THE PERFECT MARGARITA
Mastering the margarita requires a certain amount of practice, but once you dial-in your perfect ratio, it's a really easy cocktail to replicate. The classic recipe is 3 parts tequila, 2 parts triple sec, and 1 part freshly squeezed lime juice, and you should probably start off pretty close to that, but my personal favorite proportions are 4-3-2.

SPICY GREEN MARGARITA
Steps:
- Puree 1 cup baby spinach, 1/2 chopped seedless cucumber, 1/2 serrano pepper (seeded for less heat) and 1/4 cup water in a blender; strain through a fine-mesh sieve. For each margarita, shake 1 1/2 ounces each green juice and silver tequila, 3/4 ounce lime juice and 1/4 ounce agave in a shaker with ice. Strain into an ice-filled glass rimmed with chili-lime seasoning. Garnish with a cucumber slice.

For this bright margarita, use your favorite tequila (we loved it with silver).

Steps:
- Fill a cocktail shaker with ice. Add tequila, lime juice, Simple Syrup and orange liqueur. Cover and shake until mixed and chilled, about 30 seconds. (In general, the drink is ready by the time the shaker mists up.) Place Lime-salt-sugar on a plate. Press the rim of a chilled rocks or wine glass into the mixture to rim the edge. Strain margarita into the glass.
- Put the sugar and water in a small saucepan. Cook over low heat, stirring, until the sugar dissolves. (Alternatively, heat in the microwave.) Store in a sealed container in the refrigerator for up to 1 month.
- Blend together lime, salt and sugar in a small blender or mini food chopper.

- Stir all ingredients together until blended. If you feel the margarita needs sweetening, add simple syrup to taste.
- *Just about any homemade green juice will work for this recipe. I made mine in a juicer with 3 oranges, 2 green apples, 2 inches fresh ginger, 2 limes, and 6 handfuls of fresh spinach. You can also puree the fruit in a blender or food processor and strain it through a cheesecloth or fine-mesh strainer if you do not have a juicer.
- **Any store-bought green juices will work for this recipe. I recommend going with a sweeter juice, but go with whatever you’d like.
