diced (about 1 cup)
1 cup fat-free milk
1 tablespoon all-purpose flour
2 tablespoons low-fat tub cream cheese
¾ cup frozen peas, partially thawed
¼ cup shredded or grated Parmesan cheese

Steps:

  • Prepare the pasta using the package directions, omitting the salt and oil. Drain well in a colander. Set aside.
  • Meanwhile, spray a large skillet with cooking spray. Cook the ham over medium heat for 2 minutes, or until heated through.
  • In a small bowl, whisk together the milk and flour until smooth. Pour over the ham. Heat for 2 to 3 minutes, or until thickened, stirring frequently.
  • Stir in the cream cheese. Cook for 1 to 2 minutes, or until melted, stirring constantly.
  • Stir in the peas. Cook for 2 to 3 minutes, or until heated through. Stir in the pasta and Parmesan.

6 cups water
4 cups uncooked egg noodles
1 onion, chopped
½ cup sour cream
1 (10.75 ounce) can condensed cream of chicken soup
2 cups diced cooked ham
2 cups shredded Swiss cheese
salt and pepper to taste
¼ cup dry bread crumbs

Steps:

  • Preheat an oven to 350 degrees F (175 degrees C). Grease a 2-quart casserole.
  • Bring water to a full rolling boil in a pot.. Cook the egg noodles in the boiling water, stirring occasionally, for 3 minutes; remove from heat, cover, and let stand until the noodles are tender, about 10 minutes. Drain.
  • Stir the noodles, onion, sour cream, chicken soup, ham, and Swiss cheese together in a large bowl. Season with salt and pepper. Spoon into the prepared casserole. Sprinkle the top with bread crumbs.
  • Bake in the preheated oven until the casserole is bubbling and the bread crumbs have browned, about 40 minutes.

(Talk about easy to please!) Nothing gourmet here, just yummy and great with salad and crispy garlic bread. (Recipe via my sister, who says she got it from Southern Living way back when...)

8 ounces egg noodles
1 1/2 cups chopped cooked ham
1 cup shredded cheddar cheese
1 (10 1/2 ounce) can cream of chicken soup
1/2 cup low-fat milk
1 tablespoon margarine or 1 tablespoon butter

Steps:

  • Cook noodles according to package directions. Drain.
  • Place half of noodles in buttered 2 quart casserole dish.
  • Combine ham and cheese; sprinkle half of ham mixture over noodles.
  • In small bowl, combine soup and milk.
  • Spoon half of soup mixture over ham layer.
  • Then again: noodles, ham/cheese, soup.
  • Dot with butter.
  • Cover loosely with foil.
  • Bake at 375 for 30 minutes.

1/4 cup butter, cubed
1 cup heavy whipping cream

Steps:

  • Cook noodles according to package directions. Meanwhile, in a large skillet, melt butter over medium heat. Gradually whisk in cream. Bring to a boil, stirring constantly; cook and stir until thickened, about 2 minutes longer. , Add the ham, cheese, onions, salt and pepper; cook, uncovered, until heated through. Drain noodles; add to ham mixture. Toss to coat; heat through.

4 ounce(s) swiss cheese
3 - green onions
1 cup(s) small egg noodles, uncooked
3 - eggs
1 1/2 cup(s) half and half
1 teaspoon(s) salt
1/8 teaspoon(s) ground nutmeg

Steps:

  • Heat oven to 350 degrees. Grease 36 mini (or 12 regular) muffin pan cups generously. Set aside.
  • Chop ham, cheese and green onions finely; set aside. Cook noodles following label diecions, just to the al dente state; drain.
  • Mix drained noodles into ham mixture. Divide mixture among the muffin pan cups (bake tarts in 3 batches if there is only 1 pan).
  • In a medium bowl, beat eggs slightly, stir in half and half, salt and nutmeg. Spoon liquid mixture over the ham mixture in muffin pans, dividing evenly among them.
  • Bake for 35 minutes. Ease out of pan gently using a sharp knife around the edge if necessary. Transfer to warm serving platter; serve piping hot.
  • Tarts may be refrigerated, covered, up to 3 days before serving. Reheat in a 350-degree oven until hot, about 10 minutes.

1 (10 ounce) package frozen peas, thawed and drained
1 1/2 tablespoons soft white breadcrumbs (1 slice without crust)
1 tablespoon soft-tub margarine

Steps:

  • Heat oven to 350 degrees.
  • Cook noodles according to package directions, omitting salt.
  • Meanwhile, in medium-sized bowl, combine flour, mustard, sage, nutmeg and pepper; slowly whisk in milk and set aside.
  • When noodles are done, drain and combine with ham and peas; add milk mixture and stir well.
  • Spoon into ungreased shallow 1 1/2-quart casserole; sprinkle with bread crumbs and dot with margarine.
