2 Tbsp red wine vinegar
2-4 cloves garlic (cut in quarters)
1 cup packed parsley leaves
3 Tbsp fresh oregano leaves
1/2 cup cilantro (optional)
1/4 tsp hot red pepper flakes (more or less)
1/2 tsp salt
1/2 cup canola oil

Steps:

  • In a food processor, mix vinegar, garlic, parsley, oregano, cilantro, hot pepper flakes and salt. Pulse until herbs are chopped but not liquefied.
  • Pour in oil and pulse briefly just until combined.
  • Scrape into small dish.
  • Cover and let rest for 30 minutes before serving over grilled steak, burgers or chicken.
  • Store extras for up to 3 days in the refrigerator.
  • Makes 3/4 cup

How to Make Green Sauce (Vegan, Gluten Free image

This clean-out-the-fridge green sauce is the perfect way to use up leftover herbs! The recipe is more of a technique than an exact formula. You can use any leafy green herbs, such as parsley, cilantro, basil and/or mint (use just one or a mix!). Feel free to also throw in a few teaspoons of stronger herbs, such as rosemary, thyme, tarragon and/or chives. Garlic first gets blitzed in the food processor, then the herbs are added along with toasted nuts or seeds for body, and acid (in the form of lemon juice, lime juice or vinegar) for brightness. Don't skimp on the nuts, as they're essential for flavor and texture. Olive oil turns the ingredients into a lovely, spoonable sauce. For a lighter version, add a tablespoon or two of water before drizzling in the oil. Be sure to season the sauce well with salt and pepper, and aim for a good balance between the acid and the oil. The sauce is delicious as-is, but definitely check out the variations in the notes below! Spoon green sauce over meats or fish, toss it with pasta, slather it on sandwiches or drizzle it over roasted veggies or grain bowls. 1-2 garlic cloves
1-3 cups lightly packed parsley, cilantro, mint and/or basil
2-4 tablespoons (or more to taste!) toasted nuts or seeds, such as pine nuts, almonds, walnuts or pumpkin seeds
Fresh lemon juice, lime juice, red wine or sherry vinegar (*see note below)
Salt and freshly ground black pepper
1-2 anchovy fillets
1/2-1 small shallot, chopped
1/2-1 seeded jalapeño pepper
1/4-1/2 teaspoon red pepper flakes or Aleppo style pepper
1/2-1 teaspoon dried oregano
1/2-1 teaspoon ground cumin
1-2 teaspoons honey
2-4 tablespoons grated parmesan or pecorino cheese
1-2 tablespoons shredded unsweetened coconut
1-2 tablespoons water (optional)
Extra virgin olive oil

Steps:

  • In a food processor with the blade running, drop the garlic through the feed tube to chop. Add the herbs (whatever you have-feel free to use a mix!) and nuts or seeds. Process until finely chopped.
  • Add a splash of lemon juice, lime juice or red wine vinegar. I usually squeeze in the juice of a 1/2 small lemon or lime, or start with about 1 teaspoon of red wine vinegar (remember, you can always add more but you can't take it out!). Season with salt and pepper. If using any add-ins, add them now and puree until finely chopped.
  • If you prefer a lighter sauce, add a tablespoon or two of water. With the motor running, drizzle in extra virgin olive oil until you get a spoonable, pesto-ish consistency.
  • This is the most important step: taste the sauce! This is your time to adjust the seasonings as desired. More nuts will thicken up the sauce, a splash more acid will give the sauce more spunk, and another drizzle of olive oil will round things out. There should be a good balance of flavors, and the final result should taste good to you. If you have the time, let the sauce sit, covered, for 15 minutes to allow the flavors to meld before serving.

2 spring onions
1 green pepperoni (bell pepper)
6 jalapenos
20g fresh parsley (6 stems)
20g fresh basil(6 stems)
10g fresh thyme(3 sprigs)
1 medium onion
1 cup vegetable or olive oil (set aside two tablespoons)
2 small seasoning cubes (4g size)
1 tsp salt

Steps:

  • Chop all fresh herbs
  • In a food processor or blender, blend until all the ingredients are broken into tiny pieces. Not necessarily a smooth puree.
  • Heat 2 tablespoons of oil. Pour the blended herbs into the oil. It should start bubbling almost immediately. Please do not stir at this point; you risk getting burnt.
  • After 3minutes stir to check if the liquid has reduced. Keep stirring till all the liquid is gone. Add the rest of the oil, seasoning cubes and salt.
  • Stir to incorporate and take off heat.
  • Use as a marinade or as a dip.

1 tablespoon oil (walnut or other neutral oil)
1 to 2 teaspoons lemon juice
2/3 cup quark
2/3 cup Greek yogurt (full cream)
2/3 cup sour cream or crème fraîche
10 to 12 ounces fresh herbs (roughly equal amounts of parsley, cress, chives, borage, salad burnet, sorrel, chervil)
Dash freshly ground pepper
Dash salt
1 teaspoon lemon juice (or to taste)
4 potatoes (boiled)
8 large eggs (hard-cooked)

Steps:

  • Gather the ingredients.
  • In a medium bowl, mash egg yolks with oil and mix to form a smooth paste. Add a teaspoon or two of lemon juice.

This is a little more work than the normal way I make salmon -- with lemon and old bay under the broiler -- but it is well worth the extra effort! I love to take the salmon cold to work for lunch with a salad! All that protein gives me the extra boost to make it through the afternoon sleepies where I CRAVE carbs like it is going out of style! From goodcooking with Chef John V. AuTHORS NOTE: The method of cooking called "poaching" can be applied to fish, shellfish, chicken, meats, vegetables and fruits. It is a shallow method of cooking where the food item is simmered in a flavored broth with the addition of very little or no fat. It is healthier than sautéing, has a delicate flavor and may be served hot or cold. It is a perfect summer method because you can cook your item without getting the kitchen all heated up. You can also cook items days in advance and then eat them chilled with various salad ingredients if you like. Additional accompaniments of mashed potatoes topped with chopped chives and crisp cooked green beans makes a nice accompaniment. Extra lemon juice isn't needed because it is already in the sauce.

  • Salmon.
  • In a large stainless steel or non-stick skillet add the vegetables, water, wine and seasonings and simmer 10 minutes.
  • Butter the bottom of a casserole dish in which you will poach the salmon.
  • Place the salmon filets on the buttered area, pour the simmering liquid through a strainer onto the salmon.
  • Place the casserole on low heat, return to a simmer and cover. Simmer gently about six minutes.
  • Remove the salmon carefully and drain well, dabbing dry with a paper towel and serve with the following recipe for green herb sauce.
  • Two tablespoons of sauce per portion of salmon is a good amount.
  • SAUCE.
  • Combine all ingredients in a blender and puree until totally smooth. Scrape out of the bowl and refrigerate until needed. You may make this sauce up to 3 days in advance and it will still keep its fresh herb taste.
